This is my husband's favorite dish too! Cambodians like to add bamboo in it but I've also ordered it at a Vietnamese deli before and it had bamboo in it too! Try it sometime, you might like it! :)
Thats the great and bad thing about Cambodian cooking (well most Asian cuisine)--we dont really measure anything when we cook you just adjust to your tastes. The bad thing about it is that when you try to recreate your family recipes it never tastes the same. If you're like me and never had the chance to learn your parents recipes and you go to RUclips to learn how to make things, you just have to adjust to how youre used to eating it.

I buy my bamboo shoots canned. Look for the bamboo with tips only because they are larger and you can cut them into whatever size you want. I don't have a particular brand that I buy. Usually, whatever's on sale.

Hi, Thank you for showing me how easy to make this dish!!! I added fish sauce with soy sauce and date sauce. I put star anise and cinnamon stick. 1 can of coconut drink plus the coconut fresh also I add 1 carrot and fresh mushroom on the first day and 1 more carrot and 1 potatoes today. Yummy! Finished within 2 days aka 3 meals!
Yes, add more fresh coconut or water. And just taste check and add more sugar and fish sauce as needed.

I had a dish by this name at a great Cambodian restaurant in my town. I fell in love, and want to make it at home. I could swear hers tasted a bit like Chinese 5 spice, is that something some people do with this dish?
Yes, some families, like mine, add star anise or even five spice powder when caramelizing the sugar, it's a matter of preference.

Thank you! And like I said in the video...my father in law taught me that the eggs should be brown. Haha. So that's just how I've always done it! But yes, you can add them in last if you don't want your eggs browned.

Please don't use coconut juice as a substitute. You can use canned coconut juice or even coconut water. They sell coconut water at most grocery store chains if you can't find the Asian kind. :)
I have never eaten this with coconut juice. I have tried many different variations but I would say my mother and her friend are the best. They always used tamarind juice.
if you wanna keep the cutting board from slipping just grab a wet paper towel and place it underneath the board, and BOOM! no more slip :)

Sorry to hear that. Not sure how your eggs disappeared though. When I tend to overcook the eggs, the eggs do the opposite and instead of getting soft, they become rock hard and are very much noticeable. Lol. Like I said in the video, you may put the eggs in later if you wish.

One of my favorite dishes, but there are many variations. I cook fresh garlic with the caramel, I use soy sauce instead of fish sauce, and I add black pepper.
Chicken feet is public enemy number one to me! HAHA. I will eat dirty socks before I eat dangly, chicken feet! Funny, cause I love to gnaw on pigs feet! LOL!

No, I don't. I was taught how to make this by my Vietnamese father-in-law and he made it this way. It tastes better, in my opinion, but you can add more water if you'd like. Just adjust the seasoning.

i like coconut soda. the one in the green can. i don't put as much sugar because the soda has sugar in it. i never tried it with tamarind juice too! but i bet the sour taste is great!

Everyone has their own technique and ingredients. We also use bamboo shoots and eggs. The scallion and coconut juice is different. Im not too sure about the pickled mustard green. That's a weird combination. But again, we all eat different things depending on where we grew up and what our family eats.

There is a similar recipe (Thai/Chinese?). Not sure but it's made buy marinating the meat with sweet dark soy sauce, thus eliminating the use of the caramelize sugar to give the dark color broth, which also consist of star anise, galanga, ginger, cinnamon stick and hard boil eggs. I highly recommend this one, you should try it sometimes and see what you think?

do you or anyone else know the origins of this dish? I'm Teochew Chinese and always thought it was a Teochew dish growing up but found that it's common among people all around SE Asian including Vietnamese, Cambodians, Laotians, etc. too.
openmindedproduction this is a Chinese dish and I think the Chiu Chows teochew People brought it into Vietnam and Cambodia. Yes you’re right!
