Just made this. Excellent. A small tip: upon serving, add just the tiniest bit of Shaoxing cooking wine (about 1/4 oz) to your bowl and plate, and mix well, and, wow, perfect flavor and after-taste. Too much and it would be over powering. Really adds just the right touch to that sauce.
Lots of yummy goodness there. Since I must simplify my cooking as much as possible due to work and life, I'm going to try to throw everything raw in the casserole dish, poor the sauce over (shimming half of it first into the veggies) and pop it into the over, cooking it a bit longer. I actually prefer crunchy vegetables.

I didn't have most of these veggies - either due to allergies or need to buy more -- but I wanted this casserole, so I made the sauce and chopped potatoes into cubes, added organic sweet corn and greens. Poured the sauce and I am baking it right now! Cannot wait for supper time.
My Mom used to make a HUGE turkey pot pie with the leftovers after Thanksgiving, and this casserole reminds me of it! The only thing different (besides the turkey) is that Mom would put a nice, thick crust made from her buttery biscuit dough on top and bake it until it was a light golden brown. Mmmm! Not the healthiest thing on Earth, but it was delicious. I can't wait to try this one. Thank you so much, Jill! (Although I might use pea protein in place of the soy curls, since we have a family member who is allergic, and add a chopped potato or two.)

Idea. Can you take your lentil flatbread and make pierogi out of it? Cooked cabbage with cooked mushrooms. Then cut holes in flatbread and stuff & fold over & crease to keep together. Hole cut bread to fit filling. Then put in an air fryer. Do you think this would work?

You would need something with some saltiness to replace it.
