Tomato Soup - A classic traditional soup

  • Just a straight forward classic tomato soup. Its one of the most simple soups to make, but tastes delicious. Its even better tasting if you leave it overnight once its finished.
    1 large Onion
    1 medium carrot
    1 stick of celery
    1 bouquet garni (Thyme, bay leaf, parsley)
    2 oz bacon (streaky or polish)
    2 lbs fresh tomatoes
    2 oz flour
    1 oz sugar
    2 oz butter
    2 1/2 pints of good chicken stock

    I would definitely recommend leaving it overnight and then heating up the next day. Tastes really nice. Serve with plenty crusty bread. :)

    I always look for the cheaper veg, into the freezer it goes, after chopping and sealing in a food sealer bag, or any foraged fruits etc. Lovely

    Try blending the veg together with the liquid then push it through a sieve, makes for a much thicker soup. Apart from that it looks good.
