Pho : Beef noodle Soup. Kuy Teav Sach Kho

  • Pho . Delicious Vietnamese style beef noodle soup
    INGREDIENTS:
    6 to 8 pounds of bone soup (bone marrow cut in about 1.5 inches. by butcher
    4 pounds ribs
    3 pounds tendon
    3 pounds chunk roast
    3 bone marrow with meat attach to it
    1 and 1/2 roasted onion
    4 slice roasted ginger
    7 small star anise
    1 table cloves
    1 tablespoon coriander seed( sometimes I use cardamon seed instead, or omit completely if not available
    2 pieces 2 and 1/2 inches cinnamon stick
    1/4 cup fish sauce
    1 and 1/2 table salt to start with and more for the taste
    3 chunk rock sugar or granulated sugar
    7 to 8 quart of water
    The secret in making soup broth is have water level 1 inch above the meat level. Don't add too much water to make make up for what it is lost during the simmering process. Adding too much water will dilute the broth.
    READY FOR THE BOWL
    fresh rice stick noodle
    cooked meat ball
    thinly slice beef
    cooked tendon
    cook meat from the soup pot
    For garnish or other topping:
    bean sprouts,scallion , culantro leaves, Thai basil, jalapeno
    lime wedge ,hot chili sauce,fish sauce or sugar to taste.

    Could you please type the ingredient because the background music is so loud can't hear you. I like to know what are the meat you are using? i assume it's all beef? btw, i love your cooking show. I'm trying on your recipe now...

    Yes background music is TOO loud. But food looks good.

    I cooked the tendon with the same pot and my broth is white and not clear. Why is that????

      Sorry for late reply. Low simmering will help making the soup more clear. I simmer the tendon in pressure cooker with an onion to kind of make a little bit more clear . I use some of the broth to add to the main soup pot.
