Devilled Kidneys a British breakfast classic

  • Devilled kidneys on toast was very popular in the past although you don't see it as often now. Its a pity as the taste is excellent and a wonderful breakfast.
    If you are squeamish about offal, it may help if you chop up the livers very small.
    You will need:
    Lambs kidneys (Use veal kidneys for a richer taste)
    a white onion
    garlic cloves
    fresh parsley
    English mustard (dry or pre mixed)
    Worcestershire sauce
    Chilli powder or cayenne pepper
    Double or heavy cream
    oil or dripping
    salt and pepper

    I know its not for everyone, but I urge you to try it. You may be surprised! If you are wondering about the black glove, its not me doing an impression of Michael Jackson, its because I cut the tip of my finger and would really hate it to come off again while its healing :)

      I don't know if I can get lamb kidneys here where I live, will beef or pork kidneys work?

      @@crissy4346 Hi. Yes, definitely. Just be aware that they have a stronger taste and I would soak them in milk for an hour before using. If you can get them at all, I would highly recommend Calves kidneys. They are the best, but quite expensive. :)

      ​@@Recipeenginethank you so much! I wish offal was more popular in the US. That's why it's so difficult to get offal besides chicken liver(which I love)and tripe, and occasionally beef heart

    Further to my earlier comment,i just had to thank you for this scrumptious dish.We had it for dinner as i said with rice and green beans,as you say what,s not to like brandy and cream sauce,heavenly! Sorry i thought you were a Yorkshireman!😀👍

    Wow! I love your no nonsense straight forward Yorkshire? presentation.Unlike so called celebrity chefs this is all about the recipe not the chefs ego! I will definitely try this dish tonight and serve on a bed of rice and green beans,washed down with a nice Chianti!😀👍

    Heaven, what a tasty breakfast or supper. Instead of onions I like to add leeks for a whack of fresh sweetness - also some liver in there too. When it comes to a cooked breakfast I have a top three: - Kedgeree made with Arbroath smokies, kidney, liver & leeks (with some tattie scones) & a full Scottish cooked breakfast. 😋

    Replace cream with crème freche as a lighter option. Can also skip brandy whisky if for breakfast

    Such an underrated delicacy, but that means more for us connoisseurs. Also great in Moroccan dishes like couscous and lamb tagine. I prefer them halved as they keep their kidney shape!
    Go easy on them if you are prone to gout.

    Great sauce! Loved the flambe! I find kitchen scissors get the white centres out of the kidneys. Small sharp nail scissors are great. Thanks for the recipe.

    I’ve never had kidneys . I don’t think they sell them in the US . But I’d be willing to try as I’ve eaten tongue, liver , heart , gizzards so I’d try kidney . That looks tasty ! Thanks for sharing

    If you swapped the kidneys for mushrooms, it would make a great steak sauce!

      Yes, you definitely can. Soak them in milk first to lessen the smell though. :)

    It actually looks very nice and I am sure that people should eat more organs. They are pretty healthy

    Not exactly a simple breakfast by any means. A tasty breakfast, maybe. But definitely not a quick, simple breakfast for when you've slept in , you're in a hurry and have limited time..

      Ha ha. No agreed. Might have been a touch optimistic with that. I was also making kedgeree and a full English on that day, so out of the three it seemed it at the time! :)
