Kreung- lemongrass paste

- 2 stalks of lemongrass
10-15 small to medium sized kafir lime leave
2 two inch turmeric pieces
1/4 root of galangal (small piece 1-2 inches)
10 garlic cloves
2 teaspoon of salt
Directions:
In a mortar and pestle add in the finely chopped lemongrass, kafir lime leaves, turmeric and galangal; pound the ingredients for 5-10 minutes then add in the 10 gloves of garlic, then proceed to add the 2 tsp of salt; pound for another 5-10 minutes and you are done
You can individually pack the paste in small single-use bags
Keep in mind that you can use a food processor for this recipe but a mortar and pestle brings out the best of the individual ingredients.

I have trouble cutting lemongrass in thin slices which is why I never make kreung but I've bought the frozen pre cut and pre chopped ones. I was wondering if you knew how many tbls/cups etc. I should use to get the same amount required for your kreung recipe. Thanks in advance for your input! :)

I am growing lemongrass and I want to use it to make your kreung. I bought lemongrass last year and soaked until roots emerged and then plant in a big pot and kept inside all winter and trimmed and used lemongrass and now it is outside again.

Cooking With Momma Heng Montreal is not a whole lot better haha. It is definitively not like cutting fresh lemongrass in the Cambodian countryside. I also have two large Kaffir lime plants that I planted from seeds many years ago and my Khmer friends in the USA also have one.
