British Roast Potatoes

If you don't get your roast potatoes right it can bring down an otherwise excellent meal. They are simple to make and require very little hands on while they are cooking. I highly recommend a baking tin with sloping sides as you can turn the potatoes over by shaking the tray rather than individually. Beware though as it will contain hot fat. I used Maris Piper potatoes which are floury when coo...

Dartmouth Medieval Pie - British pie recipe from the middle ages

This British pie from Devon is one of the few remaining medieval recipes that is still in use today. Mentioned in the cookery book by Hannah Glasse in 1727 it is a wonderful tasty pie evocative of Christmas with its spices. 500g lean mutton or lamb (Minced) 1 tbsp lard 1 large onion, thinly sliced 1-2 tbsp all-purpose flour 1/2 cup beef stock 100g dried currants 100g dried apricots, roughly cho...
Traditional Cornish Pasty - A little taste of Cornwall

Make Cumberland sausage from scratch

Cumberland sausage is a probably one of the most famous of the British regional sausages. It is a spicy peppery sausage with herbs and pepper. The sausage hails from a county named Cumberland at the top of the English lake district. Cottage pie (Shepherds pie) - Traditional British Comfort food
Просмотров 2855 месяцев назад
Cottage pie, or Shepherds pie is a British dish made from chopped, sliced or minced meat covered with a mashed potato topping. It is very popular in the UK and even abroad. Cottage pie is now normally made with beef, but traditionally it could contain any type of meat, usually left overs from roasts. Shepherds pie came later, but is exactly the same, just usually using lamb or mutton. You will ...
Spaghetti Carbonara - Italian classic

Spaghetti carbonara is one of those recipes that everyone should learn to cook. It's quick, simple and only uses 5 ingredients. Spaghetti Eggs Guanciale (or pancetta) Pecorino cheese and black pepper If, like me, you struggle to get hold of guanciale, then pancetta is an acceptable substitute and you can use parmigiana Reggiano instead of Pecorino, but try and get Pecorino, its really nice. 1894 recipe for tomato and eggs

Egg and tomato, is possibly one of the simplest meals from the English buffet breakfasts, but one of the most important. It has survived the evolvement into the full English breakfast, even if made in a slightly different way. The recipe is from a cookery book from 1894, so I decided to just follow it exactly.
Full English breakfast. Simply the finest way to start the day!
Просмотров 6107 месяцев назад
A full English breakfast is, in my opinion, the finest way to start a day. Its not an everyday breakfast in England as a rule, but is certainly the most popular breakfast you can get. What started as a full hot buffet served to rich landowners it became the working mans staple in the 50's. A large cooked breakfast gives you enough energy for the day, especially if you labour. There is no set li...

"Laws, like sausages, cease to inspire respect in proportion, as we know how they are made." as Otto von Bismarck once said. So saying I enjoy it, as a good British banger or German wurst is a thing of beauty. I've used various things in place of rusk, pinhead oatmeal, porridge oats, cous cous, bulgar wheat or rice. You may have been a bit worried about how they looked, but boy they looked good when cooked. Would be great on a homemade Morton's roll with a tattie scone in there to keep it company. Top marks.

Lovely, my mouth was watering watching that. Properly fried eggs too, most people fry them till crispy which I dislike as the brown bits get stuck in my teeth, soft fried everytime for me. Have you tried substituting a goose or duck egg over the hens egg? The flavour goes with the fish really nicely. Must admit being Scottish, I prefer an Arbroath smokie over a kipper. (Smokies are haddock & kippers are herring). More succulent flesh & less bones.🐟😋

This is my ultimate cooked breakfast. When I still had the big farmhouse, friends would come & stay for the weekend. One of my favourite things was to load up the sideboard in the dining room with as many things as possible. Kedgeree was my favourite - though I make mine with Scottish smokies. My girlfriend at the time was known for her Bombay potatoes; any left from the previous meal would be turned into sautéed Bombay potatoes to go with the kedgeree, a truly magical meal.

Heaven, what a tasty breakfast or supper. Instead of onions I like to add leeks for a whack of fresh sweetness - also some liver in there too. When it comes to a cooked breakfast I have a top three: - Kedgeree made with Arbroath smokies, kidney, liver & leeks (with some tattie scones) & a full Scottish cooked breakfast. 😋
