Vegan Spring Rolls Recipe | Vietnamese Thai Rice Paper Rolls + Peanut Sauce

  • This is one of my all time favourites! Whether you call it rice wraps, fresh rolls, Thai or Vietnamese spring rolls, I will teach you how to make this amazing vegan recipe together! I will give you the confidence to make this dish from start to finish even including 2 amazing (and EASY) dipping sauces! Remember to like, comment, and subscribe so you won't miss a single episode!
    These will go perfect with a nice hot bowl of VEGAN PHO ;)
    • EASY Vegan Pho Recipe ...
    Rice Wraps, Spring Rolls, Fresh Rolls, Rice Paper Rolls Ingredients:
    rice wrap paper
    extra firm tofu
    English cucumber
    mung bean or vermicelli noodles
    fresh Thai basil
    fresh mint
    red or green leaf lettuce
    cilantro
    salt and pepper
    Peanut Sauce Ingredients:
    2 generous tbsp peanut butter
    splash of coconut milk
    1 tbsp of tamari or soy sauce
    Spicy Soy Sauce Ingredients:
    tamari or soy sauce
    couple sprigs of cilantro
    green onion
    crushed chilli (or Asian chilli)
    splash of toasted sesame oil
    Rice Wrap / Fresh Rolls Directions:
    1. Start with the ingredient that takes the longest to cook/prep. In this case, its the tofu. Dry your extra firm tofu with a paper towel and slice into sticks
    2. season the tofu and cook in a 375F for 35-40min
    3. to prep your noodles, bring a pot of water to boil. once boiling, take the pot off the heat and let the noodles soak for 3-5min. Then stop it from overcooking by cooling it down with cold water
    4. start washing your greens in a sink full of cold water
    5. dry your greens and herbs after they are washed and set them aside
    6. once all your ingredients are prepped and ready to go, dip your rice paper onto a plate of water for about 30 sec.
    7. spread your rice paper on a cutting board and place in your prepped ingredients.
    8. to roll, take the flap closest to you and fold over. Then tuck it in and roll it once. Then tuck in both sides, and complete the roll. That's it!
    Dipping Sauce Directions:
    1. for the peanut sauce, place ingredients into the blender and blend on high speed. If your sauce is too runny, add more peanut butter. If its too thick, add more milk.
    2. for the spicy soy sauce, place the ingredients in a bowl and mix!

    1 tip: use warm (not hot or cold) water. When dunking rice paper in water, make sure the rice paper is completely wet then take out ASAP and rice paper will still be stiff, quickly tap the rice paper against the edge bowl/plate to let the excess water drain off. Then place the wet rice paper onto a plate or wooden board and proceed with adding ur desired fillings - by the time you are done and ready to roll the rice paper would be soften and will be clear almost transparent rather opaque if using cold water and leaving it to soak. I am Vietnamese and have been rolling rice paper for a very long time. Everyone I’ve shown how to loved it. Try it and see.

    Made these for a church luncheon and everyone loved them! I added some violets and mint leaves on the bottom which looked really pretty once they were rolled and turned over! Great way to eat veggies in a fun way!

    That's interesting: in Brazil, your Thai basil is the common variety, whereas the Italian one is very hard to find. Well I love both, they're just delicious!

    Made the spring rolls. My first! Made with my own fresh herbs. Instead of cucumber, we had julienned carrot because we had the rolls [and both sauces] with delicious tomato, cucumber and green onion salad. Very nice meal!

    You use so many more herbs in your rolls than I ever thought of, I love it! I'm gonna have to try them as soon as I can find some rice paper wraps since every store seems to be out of them, I'm gonna have to make a special trip to our KP international market to find some.

    Hey Wil, I'm writing from Cambodia where I live but I'm Italian. I can't cook at the moment because of a health condition that I'm trying to heal naturally but that has rendered me temporarily disabled. My Khmer friends, have given me some delicious rolls which, instead of being made with rice papers they were made with sheets of very thin rice noodles. Because I have to eat anti-inflammatory food, they served the sheets of noodles with lettuce, cucumber and onions, everything raw. I had to make the rolls myself and then dip them in a vinegary pungent sauce (no peanut sauce for me yet). Absolutely refreshing and delicious and I must confirm that veggies in Cambodia are always fresh and delicious! 🇰🇭😋🤗😘😉😁👌

    I made these spring rolls today except I kept out the tofu and cut the cucumber thicker making them the focal point. Very pretty by the way. Placed some mint, green onion, cilantro, red lettuce and vermicelli inside. My rolling technique needs some work but they stayed together that is an accomplishment. They were so good, this will be a go to snack on my off days. Thank you so much, Oh and the peanutbutter sauce was wonderful.

    I made this tonight as a snack, it was so good. (I didn't add the tofu because I forgot to take it out of the freezer.) I even was able to roll it neatly! I left out the lettuce because my rice paper was a lot smaller than the ones you used. I never ate mint like this before, I only use it to make tea, so this was an experience, but one I would like to repeat. Thanks!

    Great - just bought some rice wrap paper, and vermicelli noodles , and of course I turned straight to your channel to see how to make spring rolls. I'm hoping I can also do some substitution depending on whats in my garden - such as tender spring cabbage for lettuce, and perhaps mung bean sprouts for the noodles sometimes? The dipping sauces look fabulous

    Omg these are literally making my mouth water, I'm doing a repeat binge watch on all your videos, it's midnight and I'm trying to go to sleep, but maybe this isn't the angle I should be going to want to get to sleep, I get so excited, but I can't pull myself away, lol😂!!!!!     I stumbled upon your channel and it was the best thing ever!! I am vegetarian and love Asian cuisine. However I rarely found real veg Asian as they put fish sauce/oyster sauce in every dish.     Great version! I have neverseen them with tofu before only veggie or shrimp Would love to see a version with Asian flute music much calmer. the music is hip and fast but i love to chill. just my opiinion. Great videos overall for sure.

    I bought the ingredients to make this for lunch today. It was such a fun meal last time I had them at your place so I'm excited to recreate them! Do you have any suggestions for ingredients to use instead of the herbs (as you know I'm a rare breed of herb hater). Sweet pepper slices maybe? Thanks Wil!

      I always think of you when I make this now :D fun times! Yes, you can actually make a sweet/savory version of this using julienned cucumbers, mangoes, and cilantro (traditionally lol but you can maybe use basil?). Thanks for the note man!
