  • In the video I said 4 to 5 oz of rock sugar that is too much i did not check my note :) use 3 oz of rock sugar that is sweet enough. And I add 2 more cups of water all together is 24 cups of water for the broth. and add 1/2 cup more of fish sauce.
    Boil enough water to cover 4lbs of pork bone for 10 minutes then drain the water wash the bone clean the pot. Put 24 cup of water back in to the soup pot and turn the heat to high until boiling then add the bone boil on high for 20 minutes to seal the bone. Reduce the heat to medium and add all the ingredients listed for the soup.then continue to cook for 40 minutes more. Reduce heat to low simmer for 2 hours more. Taste and adjust the flavor of the soup.
    Soup ingredients
    24 cups of water
    4 lbs of pork bone
    1 white onion cut in half and grill
    1 small white daikon cut to round shape bite size
    3 small dried squids soak wash cut in half
    2 preserved daikon radish cut in half. (chi Pev)
    1/3 cup dried shrimp soak wash (hi Be)
    1/2 cup fish sauce+1/3 cup in the video
    4 Garlic cloves smash.
    Cook according to my video direction
    For meat
    cook pork loin thinly sliced
    cook pork liver thinly sliced
    cook shrimps
    cook ground pork
    cook pork meat ball cut in half
    quail eggs ( I don't have in the video)
    Set aside until ready to serve
    For the bowl
    Rice noodle (Fresh Phnom Penh noodle)
    boil water and cook according to my video.(not very long just a minute or so in boiling water
    Fried shallots garlic (don't forget this it make the taste very different all you have to do chop up 1 cup shallots and garlic and fry with 1/3 cup of oil until golden turn the heat off and set aside
    Garnish with
    cilantro
    Saw tooth coriander (Jee Bunlar)
    Romaine lettuce ( I don't have in the video
    bean sprouts
    lime juice
    sriracha Chili sauce
    and sugar if needed

    Look absolutely delicious...Thank you for sharing your recipe...I like your donut cooking too and please upload more asian dessert dish with coconut sauce like tri color dessert and some cambodian dish that frequently uses in your country..Thank you for sharing and i love this dish alot.. Vietnamese people eat it and imitate from the next door neighbor recipe.. good work..MrsThuypham

    Why pork bones?

      Pork bone has different flavor from beef bone and most of Khmer noodle make from Pork bone. You can use beef bone but it has no fat for the flavor. The Vietnamese Pho use beef bone and spices but the Cambodian noodle use pork bone and dried seafood so it is a complete different flavor.

      Phnom Penh noodle soup is anything about pork unlike Vietnamese Pho. It is the same as Hu tieu nam vang ( Phnom Penh noodle) in Vietnamese. Very popular in Saigon.
