How I Lost 23 Pounds in 2 Months with a Whole Food Plant Based Diet: Hooray for Carbs!

  • How I lost weight quickly with a Whole Food Plant-based diet, and am using Dr. McDougall's Starch Solution to keep the weight off FOREVER! I also eliminated my high blood pressure and have more energy, while enjoying delicious homemade oil-free Vegan meals.
As a Type 1 diabetic (originally misdiagnosed with Type 2 diabetes), my doctors recommended a low-carb diet, but I discovered that carbs only continually raise blood sugar when consumed with fat. Instead, I reduced my total insulin needs by 50% by following a high carbohydrate, low fat diet and by leveraging tips from Mastering Diabetes, like Intermittent Fasting (IF) and regular activity.
I love sharing my favorite WFPB meals and recipes. I'm just getting started with my weight loss journey, so please subscribe!

In February I was diagnosed with stage 3 prostate cancer. My PSA score was relatively high at 304. In June my PSA score shot up to 424.
My doctor called me this morning with Amazing news.
So...Along with medication and no chemotherapy, I then started the plant based diet in June. Over the last 4 months my PSA score has dropped to an amazingly low score of 0.13. Faith from the nature is what will heal all. I am cancer free.

I lost 33 pounds 94 kg -79 kg. Starting June 20th to Sept 1st. That is a total of 33 pounds. I just did OMAD and threw in a few 40 hour fasts and one 78 hour fast. Once you overcome the psychological battle of not eating. It is real easy.

Wow, you are so organized and a great planner! I think one reason I haven’t been successful (yet) is I never actually create any recipes, I just eat full beans and rice and bc its bland I usually don’t eat enough, then I get really hungry and just go buy fast food. :/ I haven’t been a good planner either. Can you do a video on how you plan and prepare meals. For me, it’s just so hard, I get overwhelmed snd give up.

New to your channel 👊. Congrats on your success. You look healthy and happy :). I’m new to WFPB and transitioning slowly but surely. Whole foods I’ve been aware of for some time now. I’m working on making it more plant based now. I have one question. I noticed in your video you use uncle ben’s rice. I thought that it might be considered too processed. I try my best to stick to unrefined rice. More often than not using brown rice. I’d love to hear your perspective. Maybe I’m going too extreme. Thank you.

    • @LibbyRome
      @LibbyRome  3 года назад

I often cook a bag of long-grain brown rice in my Instant Pot to use in recipes each week. I use the boil-in-bag rice for convenience sometimes - the only ingredient is rice. I stick to brown rice since it’s less refined (and therefore has more fiber and nutrients) than white rice.
Rice is more processed than potatoes, but it’s still a healthy food that fits nicely into a healthy maximum weight loss program. Chef AJ recommends black rice as the least processed kind, but I haven’t tried that yet.

Hey there, thanks for sharing your journey, and congratulations. Got a question for you. I like to do “fried rice” type things and put them in some kind of healthy wrap. I have a nonstick frying pan but it seems like the corn/rice/beans/ peas combo I so like tends to stick/ dry out or get a bit crispy on the bottom unless I use a bit of coconut oil. Trying to drop the oil gives me a worse outcome. Any tips?

I am completely confused... I am so very glad that this worked for you, but I have always read and heard that potatoes, rice, pasta (my FAVORITE foods btw) and other carbs turn into glucose (sugar). I ALWAYS gain weight after a meal that has any of those. I am missing something in the equation... could a few tablespoons of half and half in my duly morning coffee be the culprit? What part of the chemistry am I missing?

I am so happy I found your channel! Congrats for finding your solution!I want to try the Starch Solution. I wonder if you could help me with the fact I cannot have nightshades, so no tomato-(or only maybe once a week). I also react to latex foods: banana and anything with a pit, including tragically, avocado. I cannot have a lot of nuts and am absolutely allergic full on to coconut. Spelt and Wheat are also no-no’s. So how do I design a WFPBD without tomatoes, peppers, bananas, avocado, and wheat? Really would appreciate your help!!!! I have researched but do not find an answer, everyone is eating avocado DAILY. While I could tolerate it once a week. I have autoimmune problems and lost my thyroid to Graves disease. My body is high maintenance! I am well educated on nutrition and have made great strides but I have now 30 pounds to lose! Any help much appreciated.

you did not mention being allergic to rice, millet, quinoa, wild rice from grain/seed options; potatoes, sweet potatoes, winter squashes, corn from starchy vegetables, all green and non-starchy - spinach, kale, chard, mustard, collard, broccoli, Brussels sprouts, cabbage, asparagus, carrots, beets, and fruits - berries, lemon, lime, melons, peaches, pears, apples, plums, cherries, citrus - I have not listed the half of what you CAN probably eat. Are you allergic to beans and lentils as well? If not then you have those at your disposal as well, You know, your gut is probably so compromised that you are experiencing all the allergies and intolerances. Perhaps you should also look into options like True North, where doctors and clinicians have other techniques to resolve gut and digestive problems.

Welcome! I understand the struggles of wanting evening sweets. I have 2 suggestions that worked for me:
      1. The next time you want an evening snack ask yourself “Am I actually hungry?”. If yes, eat more starches. If no, replace your evening snacking with a just-as-enjoyable healthier habit. I like to take a walk, play a computer game, or read a book.
      2. Replace your sweets with healthy versions. Make a tiny batch of banana-oat cookies, or chop up some apples and sweet potatoes with cinnamon.

My father in law reversed his type 1 diabetes. He had sudden onset type 1 at 50 years of age. They even wanted to remove his pancreas at one point. After nearly 10 years of managing his diabetes he reversed it. He has been totally off insulin for over 5 years and is doing great. It is possible 🙌🙌🙌 though his mainstream doctors were convinced it wasn’t. So don’t give up on this possibility!

Hi! I am also a type one diabetic and I have been having a really hard time managing my blood sugar. Do you have meal plans available that you can share?

Sorry for the late response, and thank you for your comment. Hello t1D friend! That’s a great idea to share my meal plans. I will share soon.
The book Mastering Diabetes shares the science that explains why the key is to eliminate excess fat. After a few days of keeping your fat intake under 15% of your calories, blood sugar is significantly easier to control, and you’ll likely start using a lot less insulin.

Great results. I just started eating Whole plant base and I want to stick to it. However, I am always hungry even after a meal. Can you guide me. I feel that I eat enough, but maybe I'm not?
I'm 5'2 and weight 150. I want to lose 25 pounds. Any insight will be greatly appreciated.

If you’re hungry after your meals, you probably need to add more starches.
