Made these for a church luncheon and everyone loved them! I added some violets and mint leaves on the bottom which looked really pretty once they were rolled and turned over! Great way to eat veggies in a fun way!

Made the spring rolls. My first! Made with my own fresh herbs. Instead of cucumber, we had julienned carrot because we had the rolls [and both sauces] with delicious tomato, cucumber and green onion salad. Very nice meal!
You use so many more herbs in your rolls than I ever thought of, I love it! I'm gonna have to try them as soon as I can find some rice paper wraps since every store seems to be out of them, I'm gonna have to make a special trip to our KP international market to find some.
1 tip: use warm (not hot or cold) water. When dunking rice paper in water, make sure the rice paper is completely wet then take out ASAP and rice paper will still be stiff, quickly tap the rice paper against the edge bowl/plate to let the excess water drain off. Then place the wet rice paper onto a plate or wooden board and proceed with adding ur desired fillings - by the time you are done and ready to roll the rice paper would be soften and will be clear almost transparent rather opaque if using cold water and leaving it to soak. I am Vietnamese and have been rolling rice paper for a very long time. Everyone I’ve shown how to loved it. Try it and see.
That's interesting: in Brazil, your Thai basil is the common variety, whereas the Italian one is very hard to find. Well I love both, they're just delicious!

Hey Wil, I'm writing from Cambodia where I live but I'm Italian. I can't cook at the moment because of a health condition that I'm trying to heal naturally but that has rendered me temporarily disabled. My Khmer friends, have given me some delicious rolls which, instead of being made with rice papers they were made with sheets of very thin rice noodles. Because I have to eat anti-inflammatory food, they served the sheets of noodles with lettuce, cucumber and onions, everything raw. I had to make the rolls myself and then dip them in a vinegary pungent sauce (no peanut sauce for me yet). Absolutely refreshing and delicious and I must confirm that veggies in Cambodia are always fresh and delicious! 🇰🇭😋🤗😘😉😁👌
I made these spring rolls today except I kept out the tofu and cut the cucumber thicker making them the focal point. Very pretty by the way. Placed some mint, green onion, cilantro, red lettuce and vermicelli inside. My rolling technique needs some work but they stayed together that is an accomplishment. They were so good, this will be a go to snack on my off days. Thank you so much, Oh and the peanutbutter sauce was wonderful.
Omg... coconut milk in thr peanut dip? Amazing! That is next on the list to try since I found organic rice paper recently. Oh boy! I like a jam and vinegar dip sauce as well as peanut goodness.
Great - just bought some rice wrap paper, and vermicelli noodles , and of course I turned straight to your channel to see how to make spring rolls. I'm hoping I can also do some substitution depending on whats in my garden - such as tender spring cabbage for lettuce, and perhaps mung bean sprouts for the noodles sometimes? The dipping sauces look fabulous
I made this tonight as a snack, it was so good. (I didn't add the tofu because I forgot to take it out of the freezer.) I even was able to roll it neatly! I left out the lettuce because my rice paper was a lot smaller than the ones you used. I never ate mint like this before, I only use it to make tea, so this was an experience, but one I would like to repeat. Thanks!

OMG that tofu brought so many memories of the time I lived in Hawaii. I used to go to the China town market and buy the blocks of tofu and invent recipes about how to cook it 😋
