  • Fricassee is a classic French dish that is simple and quick to make.
    Chicken legs or thighs. (Skin on or off)
    1 celery stick, cut into small chunks
    1 onion, cut into pieces
    1 garlic clove crushed
    1 tsp white pepper
    1 tbsp salt
    For the sauce
    40g unsalted butter
    30g plain flour
    100ml white wine
    100ml double cream
    small amount of chopped thyme and tarragon
