LEARN HOW TO MAKE THE BEST LENTIL PATTIES THAT ARE AMAZING FOR BURGER RECIPES!
LAY HO MA (how's it going in Cantonese)! Brace yourself for an epic burger just in time for the nice weather! Join me in this episode and learn how to make an extraordinary lentil patty recipe that won't fall apart!
    Ingredients:
    1 1/2 cups red lentils
    2 pieces garlic
    1 red onion
    2 carrots
    20g cilantro
    1 tsp + pinch salt
    1 tsp sweet paprika
    1 tsp smoked paprika
    1/2 tsp cayenne pepper
    1 1/2 cups avocado oil
    1/3 cup tahini
    3 tbsp lemon juice
    2 tbsp za'atar
    burger buns to serve
    micro greens to serve
    sliced pickles to serve
    Directions:
    1. Pre-soak the red lentils in water for 2-3 hours or bottle about 3 cups of water in a kettle and soak the red lentils in the hot water for about 30mins
    2. Peel 2 pieces of garlic. Roughly chop half of the red onion, carrots, and cilantro. Rinse and drain the red lentils, then add to a food processor. Add the red onions, carrots, garlic, cilantro, 1 tsp salt, sweet paprika, smoked paprika, and cayenne pepper. Blend for about 30 seconds, scrape down the sides, and blend for another 30 seconds
    3. Scoop about a 1/3 cup of mixture at a time and shape them into patties. Once you're done shaping the patties, refrigerate them for a few minutes. Add the avocado oil to a frying pan and heat on a little under medium heat for a few minutes. If you stick a bamboo chopstick into the oil and there are fast moving bubbles, it's ready!
    4. Very carefully place in the first batch of lentil patties. Fry them for 3-4mins, then very carefully turn them over. Let them cook for another couple of minutes, then very carefully transfer them onto a cooling rack. Repeat with the second batch
    5. Make the sauce by combining the tahini, lemon juice, a pinch of salt, and za'atar. If the sauce is too thick, add a little bit of water. If the sauce is too thin, add a little bit of tahini
    6. Toast the burger buns and thinly slice the other half of the red onion. Assemble the burgers with the micro greens, lentil patties, red onions, the delicious sauce, and some pickles

I cook up the veggies with seasoning and blend them up with the lentils. I pretty much use any veggies I have on hand that need to be used up. Broccoli, peppers, kale, carrots etc.
I add some baked potato, flax "egg" and oat flour to help bind the lentils together. Sometimes I make them more Italian flavors, others a classic American breakfast sausage flavor (which is brown sugar and sage + any other spices you prefer).
Also, it helps to drain the lentils really well after cooking, makes it easier to form into patties.

I am smitten with this recipe, which I tweaked by adding in golden raisins and fresh ginger. I also made the patties, then steamed them 20 minutes, cooled and fried. I felt that helped with a flavor that struck me as 'raw'. I've eaten the patties topped with fresh avocado but also look forward to other creamy toppings. Delicious, easy and protein packed! These lentil burgers are FANTASTIC, Wil!
There are a few things that I can't stand mushy: Pasta, asparagus and veg burgers!
I've been searching for a vegan burger that isn't mushy for a very long time! Many promise that they're not mushy, but when you make them, you find that they are! So I'm grateful to have found a recipe that truly does a grand job of mimicking the texture of ground meat.
I did add a handful of walnuts and a 1/2 Tbsp of ground flax to the food processor. And a bit of your lovely and fragrant homemade chili oil to the avocado oil I put in the pan! That stuff is great on everything/anything!
Thanks for all of your well thought out and easy to follow recipes! I'm really enjoying making and eating them!!😉

    Okay, I tried it.
Came out pretty good. My burgers fell apart a bit. I had a second go at it and I put them in the freezer before frying. That came out much better. I saw in some other videos the removal of excess water from ingredients, I may have had a bit much water. Anyway once I froze them, then they stayed together. They stuck to the plate in the freezer but I released them by heating the plate a bit with a bit of stray heat from a burner...
I'll be dling this often, I think...

Great Recipe!! I was just telling a friend that your recipes have been tried and true thus far. I was wondering if you can do a mung bean recipe. I've tried and failed, but I'd really like to try it again with a recipe that I trust. Thanks for your videos!

If you know Lebanese people, ask them about zaatar. Very delicious herb. You can eat it green, or you dry it and add other ingredients to it like toasted sesame seeds, dried sumac and salt. You'll have the most delicious mixture ever. Try using it on a dough mixed with olive oil, then put it in the oven until the dough becomes golden crunchy. We call it "mankosha". Sooo delicious 😋 Look it up in the internet.

I’ve made Mollie Katzen’s lentil-walnut burgers for 25+ years, but your recipe is very different from hers and looks like something I’d also find tasty, just minus the cilantro. There’s plenty of room for more than one kind of lentil burger in my house. Thanks for the recipe, I’ll give it a try.
