Here's another cooks/chefs trick to control spiciness - - instead of using red pepper flakes, where you might get a whole flake or a group of flakes (surprisingly spicy), try adding a measured amount of cayenne pepper powder. It distributes the spiciness more evenly.

In the Thai culture, these are called Fresh Rolls. Super good. Thanks for your delicious recipe. I double up on the rice paper, for a more durable roll.
These are Thai Spring Rolls. I ate these at Portland, Oregon. They are absolutely delicious. However they very, very thinly chop all the veggies long, which makes the dish super crunchy and a joyous experience. In your recipe the veggies are thickly chopped long chunks.
Can't imagine these without fresh cilantro or mint inside... the best!

Instead of the water I had just made some vegetable stock and tried it in the peanut sauce and one with the water. Both were good but the stock gave it an added flavor.

I made a cucumber salad yesterday in order to make a spring roll today with lettuce and rice paper. If you want something to mimic savory seafood, dulse is a seaweed that can be eaten raw like jerky or dipped in water to quickly soften. Dulse and toasted sesame seeds are great to go into your summer rolls!
The sauce sounds delicious. An option for the summer rolls would be to air fry them for a short time - - to crisp up the rice paper and warm the vegetables ever so slightly.

Yummy spring rolls l will make them in spring to summer . Right now is winter

There is powdered peanut butter where you add water to reconstitute it. It has a lot less fat, and I find it yummy in sauces. Some brands do add sugar, though.

It’s a great way to use up leftover veggies. I like bean sprouts, basil and avocado too.

Pb2 powder works great, I use it all of the time to make my peanut sauce. I replace 3/4 of the peanut butter with Pb2 then add the rest with regular peanut butter as this tastes better to me than using all Pb2
These look really good! They seem like they might not keep you full though. If I had these at a side, what would you suggest making as a main/additional dish?

Usually the summer rolls are an appetizer but I usually make them a meal. Like a salad in sections 😆
Can someone tell me how long these last in fridge? Like for prepped lunch?
The rice papers dry out and get really hard to chew after a day
If I wrap each one in plastic wrap they last a few days in fridge. Can reuse the plastic wrap.
Other times, I’ll chop the veggies up in advance then roll the roll each morning or at the time of the meal, saving me the prep time. But usually I make enough rolls for 3 days :) yum!!
Fresh herbs definitely a great thing to add, btw (mint, basil, cilantro)
I like to call them “fresh” spring rolls as opposed to the fried spring rolls.
Can't do peanut butter. Would cashew or almond butter or tahini be an acceptable sub? One better than the other?

Ok made them. Sauce and my veggies were good but are they supposed to be gummy, like gelatin or bubble gum...or was this the brand of wrapper I got?
You might soak the wrappers just a couple more seconds next time and I think the texture will be better 👍
