Can an old dog learn new tricks? My journey into cooking and making videos. I have to be honest, that although I have been cooking for years and taking photos for just as long, video is a new form for me. Taking video and cooking at the same time is definitely a challenge. I appreciate any comments and thought's on my journey. Obviously subscribing to my channel and watching the videos is a fantastic help as well. ;)

Tomato Soup - A classic traditional soup
Just a straight forward classic tomato soup. Its one of the most simple soups to make, but tastes delicious. Its even better tasting if you leave it overnight once its finished.
1 large Onion
1 medium carrot
1 stick of celery
1 bouquet garni (Thyme, bay leaf, parsley)
2 oz bacon (streaky or polish)
2 lbs fresh tomatoes
2 oz flour
1 oz sugar
2 oz butter
2 1/2 pints of good chicken stock

What's not to like about a cheese fondue? A glorious combination of wine and melted cheese soaked up with crusty bread. Glorious. "Laws, like sausages, cease to inspire respect in proportion, as we know how they are made." as Otto von Bismarck once said. So saying I enjoy it, as a good British banger or German wurst is a thing of beauty. I've used various things in place of rusk, pinhead oatmeal, porridge oats, cous cous, bulgar wheat or rice. You may have been a bit worried about how they looked, but boy they looked good when cooked. Would be great on a homemade Morton's roll with a tattie scone in there to keep it company. Top marks.
Lovely, my mouth was watering watching that. Properly fried eggs too, most people fry them till crispy which I dislike as the brown bits get stuck in my teeth, soft fried everytime for me. Have you tried substituting a goose or duck egg over the hens egg? The flavour goes with the fish really nicely. Must admit being Scottish, I prefer an Arbroath smokie over a kipper. (Smokies are haddock & kippers are herring). More succulent flesh & less bones.🐟😋

Thanks for posting this. My great grandfather reportedly used to eat kippers and eggs all the time but there’s no one left in the family who remembers how they were prepared. I’ve been doing it completely wrong!
Thumbs up. One of the only other times apart from myself I've seen Dartmouth Pie being made. Truly magical to eat.
This is my ultimate cooked breakfast. When I still had the big farmhouse, friends would come & stay for the weekend. One of my favourite things was to load up the sideboard in the dining room with as many things as possible. Kedgeree was my favourite - though I make mine with Scottish smokies. My girlfriend at the time was known for her Bombay potatoes; any left from the previous meal would be turned into sautéed Bombay potatoes to go with the kedgeree, a truly magical meal.
Heaven, what a tasty breakfast or supper. Instead of onions I like to add leeks for a whack of fresh sweetness - also some liver in there too. When it comes to a cooked breakfast I have a top three: - Kedgeree made with Arbroath smokies, kidney, liver & leeks (with some tattie scones) & a full Scottish cooked breakfast. 😋

Try blending the veg together with the liquid then push it through a sieve, makes for a much thicker soup. Apart from that it looks good.

I would definitely recommend leaving it overnight and then heating up the next day. Tastes really nice. Serve with plenty crusty bread. :)

Fantastic no nonsense carbonara! I used to just use Pecorino but now do about half and half with Parmigiano. Also it's amazing how different a dish it is with Pancetta instead of guanciale but both are great!

Actually, after I finished this, I put it in the oven to keep warm and then flashed it under the grill just before serving. I didn't put that in the video, apologies for that :)
I see you like spud with your butter. The meat is far to dry.
They look very good! I like to bash up some dried rosemary and thyme and mix that in with a little bit of flour that I'll toss the spuds in after the parboil before roasting, results in extra crispy roasties!

Not sweating the mushrooms is cringe
Stick a cheese slice in and the sodium citrate in it will emulsify everything and you'll have a more uniform saucy cheese. Great idea using a slow cooker to keep it warm though!
That's a great idea tbh. Ive actually got a tub of sodium citrate that I sometimes use for cheese sauces, so good shout! :)

Never heard of an egg on kippers and definately no butter anywhere near. I do mine 2 minutes in hot water and 1 minute under the grill.
Poached kippers are traditional, but buttered kippers are too. The method shown here is a lot richer flavour but do make the house smell of kippers more.
Pity about the garlic.
Yeah, I know. I forgot to check on them while I was in the other room. Still was ok as couldn't taste the burnt garlic though :)
