    My mom is a notorious lentil hater but I've cooked several of the meal plan lentil recipes for her and literally just last night she said "I've always hated lentils because I thought they tasted like dirt but lately they've tasted good." You converted her! I'll have to try some of these next!

      This is so lovely to hear! I love when you can convince someone that they don't actually hate a certain ingredient...they just haven't find the right method or recipe. So happy you and your mom have been enjoying the lentil recipes in the meal plan!!

      I agree with mom. I always thought lentils taste like dirt. I have obviously been eating lentils cooked by restaurants that don’t know how to make them. The first recipe I found that I liked was posted on RUclips by someone who said she and her husband did not like lentils but loved this soup. That was the recipe for me. All of these recipes look delicious with layers of flavor added. I may go first with the bolognese.

      that's great. lentils are so healthy. I made some little lentil balls that tasted like greek me*tballs. im veg so.. it's borderline for me..

      I had the same experience, when my ex-husband made lentils they tasted literally like dirt, but not the way I make them now! Thank you Rainbow Plant Life

      I’ve never had lentils & don’t know anyone who has. I love white/northern beans, pinto beans, kidney beans. I hate black beans, too bitter. Do lentils taste like beans? If so, which ones?

    Ma’am we need to talk come here …………… I just made the bolognese with the wine and really cook in layers as you described in your recipe. Let me tell you, I’m so proud of myself and this sauce taste so good. Idk if because of the caramelizing of the onion, paste and wine but it was just perfect amount of sweet. Now I’m still cooking currently, I like how thick your was so I’m going to keep cooking but thank you. Thank you for sharing and I will be drilling around to help with having some good meal prep

    I love Indian food. The spices are so good. The onions, garlic and ginger add so much good flavor to the food. Indian food is the best!!!

    Nisha, you can cook the dal in the instant pot for 8 mins rather than stove cooking for 30 mins. Plus you dont need to stir or baby sit it. More time and effort efficient!

      If you have an Instant Pot you should check out Nisha’s Instant Pot cookbook. It’s probably my most used cookbook, it’s so good.

      I think it's awesome that she does evening on the stovetop. A lot of us (especially with children) can't afford to buy new kitchen gadgets.
      I think it's great that the instant pot makes things easier for a lot of people, but others, like myself, Aunt have the space or the money for new appliances

    You always remind me that I need to get off my duff and make more of an effort to vary my plant-based diet. I have no excuses either, as I live in Toronto, and have access to a wide range of ingredients. Curry leaves (which I love) are available at the Sri Lankan grocer near me, as is every type of spice. I really recommend the porcini powder you suggested -- it adds so much flavour. I grind my own from the large bag of dried porcini I buy from an Italian-food shop here in Toronto. I love all the dishes you prepare!

      I was wondering whether or not you could grind up dried porcinis to make a powder? I've never seen the powder anywhere although I know I could find it online or possibly at the Indian grocery store that I found the curry leaves in, but the problem is they often sell in bulk, or in really big bags and it's just me and my husband. I like buying dried morel mushrooms as well-the stock they make is amazing! Then we use the reconstituted mushrooms and put them in the food processor with some fresh mushrooms and it's really good. Thanks for your tips.

    Dal was ALWAYS my favourite food growing up with a Sikh mum, now my mum has sadly passed but I often make a red lentil Dal it's comfort food at its finest. Plus my 5 year old loves it too ❤

    Everything looks really delicious!!! Also if anyone is looking for an authentic north indian lentil recipie, we generally dont use mustard seeds and curry leaves in there. Those ingredients are more used in south indian recipies.

    For red wine in the bolognese sauce, you can use pomegranate juice or red wine vinegar mixed with a little agave or fine sugar. It will give you that extra flavor that wine imparts.

    I've been making this bolognese recipe for 4 years now, I dont drink alcohol so I never put any wine in, and it is PHENOMENAL! My dad doesn't really like alternative vegan stuff but he loved this so much and said that if I made it everynight he'd eat it instead of his usual meat stuff. So that's big in itself ahaha. But to me, it really does taste meaty, it's the perfect meat bolognese alternative that's so much healthier because you also get all that fiber. Thank you nisha for this! ❤️❤️🫂

    Tolerance of heat/spice can be hereditary, but it’s simply a trait that depends on the number of heat receptors in your mouth. Spicy foods contain a chemical called capsaicin, which activates a receptor found in your mouth and on your tongue called a TRPV1 receptor. There is some variation in the sensitivity of these receptors, and even the amount of them, from person to person. Birds lack these completely.

      Spice / heat sets my digestive system on fire 🔥 . Makes me feel awful, so I avoid too much heat. I’m sure she would say I have “baby mouth”. (That sounds so condescending.) Love her recipes (toned down) and her personality, though. ❤

      Oddly, as far as 'baby mouth' is concerned, my dad used to make pretty hot curries when we were kids and my twin bro and I loved them! I am 72 now and still ache for hot spices-I don't mean ridiculously hot, but pretty strong. My step-kids are divided, as she is into hot spicy food, while he acts as though he's been poisoned! :) So, not so sure about the hereditary element...

    Love your recipes and tried few of them already. One suggestion: instead of using whole curry leaves try chopping them and then add to the warm oil it not only gives out aroma but also releases oil from the leaves and guess what you can eat them too. They are good for you. Happy cooking!!!

    I have made 3 of 4 recipes (haven't doen the tacos yet). The other three are amazing! The bolognese tasted exactly like a high end italian restaurant version, the snack mix has been added to my every day salad lunch and the dal palak. And let's talk about the Dal palak! I didn't make your dal because I love the dhal recipe that I use (and I already had it in the freezer). But normally I serve the dhal over rice. So your recipe has the dhal has the base with the palak on top then the lentil snack crunch. It is AMAZING! Truly everything you describe here! Thank you, thank you!!

    You are such a fantastic cook, I’m amazed you’ve not been picked up by the Food Network and found fame and fortune! Am constantly amazed how many different recipes you invent which, although not vegetarian myself, helps me do 3 days of vegetarian meals per week and just 4 days where we eat meat/poultry/fish and this is much more economical. I’d love you to devise a recipe using pearl barley - a nice warming stew would be great!!! Thank you. x

      Lentils really are so versatile! my only regret is that I didn’t get to show more recipes in this video lol. None of these particular recipes are in my cookbook, but of course, there are lots of delicious lentil recipes in the book - mostly brand new!

    7:43 I have to ask, why use the tubed stuff over the canned stuff if you are going to use the entire tube? Where I live, the tubed tomato paste is around 2x as expensive as the canned stuff because you can reseal the tube, but if you don't need to reseal the tube then I think you could save a lot of money by going with the can.

      I use it because the tubed stuff tastes brighter, fresher, and more tomatoey. The canned stuff has a bit of metallic taste from being in the can, and since a generous quantity is used, it can interfere with the overall taste. For context, tubed tomato paste (at least the ones sold in the U.S.) is preserved with salt, whereas canned tomato paste is preserved with citric acid, so the flavor is a bit different.     I just wanted to add that I couldn't find red lentils, so I used brown ones - the flavor is a lot more earthy (not as nice as red lentils would have been), and I added rehydrated porcini mushrooms - but what made the biggest difference to the really earthy flavor was adding a butternut squash. It added a layer of sweetness that made it absolutely delicious!!!!! The left over bolognaise is going to be made into a lasagna! THANK YOU for fantastic recipes.

    Wow! All of these recipes are great repeats for a weeks worth of meals. I’ve made lentil bolognese with brown/green lentils, but would have thought red lentils would just disappear into a puree. I always have red lentils but only use those to make crepes and flat breads, pizza, and such. Yeah! Can’t wait to make all these recipes. Thank you 🌟

    my Bolognese includes chickpeas, coarse ground and mushrooms, fresh and dried. I found they add that bit more which is nice.

    Just a tip, it's easier to do the horizontal cuts first and then the vertical ones when dicing an onion, that way the onion keeps together

    MMM I just enjoyed the spinach dal recipe. I made the lentils Friday and the dal on Saturday (but forgot to buy spinach so used cabbage instead) but as today was Easter had to visit familly for a heavy meal. Fortunately back at my house I finally warmed up both foods and said oh wow! I didn't put the chilies even though I have lots leftover from making guajillo sauce lol and wonder if it would be better if I had added but oh well this will be my lunch or dinner rest of week! Thanks fam.

    I made the crunchy Indian Lentil snack and it was good but very crunchy (I might have over cooked it a little). I put it in some yogurt (sorry, it wasn't vegan, but obviously you can use vegan yogurt) and added a touch of maple syrup and it was great. Then last night I made the Dal Palak using some red lentils I had and it also came out very good-I put the crunch mix on top. I found an Indian Grocery store and bought frozen curry leaves because their fresh ones didn't look all that fresh and they worked fine. Plus I figured now I have them for later uses. Looking forward to making the other two recipes plus the Vegan Crunchwrap Supreme as well. Thanks! I recommend you to my friends ALL OF THE TIME!!!

    This video popped up for me this week. The lentil Bolognese recipe looked really good, but I was skeptical. I've never enjoyed a lentil in my life. All the comments convinced me to try it though. OmG it's incredible. It's just so rich and tasty. I seriously enjoyed it. Definitely making again. Very grateful for this recipe, I really wanted to include lentils in my diet. Thank you!

    Wow! I just made the Crunchy Indian Lentil Snack.... and omgoodness, it's so good, even my picky husband loved it! I'm so glad I quadrupled the ingredients because this isn't going to last very long! Thank you! :)

    I've now made all these dishes as written (shown) which is very rare for me 😄 and I am so surprised and delighted how delicious they all are! I had bought a bag of curry leaves at the Indian grocer up the street, hoping to find a way to use them and voila! Everything else is a food I usually have on hand. Fabulous set of recipes! (OK full disclosure, I did add some cumin seeds to the slaw for the tacos ;) )

    I actually tried the Bolognese recipe and it was FANTASTIC. Got to admin the key is to add a little bit of minced meat to actually taste better but still, good recipe.

    I just made the lentil bolognese, and oh my god it’s so good! I used soy sauce instead of wine to deglaze the pan, and it turned out so savory and tasty. Great recipe.

    A lot of stores only carry green lentils and I always figured beans tasted better. That's how I was most my life then at 50-ish I discovered red lentils :)

      Same. I've always hated lentils, mostly because I had only ever tried green lentils. But I found red lentils at the dollarstore and decided to give them a try. They were actually enjoyable!
