How to make Prahok Kop recipe -- Style # 2

  • Here's another style of Prahok Kop. It is a Cambodian vegetable dip make up of fish paste, Kroeung, mushrooms, ground pork and other seasoning. This style is very fast and easy if Kroeung is already prepared in advance. This delicious,creamy taste dish is commonly prepared to bring to the temple, large group or family gathering.
    INGREDIENTS:
    1 and 1/2 pound ground pork
    5 tablespoons fish paste
    1/2 cup Kroeung ( Cambodian Lemongrass Paste)
    1/4 teaspoon turmeric powder for extra golden color and flavor.
    pinches of paprika powder for color
    18 ounces mushrooms
    3 tablespoons sugar
    6 red peppers( more or less)
    10 pieces garlic
    3 ounces Holy Basil Leaves (Khmer M'reas Preus)
    1/2 teaspoons m.s g.(optional)
    1/2 teaspoon tamarind powder
    3 tablespoon tamarind juice( to balance flavor but don't make it too sour). Lime wedges usually serve on the side.
    2 and 1/4 cups water( the amount of water may vary depending on what kind of mushroom I am using. Some mushroom may absorb more water than others)
    When making Prohok Kop, because Prahok is salty already I usually don''t start off adding salt or fish sauce until I taste it at the end and adjust accordingly

    I love your food presentation. Fresh vegi dips with Krama (scarf) are so nostalgic of Cambodia. Thank you for sharing this mouth watering recipe.

      +kvanluvly You are welcome, thank you ! Trei kop-Prahok kop uses similar ingredients as this one but tiny fish is used as well and sometimes young tamarind leaves, Krasang pulp( sour fruit in Cambodia) are added on. Kop all ingredients together ,wrap in banana leaves or aluminum foil and kop it (bury it ) in charcoal or grill it

    Love your videos! Can I request the recipe called nghom sdao? Hard to eat when I was younger but wanting it now, especially knowing it's healthy for you. :)

      +Monica Kong Sure Monica when I am able to get some from Cambodian market. I never like Sdao either when I was young. But once Mom use it often in salad dish and grill fish with tamarind sauce dip, its become an acquired taste. Sdao I heard its especially good in preventing and cure cold and flu . I guess that's why it taste similar to cold medicine.
