Summer time is the perfect season for a cheesy and delicious vegan oil free casserole. This dish is rich and flavorful and can serve a family of four with leftovers to spare for lunch tomorrow. The beans and rice are hearty and satisfying and the vegan cheese sauce makes for the ultimate comfort food. As with all our recipes this dish is refined oil-free, sugar-free, gluten-free, and whole food plant based goodness!

Just made this for the first time tonight, and we really enjoyed it! It makes so much! Now, we'll have tasty leftovers for a few days. My partner garnished it with cilantro and said that kicked it up a notch. Thanks for sharing the recipe!

Jill, I made this (modified for kid friendly). Kids loved it(don’t know if you remember my lil fella Nick) they slept for 12 hours that night!! Nick has a sleep disorder. Gastric issues, but this casserole sat soooo well with him, he had a wonderful healing sleep. Thank you, from the bottom of my heart ☺️

Looks good. It is added to my menu. Although it adds a dish to wash, I find that mixing the contents in a large bowl and then transferring it to the casserole dish makes the mixing easier. Thanks!
Ok. I just made this for my family and cannot believe it but my picky 5 year old who turns her nose to 90% of what I make just ate her whole bowl if this. Thank you! My husband and other kids gave it a thumbs up 👍 and said I should definitely make it again!

Looks so good! I'd try sliced black olives and some frozen corn in it. Then eat it with nacho chips. 😊
I was thinking almost the same thing -- make it a little more Mediterranean with sliced olives and diced capers. Adds a little more umami too.

I made half a recipe (except full amount of salsa) put it all in a crock pot on high for two hours-YUM! 😋

Jill. You have knocked it out of the park with this one! I made this tonight for dinner, and my choosey 11-year-old, whom I can never get to eat anything with peppers and onions, loved this and ate every last bite. He even asked me if I was sure this was good for him, and have me his permission to serve it as much as I wanted. Winner! Just a small note about the printed recipe: the instructions didn't mention where to add the can of green chillies, but I knew to add them with the salsa from watching the video. Thanks again!

Good morning! I saw this video yesterday, It looked so good that I had to try it. It really was delicious! I have to say that your cheese sauce is hands down is the best tasting one I have tried so far. Also I made your Red Lentil Flatbread. It was such a fabulous texture and the taste is hard to describe, But Delicious. I also sliced thin strips and made a pasta. I have learned so much from you Thank you!!
Yes, the cheese sauce recipe sounds really good and similar to the one I make but with soaked cashews for easier blending 🙂 I will definitely have to try this recipe! I also tried the red lentil flatbreads - how did you manage for them not to stick to your pan? I used a non stick pan and no oil, but mine stuck to the pan quite a bit. Perhaps I need a better non stick pan! 🙂

This is a great recipe! I usually make a pepper, mushroom and veggie sauté on Tuesday. There are always leftovers (on purpose, we eat a lot of veggies!)and I could use this recipe on Friday to use up the leftovers😀 You just made my menu planning easier! My kids like casseroles and they’re an easy way to feed a group. Would you consider doing some more casseroles? I love your broccoli rice one and now this one. I ask because most of the casseroles out there are made from not so great ingredients that I don’t want to use. Maybe one with potatoes or sweet potatoes?

Very good! I substituted the cashews for almonds and used lime to garnish it.
I love casseroles so much as usually it's so quick to put together. This one seems to need a bit more hands on time with the frying and parboiling the rice, but I am sure the result is worth the effort 🙂 I might try to tweak the recipe and make it with uncooked rice 😉 My husband would love this as he adores starchy foods! 👍 Thanks Jill! ❤️

Sounds like a very tasty recipe! Cannot wait to try. However, IMHO there is too much cooking -- I'd combine the Cheese Sauce & Rice -- let that soak/cook into the rice, then combine the two and skip the baking step.

One question: I noticed your cheese sauce on the broccoli rice casserole has a bit more nutritional yeast and no Braggs... any particular reason for that change here? Thanks. :o)
I'm glad you are enjoying so many wonderful plant based recipes Cathy! There isn't any reason for the difference in the sauces. You can use them interchangeably =)

This sounds amazing! I have a friend that is so busy with animal rescue, she has no time to herself...she literally forgets to eat or will drink diet soda all day, eat some potato chips and that’s her basic “diet”...can you imagine?? I like to cook large quantities and portion out meals for her so all she has to do is pop some in the microwave and this is a great recipe for that! I walk at least 3 miles every day, run a few times a week and yoga almost every day.
I was very impressed how you mixed that rice in without making a mess lol. It would be all over my counter. I think I have been a little confused as to what Whole Foods is. From my understanding, most foods from a can are not considered Whole Foods. Is there something specific I need to look for if purchasing canned food?
I try to look for BPA free cans and the beans and tomatoes that we buy are salt free.

Looks great! Jill, I can’t eat spinach (I love it, but it doesn’t love me). Do you think either baby kale or maybe romaine lettuce would work too?
Baby kale would be even healthier than the spinach so that would be great 👍
I made it! I used red kale, as that is all I could find. They didn’t have any baby kale. It is fantastic! A definite favorite for us and will be made again and again. Even my SAD husband likes it. I was shocked. He said it tasted better than his chili and that is a high compliment coming from him. Thank you for this great recipe!!

I would think any substitute with a similar texture to the rice should be fine to get a casserole texture.

I think it will work great but I would dry sauté the cauliflower for a bit first to wick out some if the moisture 👍
