For the people that don’t have access to vegan cream like myself: i was making one of your old creamy pasta dishes the other day and what i used instead of store bought vegan cream was an alteration of vegan mayo. For vegan mayo i would usually use 1 cup of olive oil and 1/2 cup of soy milk and then blend them together (with mustard and seasoning). For the vegan cream i used equal parts olive oil and soy milk and skipped the seasoning. Honestly worked just as well as store bought cream so i would highly recommend if you can’t find any in your area!
White almond nut butter diluted with water also works well. Or you could mix peeled almonds with water until smooth. Cashews work too but I prefer almonds for creamy pasta sauces. Btw try some almond cream mixed into a tomato sauce, it makes a delicious pink sauce. Using nuts instead of store-bought creams is also the healthier option.

I like to use my small personal blender for this and I start with a handful of nuts and blend them first, then I add a little bit of water at a time to the almond flower and blend again, I add just enough water so it blends well together. If you use too much water you get almond milk but it's going to thicken a bit in the sauce anyway (nuts expand when soaked), so it's not a problem if it looks more like a milk than a cream after you blended it. I got the inspiration from Attila Hildmann (he's a vegan from Germany) and this is another quick pasta recipe: ruclips.net/video/V89j_8_Y7Y4/видео.html but it's in german, at 3:05 he uses only 2-3 tbsp white almond butter, water, lemon zest and juice and salt and pepper to make a creamy pasta sauce.

I've been a Strict Vegan for 7 years now and I absolutely have no problem with vegan meat!! In fact, I LOVE vegan meat. I also love things like chickpeas or other vegetable meat replacements, but I'd rather have vegan meat over that any day. I'll just add the vegetables anyways haha. Give me some vegan nachos with vegan meat on it and I'll be the happiest camper. P.S, that mushroom pasta looks sooooo good, thank you once again!

That second one especially. No way that takes less than 20 minutes. Even with editing magic, prep took 3.5 minutes and that didn't show even half the dicing or half the cooking OR half the "reduction" time.

Over the weekend I decided it was about time I made something from him so I made the Korean style burger and the meaty burger from a video he uploaded recently. I had always built it up to be so time consuming with fancy ingredients like his other recipes, but they took no time at all for me! And OMG they were ABSOLUTELY AMAZING!! They are now my standard meals of the week. So beyond delicious! My dad isn’t even vegan and he loved them!
They are easy to make if you can get the ingredients. I've been cooking for a long ass time, but the problem is I cannot get a lot of the ingredients for nearly all of his recipes. It's just not found here in the supermarkets.
Yeah, it reminded me of a vegan pasta puttanesca (which usually has anchovies in it). It's basically like "throw whatever you have on hand into a pan and cook it--but make it delicious!" My bf and I love to cook together and we've been slowly building up our spice collection. They're so expensive, but if you just buy one new spice during every or every other grocery trip, you'd be surprised how quickly it adds up. And it's so worth it. I love beans and potatoes and other simple "plain" stuff like that, but he hates them. But we're trying to save a little more and the things that spices can do to such humble ingredients is mind-blowing. The best cooking is using what you have and what you can afford in a creative way with some love sprinkled in

I'm a little late to the game, here, just seeing this now. But I made the Creamy Pasta Sauce with just a few minor adaptations... I added a small amount of sundried tomatoes to cashews and almond milk to make cream. I skipped the processed vegan chicken and added soaked, chopped soy curls since I had them around. I also added some carrots during the cook time with aromatics, and then finished it off with a handful of spinach at the end - along with the tarragon, it's one of my favorite herbs. This was wonderful and my omnivore husband and Dad loved it. Thanks for all of your ideas and videos. I enjoy them immensely!
Beautiful dishes! Last week I’ve made a Bolognese sauce with (carrots, onions, garlic and celery as “soffritto” of course) hazelnut grains, chopped shiitake mushrooms and tomato sauce. I had a really tasty pasta the first day and with the leftover sauce I’ve made a lasagna. It was awesome.
I did the creamy pasta but used Oatly for the cream and added a tablespoon of nutr. yeast and some northern white beans. The sauce turned out fantastic. Thank you.

I always liked cooking but I come from a country where many great traditional dishes are meat based and I didn't even try some more elaborate stuff anymore after a few failed tries. Ok i’ve been cooking for 50 years and I absolutely love your cookbook and your recipes! I just made the five minute mushroom gravy, I didn’t have an onion so I substituted a leak. I didn’t have one so I put a little a little cider vinegar. I didn’t even have mushrooms so I put in broccoli actually broccolini. It is absolutely divine ! I made the Creamy Mushroom Vegan Chicken sauce this evening. It was fabulous! Even my non-vegan family members loved it. I've made all three and they all were delicious but this one is my favorite. I didn't have white wine so I substituted veggie broth. It was still delicious. Thank you. Can't wait to get your cookbook.

We will probably try the creamy chicken mushroom, but with chopped sauteed soy curls. And the pesto, of course. Not really keen on tomato sauces, to be honest. Might try the butter beans, capers and artichokes in a creamy cashew sauce, though!! Thanks, Gaz.
Thanks Gaz! :) Another good alternative for cream is white almond nut butter, just dilute some nut butter with water and then add it to the sauce. Or instead of nut butter you could mix peeled almonds with water until smooth. Cashews work too but I prefer almonds for creamy pasta sauces. I also recommend mixing almonds into a tomato sauce, it makes a delicious pink sauce! Using nuts instead of store-bought creams is also the healthier option.
Can’t wait to try these! Always on the lookout for a simple new pasta sauce. I’m not too familiar with western spices and vegetables, so these combinations are super helpful!
All jarred and pre-prepared tomato sauces have some form of Citric acid to balance the acidity of the tomatoes. Check the ingredients. If making pasta sauce from scratch, it is vital to add this to balance the flavor of the sauce. You could use a squeeze of lemon or lime. Happy cooking.
My mouth is full of water right now. Everyone thinks is a good book just because they know a few ways to cook meat, but a true master chef is the one who can cook many many dishes without main ingredients like eggs, dairy and meat and still create an amazingly delicious meal. Soooo so many cooks fail this test, although "vegan" basically means "fasting", the old damn fasting. The fasting that was a "must" back in time for at least 6 months per year for autophagy benefits, but nowadays is just "those fussy vegans". This channel looks promising and so professional and I personally love it already.

Awesome dishes. Made the Butterbean artichoke and caper pasta first, reminded me a little of Pasta Puttanesca. Next day made the creamy mushroom dish with butter beans in place of vegan chicken. Really enjoyed rich mushroom flavour in the sauce.

I have to say ever since I started watching this channel my interest in cooking and the amount of effort I've put into it has really gone up! I always liked cooking but I come from a country where many great traditional dishes are meat based and I didn't even try some more elaborate stuff anymore after a few failed tries. These videos have affected my cooking skills so much it's crazy! Thanks once again for a fun video! I bet any of these sauces will be great for tomorrow's lunch..

Ok i’ve been cooking for 50 years and I absolutely love your cookbook and your recipes! I just made the five minute mushroom gravy, I didn’t have an onion so I substituted a leak. I didn’t have one so I put a little a little cider vinegar. I didn’t even have mushrooms so I put in broccoli actually broccolini. It is absolutely divine ! I don’t love the new flavors are introducing me to you know how you get in a rut with your spices? Thank you for your positive vibration and excellent creativity in cooking!

Damn, that creamy mushroom sauce looks incredible, and I just happened to make a double-batch of seitan chicken last night. AND I've got a half pound of mushrooms in the fridge. Couldn't be more perfect timing!
Jackfruit (dried) is an amazing substitute for chicken. And grind cashew for cream.
I made the mushroom creamy sauce, it was amazing ! I used unsweetened coconut yogurt, and it worked very well. I also added a handfull of spinach. Thank you for this great recipe !

I made the Creamy Mushroom Vegan Chicken sauce this evening. It was fabulous! Even my non-vegan family members loved it. I've made all three and they all were delicious but this one is my favorite. I didn't have white wine so I substituted veggie broth. It was still delicious. Thank you. Can't wait to get your cookbook.

We will probably try the creamy chicken mushroom, but with chopped sauteed soy curls. And the pesto, of course. Not really keen on tomato sauces, to be honest. Might try the butter beans, capers and artichokes in a creamy cashew sauce, though!! Thanks, Gaz.

The mushrooms pasta dish looks so delicious. Also, great alternative to regular italian pesto, french pistou: olive oil, garlic and Basil. Amazing.
Thanks Gaz! :) Another good alternative for cream is white almond nut butter, just dilute some nut butter with water and then add it to the sauce. Or instead of nut butter you could mix peeled almonds with water until smooth. Cashews work too but I prefer almonds for creamy pasta sauces. I also recommend mixing almonds into a tomato sauce, it makes a delicious pink sauce! Using nuts instead of store-bought creams is also the healthier option.

All jarred and pre-prepared tomato sauces have some form of Citric acid to balance the acidity of the tomatoes. Check the ingredients. If making pasta sauce from scratch, it is vital to add this to balance the flavor of the sauce. You could use a squeeze of lemon or lime. Happy cooking.
Best vegan meat replacer imo is soy curls because it's just dried soy rolled into sheets and cut into short curls.

Everyone thinks is a good book just because they know a few ways to cook meat, but a true master chef is the one who can cook many many dishes without main ingredients like eggs, dairy and meat and still create an amazingly delicious meal.
Soooo so many cooks fail this test, although "vegan" basically means "fasting", the old damn fasting. The fasting that was a "must" back in time for at least 6 months per year for autophagy benefits, but nowadays is just "those fussy vegans".
This channel looks promising and so professional and I personally love it already.

Awesome dishes. Made the Butterbean artichoke and caper pasta first, reminded me a little of Pasta Puttanesca. Next day made the creamy mushroom dish with butter beans in place of vegan chicken. Really enjoyed rich mushroom flavour in the sauce.
