Fantastic recipe....but beware folks, J.O. makes MASSIVE amounts. Half these ingredients would suffice for 4 people or 2 very hungry ones !

AKWAYS use dry chickpeas if you aren’t in a rush. 100 times cheaper and delicious
What is not mentioned is that the oven is set for convection. Which is a big difference from over under.
Interesting but not exactly veggie. Tapenade is made with anchovies.

Another brilliant pricipal recipe that like Jmaie says you take all over the world from Mexico to Thailand and the veggies are literally interchangeable...don't have a Butternut squash it's fine just use carrots,they're beuatiful and sweet when roasted

I made this for my love not too long ago. She doesn't like mushrooms, olives and chickpeas, and was therefore very skeptical. We had a backup-meal ready to cook quickly just in case. She loved it. She literally said "What? Chickpeas? Mushrooms? I can't believe I'm saying this - but this might be my favorite dinner!"
