Once you try it like this, you will always insist on adding every time. It's also great to do on a Bom Mei sandwich. Basil, Mint, Cilantro together is a match made in heaven. Seriously.

Woke up at 2am bored and couldn't sleep. So I decided to make a cold noodle dish with your dipping sauce. I cooked fettuccine pasta and took your recipe for Paul Newman sesame ginger and peanut butter sauce and added 2 teaspoons sesame oil. Cooked the pasta and then added fresh parsley, scallions and 1/4 grated carrot. It came out unbelievable! Gave some to 4 neighbors and they went crazy. Try it. It's amazing. Thanks for that simple peanut sauce recipe. 🤗

This recipe, however, has made me realize that I can occasionally eat shrimp, be satisfied (with about 3-4 rolls), and not overdo it with the shrimp. You’re appreciated!

Thanks for all the great tips and ingredients list. I made this today and my spouse and I just loved them! I used a sweet chili dipping sauce I made with xylitol and tapioca starch instead of sugar and corn starch for a healthier sweet chili sauce.
Great advice to cut the shrimp in half, they look beautiful. I live in a small town and I finally found wraps! Now I live on these things. And actually eat some veggies which I am not real fond of usually. I use jicama, mushrooms, yellow peppers, sometimes fried maifun and avocados as well. Thank You!
It's much easier to eat veggies when eating Vietnamese food...you can toss it in the noodle bowls (bun thit nuoung, which is usually charcoal grilled pork, but there are versions with different meats), all kinds of salads (i.e. the Vietnamese cabbage and carrot salads...also a version that uses unripe papaya, mango, etc.), Vietnamese sizzling crepes (banh xeo), banh khot, fried shrimp and sweet potato fritters, and so on and so forth. We wrap so many foods in lettuce or some kind of green with herbs and dip it in a special sauce (there are a million different iterations of sauces to go with each dish, too).
I ordered all my needed ingredients (frozen shrimp, butter lettuce, vermicelli noodles, carrots, fish sauce and rice paper) from Amazon Fresh last night and it arrived at 7:00 this morning. I got started right away and followed your video exactly. They were amazing Natasha! So fresh, crisp and delicious! My son helped me wrap them up and and it was a fun dish to make together. My husband, son and I had them for our lunch just now and we all loved them along with both dipping sauces you suggest. We have a few left over so I wrapped each individually in a damp paper towel and then into a zip lock bag. Hope to finish them off at dinner tonight! I love spring rolls. I used to buy them from this Vietnamese restaurant in NYC’s China town back in the 90’s. I remember tasting mint and basil too. Peanut sauce is good but I have to say I love the carrot/fish sauce dipping sauce best!

Mint. Gotta have mint for a proper spring roll. You can add both cilantro and mint or other herbs like Thai basil (my family only used Thai basil for our pho, though). But always gotta have fresh mint. :)

Traditionally they're made with thinly sliced pork belly and shrimp, but you can put all kinds of protein in there. Viets have versions with flavored baked/broiled fish like salmon. We do butter shrimp and beef (cooked on a flat top electric griddle) as a fun interactive group meal and everyone wraps their own while the shrimp and thinly sliced beef are cooked in the butter. You can do chicken and other seafood in the butter, too. It's all good, but please add mint with the cilantro. To me, mint is what makes a spring roll great and cilantro is the sidekick. :)
These would do best in summer and the baked ones in the colder months. It’s fall right now but I’m making half fresh and half baked. I love these things and haven’t had the fresh ones in a long time.
I love spring rolls, but I am allergic to seafood,so I make mine with grilled chicken slices. I love the idea of that peanut sauce with the ginger dressing. I am definitely gonna try it.
If you are allergic to seafood, you can try boiled pork belly, fried egg, grill beef, fried tofu (if you wanna try making vegan style),... Just slice all ingredians into the roll size and wrap them. That's all.

I wud like to suggest 1 little thing.. we often call the fried ones "spring rolls".. to diferentiate with this kind (just wrap no fry.. with diferent rice paper.. the fried ones use the thinner paper). For this kind we call "summer rolls". Or you can try call it in Vietnamese names it wud be much nicer.. GOI CUON or NEM CUON for the fresh..NEM RAN or Cha GIO for the fried ones. "" For rolls we also have some other diferent kinds as well.

There should also be some boiled pork belly in the spring roll. Missing either the shrimp or pork belly is like losing its soul🤌. The cilantro seem a little lonely in it, we normally add a few kinds of herbs like cilantro, basil, garlic chive, even green onion, and a few others herbs which I can’t remember their names🥲 but it should be based on your preference. However, cilantro is unlikely to be used that much alone because for some people, they think the flavor of cilantro taste like soap ( some people i know said so) (there are some chances that you might feel the same) About the sauce, don’t use garlic chili sauce, just use some fresh chili because the target is to not having a mud looking dipping sauce. A part of the garlic can be minced really fine for flavor, and another small part can be minced and chop a bit bigger (this is top secret😑🤌) so when you add it to the fish sauce, it will float on top (with the minced chili). Also, no shredded carrots in it, i don’t remember any place in vietnam do that, there’s also another light sauce that is normally eaten with some traditional rice flour cake that have pickled carrot and radish (the same kind of pickles they use in Vietnamese “banh mi”) so this can be a misunderstand🤔. If you are too lazy to make the sauce, hoisin sauce is a authentic alternative🙂 (⛔do not eat it with ketchup or hot sauce⛔️ but if you like it that way then🤷). There is also a Vietnamese peanut sauce for a slightly different kind of spring roll in my hometown, but i don’t have the recipe 😑 (so her peanut sauce should go with it nicely, she has crazy instinct for food😮) Both kinds of sauces I mentioned should have a clear brown base, red (of 🌶 or 🥕) and white (of 🧄 or radish). You shouldn’t be able to smell or taste the fish sauce’ distinct flavor, the flavor of the garlic chili sauce is sweet, salty and a little spicy but not too much(the lemon is just to give a “fresh” and balance feeling but don’t make it sour... 🤷 but some do like it a bit teeny tiny sour🤷) Btw, i have to say that her rolling technique is on point 🤌🤌🤌 we all want to see our proteins out in the front🌚
Everything is fine with the fish sauce except putting sesame oil and rice vinegar in it. I don't think any Vietnamese make fish sauce that way. Garlic chili is a good substitute for Thai chili if you don't have Thai chili.
Those look amazing! I've always had them with mint leaves inside rather than cilantro, but I'm sure it's very good as well! Thai basil is also awesome and if you chop some peanuts and add it to the peanut sauce, it adds a nice little crunch:) Thank you for your recipes!!!!!

I love spring rolls. I learned to make the peanut sauce using crunchy peanut butter so the chunks work their way into the spring roll.
That's the best cheats way and cheaper than buying a jar of peanut butter and chopped peanuts separately 😁

Traditionally they're made with thinly sliced pork belly and shrimp, but you can put all kinds of protein in there. Viets have versions with flavored baked/broiled fish like salmon. We do butter shrimp and beef (cooked on a flat top electric griddle) as a fun interactive group meal and everyone wraps their own while the shrimp and thinly sliced beef are cooked in the butter. You can do chicken and other seafood in the butter, too. It's all good, but please add mint with the cilantro. To me, mint is what makes a spring roll great and cilantro is the sidekick. :)

This is how I make my spring rolls! But I don’t like that brand of wrapper. Try using the ‘Three lady brand’ or sunlee wrapper.

I love spring rolls, but I am allergic to seafood,so I make mine with grilled chicken slices. I love the idea of that peanut sauce with the ginger dressing. I am definitely gonna try it.
If you are allergic to seafood, you can try boiled pork belly, fried egg, grill beef, fried tofu (if you wanna try making vegan style),... Just slice all ingredians into the roll size and wrap them. That's all.

I wud like to suggest 1 little thing.. we often call the fried ones "spring rolls".. to diferentiate with this kind (just wrap no fry.. with diferent rice paper.. the fried ones use the thinner paper). For this kind we call "summer rolls". Or you can try call it in Vietnamese names it wud be much nicer.. GOI CUON or NEM CUON for the fresh..NEM RAN or Cha GIO for the fried ones. "" For rolls we also have some other diferent kinds as well.

There should also be some boiled pork belly in the spring roll. Missing either the shrimp or pork belly is like losing its soul🤌. The cilantro seem a little lonely in it, we normally add a few kinds of herbs like cilantro, basil, garlic chive, even green onion, and a few others herbs which I can’t remember their names🥲 but it should be based on your preference. However, cilantro is unlikely to be used that much alone because for some people, they think the flavor of cilantro taste like soap ( some people i know said so) (there are some chances that you might feel the same)
About the sauce, don’t use garlic chili sauce, just use some fresh chili because the target is to not having a mud looking dipping sauce. A part of the garlic can be minced really fine for flavor, and another small part can be minced and chop a bit bigger (this is top secret😑🤌) so when you add it to the fish sauce, it will float on top (with the minced chili). Also, no shredded carrots in it, i don’t remember any place in vietnam do that, there’s also another light sauce that is normally eaten with some traditional rice flour cake that have pickled carrot and radish (the same kind of pickles they use in Vietnamese “banh mi”) so this can be a misunderstand🤔. If you are too lazy to make the sauce, hoisin sauce is a authentic alternative🙂 (⛔do not eat it with ketchup or hot sauce⛔️ but if you like it that way then🤷). There is also a Vietnamese peanut sauce for a slightly different kind of spring roll in my hometown, but i don’t have the recipe 😑 (so her peanut sauce should go with it nicely, she has crazy instinct for food😮)
Both kinds of sauces I mentioned should have a clear brown base, red (of 🌶 or 🥕) and white (of 🧄 or radish). You shouldn’t be able to smell or taste the fish sauce’ distinct flavor, the flavor of the garlic chili sauce is sweet, salty and a little spicy but not too much(the lemon is just to give a “fresh” and balance feeling but don’t make it sour... 🤷 but some do like it a bit teeny tiny sour🤷)
Btw, i have to say that her rolling technique is on point 🤌🤌🤌 we all want to see our proteins out in the front🌚
Everything is fine with the fish sauce except putting sesame oil and rice vinegar in it. I don't think any Vietnamese make fish sauce that way. Garlic chili is a good substitute for Thai chili if you don't have Thai chili.

Those look amazing! I've always had them with mint leaves inside rather than cilantro, but I'm sure it's very good as well! Thai basil is also awesome and if you chop some peanuts and add it to the peanut sauce, it adds a nice little crunch:) Thank you for your recipes!!!!!
