I made the Veg spaghetti yesterday and it was fantastic! Tasty, fresh. I was going to cheat with tomato sauce, but I'm so glad I didn't. Added a nice heaping tsp of onion powder, garlic powder, a tbsp of Oregano. Delish. I had some of the leftovers for lunch today. yummy.

Drunken Noodles/Pad Kee Mao is my favorite! I can get it vegan at my local Thai restaurant, but this sounds like a fun and easy way to make it at home! Thanks, Rachel!
Thanks for the recipes! I like using dried rice noodles because it's easier for me to find them, but I just soak them for an hour in cold water, and then they're good to go straight to the pan as well.

Making this today and put in some acorn squash that I roasted with roasted tomatoes... I'm not even vegan or vegetarian but I love the food. And your recipes even have my heavy meat eating husband on board for more so thank you
Hi Rachel! I'm curious, have you tried hummus wraps? It has grilled onion, sundried tomatoes, roasted kale, roasted red Bell peppers, and of course beans and hummus.. you can add whichever spices you want but the wrap is best with either the tomato wrap or the spinach one.
