Caramelized Pork Recipe : Khor Sach Chrouk

  • Ingredients
    3 pounds pork belly
    1 cup brown sugar ( palm sugar or granulated sugar okay)
    2 tablespoons oil for frying garlic and pork
    1/4 teaspoon salt( marinate pork)
    3 cups water
    2 tablespoons minced garlic
    6 thin slices ginger ( or your choice of spice: star anise or cinnamon depending on your taste bud )
    1 tablespoon dark sweet sauce
    3 tablespoons thin soy sauce
    1/4 teaspoon black or white peppercorns
    boil eggs( peel)
    Some soy sauce,fish sauce or salt to taste
    -A few drop of annatto oil to enhance the color of the pork quickly
    or you can use a lot of dark sweet . Annatto oil is optional. ( Its commonly used in Spanish cooking to give foods a bright, orange-red color)
    --some soy sauce, fish sauce or salt to taste
    -serve on the side with shredded sour green mango or pickled mustard greens to balance out the sweet & salty taste of the caramelized pork

    What was the purpose of marinating it outside and then cooking it inside. I marinate my meat inside then cook it outside so my house won't smell lol

      You're right. I marinated outside because sunlight looked nice when filming the video, but I got lazy and moved inside for convenience.
