British Roast Potatoes

  • If you don't get your roast potatoes right it can bring down an otherwise excellent meal. They are simple to make and require very little hands on while they are cooking.
    I highly recommend a baking tin with sloping sides as you can turn the potatoes over by shaking the tray rather than individually. Beware though as it will contain hot fat.
    I used Maris Piper potatoes which are floury when cooked. Don't use waxy potatoes as they wont crisp up enough. Get your fat smoking hot before you put the potatoes in and make sure they are all covered in fat before putting them in the oven. Shake every ten minutes and they should be done in around 40 minutes, although it depends on the size of the potatoes.

    They look very good! I like to bash up some dried rosemary and thyme and mix that in with a little bit of flour that I'll toss the spuds in after the parboil before roasting, results in extra crispy roasties!

      Yeah, I know. I forgot to check on them while I was in the other room. Still was ok as couldn't taste the burnt garlic though :)

      I'm not particularly aware that Welsh, Northern Irish or Scottish roast potatoes are cooked any differently? But I'll have a look into it :)
