Hi Jill, I watched your video this morning and had to give this a try. I just took it out of the oven and I LOVE it! My non-vegan husband likes it too. This is something I would make for non- vegan company too. Next time, I might even try adding some spinach and mushrooms along with the kale. Thank you for sharing this recipe with us, and happy New Year!! 🥰
New follower here! I’ve just made this and really enjoyed it. I replaced the tofu with white beans (400g can / 240g drained weight) and it turned out perfectly. Thanks for the recipe!
I have made this dish at least four times now. Our family love this dish. I want to share with you and your viewers what I do. I use the Trader Joe's 10 oz bag of shredded kale. I shred it further in my food processor. I find this easier to bake and eat. I also add 1 cup of frozen green peas and 1 can of beans, usually white beans. I find this is the perfect amount and does not overflow. We love love this dish. My husband is not vegan and he loves it. Thanks you for this recipe.
Potato and kale are a match made in heaven! We have a traditional dish of these two ingredients in Ireland, called ‘colcannon’, it’s really delicious too. Thank you for this recipe.
Hi Jill, We are seniors, and new to the WFPB lifestyle on the recommendation of our Doctor. I was a pretty good cook pre-WFPB, but have been feeling insecure about cooking under this new lifestyle. I came across your channel, and have found your recipes to be inspirational, so I decided to make your kale/potato bake. I'm so glad I did - it was delicious! I should mention that I seem to be incapable of following a recipe without making changes, so I doubled the garlic, and added chopped red pepper and artichoke quarters, which enhanced the tang of the tofu sauce. My partner has been having a much harder time adapting to WFPB foods, but he loved this! I will be making this many times in the future and will be supporting your channel. Thanks!
Hi Jill, I made this delicious recipe for the second time, and at the last 5 minutes of baking, I sprinkled some nuts and seeds over the top. The result was a fantastic crunch that added to the creamy comforting potato/kale bake. Love your recipes!
This looks so amazing & the whole video is so beautiful,i have everything to make this recipe right now!!! Thank you for sharing & Happy New Year to you dear💙🥬🥔🧄
Late comment, but just recently discovered your channel, and so pleased I did. I am so going to try this recipe. Potato bake is always a great comfort food, but with kale and other healthy ingredients makes this also very healthy. I've been cooking plant base dishes for decades, now I can add this one to my list. Thank you Jill. So inspirational. 🥗👌
We had this for dinner tonight and loved every bite! There is a little bit leftover and I can't wait to have it again tomorrow night! I will be making this recipe again and again!
We freeze a tonne of kale from our garden, so I'm always looking for new ways to use it. I made this the other night, and really liked the flavour of the sauce. There was enough sauce to double the amount of potato. If you slice the potato instead of cubing, it would be similar to gratin potatoes. The only thing is the colour of the casserole the next day is very grey and unappetizing looking. The kale is not bright green anymore. I suggest adding a half a teaspoon of turmeric to the sauce to give it a golden colour.
Happy New Year! I absolutely love your enthusiasm and enjoyment of your first bites! You're such a beautiful woman with a beautiful family. God Bless you all!
Happy new year, Jill! Thank you for sharing your gift of love, health, and happiness through your recipes. Your efforts are truly working towards making the world a better place!
I made this today, but the only tofu I had was from when I made vegan 'feta' cheese left over from a week ago. So i used it instead of plain tofu, and the result,,,,,,,, tastes amazing.
Wow!! This looks delicious. I love the concept of a good casserole! Your clear presentation makes it look so easy I am definitely going to give this a try! I’d like to learn lots of different ways to make casseroles. I also make cooking videos! I love learning new recipes and tips from talented creators like you! I hope we can learn more from each other as we grow.
I’m the beginning of my WFPB journey 5 1/2 years ago I couldn’t stand kale. It tasted bitter and woody. During the last maybe 10 months I’ve started to warm up to it. I’m looking forward to trying this recipe. Although it makes a huge amount and I’m only one person so I’m going to have to cut it in half and then half again lol thanks for sharing
Our tastes change over time as we get used to this new way of eating, it seems. I eat things I would nevertheless have DREAMED of putting in my shopping basket pre-vegan - quinoa and sweet potatoes for example - and very happy to be doing so.
Looks great! I'm going to make it this week! Looks like I've already got all of the ingredients in my fridge, and it sounds like it would make a perfect lunch!
I buy greens because I know I need to eat them, and then most of them go to waste. There is a big bag of kale in my fridge right now just waiting to be used; I just need to get some potatoes. I can't wait to try this recipe, it looks delicious, thanks!
Washed greens can be easily stored in a ziploc bag in the freezer (kale or spinach) and then use them as slowly as you want. Just crush them while still frozen, instead of chopping, and add to soups, or casseroles like this. We freeze a lot of kale from our garden, and then use is all winter this way. It's very convenient, and nothing goes to waste.
Sounds delicious. Did you saute the mushrooms first? I just made her Vegan Mushroom Lasagna. OMG - it was to die for (I increased the veggie broth from 1 cup to 1 1/2 cups.) If you haven't tried it yet - please do. It's definitely going into my rotation. I'm going to try this Kale & Potato Casserole next. Someone suggested sprinkling vegan Parm on top; that sounded like a great idea too.
Yum! You're spot-on with this recipe: I need to get more greens, and, wow! when was the last time I bought kale? Whoops. Today I could make it with some thawed and drained spinach since I'm not going to the store yet. Happy New Year! Thank you for the fun recipe.
I made this today, and it is very scrumptious. However, I would use less broth when steaming the potatoes because it came out a little bit watery in the end. Also I used a 2 quart casserole dish and it barely fit so I think that would help. Either that or I have to use a larger casserole dish because I don’t like cleaning my oven. 😂
Jill, thank you, I made this today and it was very tasty. I added more Kale (about 6 cups) and I baked it in a bit bigger pan so there would be no threat of bubbling over. I also didn't add any additional liquid for the extra 2 cups of kale as there was plenty - and the kale wilts.
I have a LOT of trouble enjoying adult kale, and the kale I had was just too old so made this with frozen broccoli instead. Also was low on tofu (about 1/4 cup at most) so filled the rest of the cup with cooked chickpeas. Looking forward to how this comes out!
Yukon Gold potatoes have less starch than other potatoes so they are always firmer when cooked than other potatoes. For people who need to monitor the sugar/carbs in their diet this is a much better choice than any other potatoes.
I'll be making your meatloaf and this recipe for our Thanksgiving this year (just the two of us) and one of your desert recipes, an apple crisp or Tiramisu!
Oh my goodness!!! That looks really good. What I'm cooking, right now, is green bananas (fig) in my electric/digital pressure cooker, and will be adding Chinese spinach. It is amazing how (certain) green vegetables go so well with fibrous and/or starchy foods like potatoes. Thanks for sharing! 💜💜
Happy New Year Jill and thanks for the recipe. I was looking for a recipe that would make my husband and I like kale. We usually find it is too chewy. The kale tasted very good this way. I did have about 1 cup of sauce left over to use somewhere else. We both felt it needed more seasoning though. I will make this again maybe with carrots next time.
Very yummy will definitely add to the rotation. My kids always they insist they hate tofu and onions and absolutely devoured this . Might sneak in mushrooms next time as another commenter mentioned
I made this tonight and mine may have been a little soupy. If I remember correctly, yours was a little set up kind of like a quiche. Did I do somethig wrong? But it was delicious!
Made this tonight with one change. We didn’t have any tofu so substituted a can of white beans, drained and rinsed, in the sauce. Delicious recipe so will definitely try it with the tofu next. Thanks, Jill!
I love your recipes! They all taste good. Although, you are coming out with a new cookbook, do you have any recipes for fresh cherries? Need helpin where to order your new cookbook.
I have a cherry pie recipe plantbasedcookingshow.com/2018/10/21/gluten-free-vegan-cherry-pie/ And chocolate cherry nice cream plantbasedcookingshow.com/2018/07/02/chocolate-cherry-nicecream/ The cookbook is available for preorder and will ship out by the end of this month plantbasedcookingshow.com/plant-based-cooking-made-easy-volume-2/
I love kale and potatoes 😋 I usually slice my potatoes and set the oven at 450°F I’ll try cubed potatoes next time. I’m glad that you are showing oil less cooking-usually people don’t believe me that’s possible! 👍🏻👍🏻
Happy New Year 🎊 🎊 😂 I love both potatoes and kale also. Is it salted or as needed. I don't even cook with salt but I use braggs amino a little bit or msy add vegan cheese.
I’m a Type-2 diabetic and must seriously limit my potato intake. (The effect they have on my BG is dramatic. 🙁) Would sweet potatoes work in this recipe? I know they go well with Lacinato kale, although I would probably need to change the spices. Just curious.

That is so cool! Helping non-vegans love kale gets bonus points!
New follower here! I’ve just made this and really enjoyed it. I replaced the tofu with white beans (400g can / 240g drained weight) and it turned out perfectly. Thanks for the recipe!
Wow, that is a great idea! Thanks. Tofu doesn't agree with me I found out.
Thank you for the suggestion. I have a family member who can't tolerate soy. Can't wait to try it.
Great idea!
I don't like tofu, so your suggestion is just what I need!
That’s awesome! I kept thinking how can I create these dishes that has tofu!!! My wife doesn’t work well with tofu

Potato and kale are a match made in heaven! We have a traditional dish of these two ingredients in Ireland, called ‘colcannon’, it’s really delicious too. Thank you for this recipe.
Just looked up colcannon, it would be easy to make vegan. Going to try it!
Jill, this Dish looks so delish. Thanks for the recipe. Greetings from Uruguay 🇺🇾
This would be good with broccoli and cauliflower too, it looks delicious

This is a good one for making kale tasty! Let us know how it turns out.

You will love your greenhouse. We have two small ones I fill with flowers every winter. I’d like to have another to grow fresh greens!

I think I'll try it with spinach instead of the kale......
I'm well used to the kale/potatoe combination but will look forward to trying this twist on the dish this evening. Thank you and best wishes for 2022.

I will make this again
maybe with carrots next time.
If you freeze kale leaves, then crush them while frozen, they crumble into very tiny pieces easily, and are not chewy when added to recipes like this.
Looks delicious!! Thank you!! Happy New Year!
Very yummy will definitely add to the rotation. My kids always they insist they hate tofu and onions and absolutely devoured this . Might sneak in mushrooms next time as another commenter mentioned
👏👏👏👏❤️YES
This was super delicious.
Yum! Going to try soon!
EXACTLY what I need to use up and meal prep for the work week - How'd you know that ? ;-)
Please turn the pan handle inward...safety first and it is a good habit ... this recipe is fabulous! Thank you.

Looks amazing. Can’t wait to make this. Thanks.
I made this tonight and mine may have been a little soupy. If I remember correctly, yours was a little set up kind of like a quiche. Did I do somethig wrong? But it was delicious!
Could you swap sweet potatoes for the white potatoes? this is also great
I haven’t tried it but I think it would work
Made this tonight with one change. We didn’t have any tofu so substituted a can of white beans, drained and rinsed, in the sauce. Delicious recipe so will definitely try it with the tofu next. Thanks, Jill!

You can 👍I would just make sure it will be chopped small
I love kale and potatoes 😋 I usually slice my potatoes and set the oven at 450°F
I’ll try cubed potatoes next time.
I used 2 tsp of Braggs liquid aminos 👍
Happy New Year Jill! Your apple pie has been a, have to keep made, in our house.
Where might one find her recipe for apple pie?
I’m a Type-2 diabetic and must seriously limit my potato intake. (The effect they have on my BG is dramatic. 🙁) Would sweet potatoes work in this recipe? I know they go well with Lacinato kale, although I would probably need to change the spices. Just curious.
Yes 👍
I can't wait to make this 👍
