For making humous, I love using chana dal. Chana dal is basically chickpeas split in half with their shells removed. These cook from dry in 12 mins in a pressure cooker. This means you can make humous from dried chickpeas in under 15 mins.....I do this all the time. :-)
Nah, doesn’t work with the chana dal I get at my local India market. Even from the pressure cooker they come out partly hard if they’re aren’t cooked at least for 45min and soaked over night 😞.
@@MalaAnsoo I doubt the type of pressure cooker would make a huge difference but, for what it's worth, I use an Instant Pot to cook mine. I bought one after seeing @RainbowPlantLife demo a load of recipes in them.

I did this exact method in my old manual pressure cooker and the water spurted out of the release valve....oopsie
In my hummus, instead of tahini, I use: ground almonds and cashews with sesame and olive oil. Gives it more texture and can more easily adjust the amount of sesame taste.

I just made the hummus following Nisha's guidelines for canned chick peas and it tasted soapy. It took me a minute or two and a quick google to learn that it was probably from the baking soda when cooking the canned chick peas. So ... just a heads up.... I suggest a *very* little bit of baking soda and a very thorough rinsing. To fix the soapy taste I upped the salt and added more lime (one website suggested balancing the baking soda taste with acid). As suggested by Nisha in a different video I removed the peels from at least half of the chick peas. I got bored so I didn't finish the peeling process LOL Once I adjusted for the soapy taste it still came out pretty darn good and the texture was great. I will be making it again (and again). Thanks
If you don’t want to peal the garbanzo beans you can always purchase dried Chana Dhal, which is small, split, chickpeas with no skins. They last forever and make a luxuriously smooth hummus. Learned that from a great Lebanese channel.
I made braised chickpea today, didn't have fennel but used dill seeds and they were phenomenal. I served it in a wrap with lettuce and herb sauce you made, tomorrow will make chickpea salad with the rest of the herb sauce. Thank you for new inspiration on my favourite chickpeas!

I tried the pan fried version today. I just some random spice mixes hat I had and oh boy, super delicious! That makes a perfect replacement for potatoe chips!! And since its fried in olive oil, it will be healthier. Thanks for providing us with delicious healthy food!
I made the marinated chickpeas and they are SO GOOD! Tasted even better the next day after having more time to soak in all the flavors. I enjoyed them on sourdough toast with vegan mayo and sliced tomatoes which made for a great lunch. Can't wait to try the smashed chickpeas next. Also, your parents are adorable!

The roasted chickpeas look amazing. I will definitely try them. But my experience with roasting vegetables and nuts is that a tablespoon of olive oil per pound is ample. Toss in a bowl to coat well with oil and any spices before spreading them out on the baking sheet. After draining, a 25oz can is probably 18-20oz of chickpeas or thereabouts. No need to pour three tablespoons of oil on them to get that crunch.
Everything looks amazing! For my chickpea salad I use celery, red onions, and carrots. I definitely need to add some herbs too. Your parents are too cute. Thanks for sharing!
Good question. I store them at room temperature in a storage container, but don’t completely close the container, leave it ajar. They’ll stay good for 3 to 4 days, though of course they’re crispiest on day one. You can revive them by tossing them with a bit of oil and spreading them out on a sheet pan and putting them in the oven at 350F for 5 to 10 minutes or adding them to a frying pan with a touch of oil.
i remember the first time i ate them and i haaaaated it so much. Since I learnt how to prepare them well, they are one of my favourite ingredients!!!! Curries, hummus, roasted in salads or just to snack, saucy on toast... the list goes on 💖

Different lifestyles have to be taken into consideration. I only have access to dried chickpeas (unless I want to spend a lot of money for canned in a specialty store), and even that is a trick finding them in Mexico. We live on a sailboat, in extreme heat, so to use the pressure cooker on our induction cooktop (to save propane that fuels the galley stove), we have to have all other power drainers off (Air Conditioner, for example), so as not to trip the circuit breakers. If I had access to canned for under $6/can, I would be thrilled!
Items it to buy the smasher chock peas for channa cho garam. It comes with a dpick socket and and mix hat spice packet with the smashed chick peas. Mix with lemon juice tomatoes and minced onion.

I have to throw in a rec for a tahini brand that is a favorite of our huge syrian family - Al Kanater is head and shoulders above the rest. A little hard to find but available at most middle eastern grocery stores. Soooo luscious and sweet and creamy. We even have it as a dessert sometimes with some date syrup swirled in - it ends up having a nutty, caramely, but not too sweet flavor

The Instant Pot cookbook is great!! My oven sucks too. I got a toaster oven even though I have a tiny studio. Between the Instant Pot and the toaster oven I can make what I need and bonus the whole place doesn’t heat up

It's worthwhile to note that chickpeas are about 2/3 carbohydrate, 1/3 protein. I would skip adding grain-type carbs to salads, and would generally use hummus as a condiment as part of a spread with veg/cheeses/proteins or eat it with a spoon.
I'm fairly new to your channel and not a Vegetarian, though I do like most vegetables. I need to eat more home-cooked meals (I'm capable LOL), but need to get my apartment in order, especially the kitchen 😕. try adding a teaspon of baking soda to your cooking water. it softens them up so much faster

I make hummus the same way, but I use much less tahini, a drizzle of EVOO, and a Tbs or two of non-fat yogurt. It tastes amazing!
In summer, when I avoid using the oven, I roast my chickpeas in the air fryer. It works just as well & the house stays cool.

I have to throw in a rec for a tahini brand that is a favorite of our huge syrian family - Al Kanater is head and shoulders above the rest. A little hard to find but available at most middle eastern grocery stores. Soooo luscious and sweet and creamy. We even have it as a dessert sometimes with some date syrup swirled in - it ends up having a nutty, caramely, but not too sweet flavor

I’ve noticed the last year or two that I will often get way undercooked chickpeas from a can.
It’s the aftermath of the pandemic. Food production has been inconsistent. Even consumer-friendly packaging has decreased. It’ll probably improve once supply and personnel ramps up.
I found Goya is the best brand for good canned chickpeas. I can get them at the dollar store.
Some brands are really bad for that. They're much better when they've been cooked for a bit

The Instant Pot cookbook is great!! My oven sucks too. I got a toaster oven even though I have a tiny studio. Between the Instant Pot and the toaster oven I can make what I need and bonus the whole place doesn’t heat up

It's worthwhile to note that chickpeas are about 2/3 carbohydrate, 1/3 protein. I would skip adding grain-type carbs to salads, and would generally use hummus as a condiment as part of a spread with veg/cheeses/proteins or eat it with a spoon.

I make my humus with half garbanzo beans and half navy beans. I also simply use falafel seasoning to flavor it.
I'm fairly new to your channel and not a Vegetarian, though I do like most vegetables. I need to eat more home-cooked meals (I'm capable LOL), but need to get my apartment in order, especially the kitchen 😕. I'm about to order a 5 pound bag of Non-GMO chickpeas and can't wait to cook them up, maybe even trying one or another of the recipes in this video! OH--Your Parents are hilarious.
