Khmer Beef skewers

- Ingredients:
2 Kilograms Pot Roast Boneless Beef
1 cup Lemongrass paste (Kreung)
2 tbsp Chicken Stock Mix
1/2 cup corn oil (any type is okay)
10 tbsp sugar
1 pkg of satay seasoning (they are labeled A and B, ONLY use B)
1 pkg of Roast Red Pork Seasoning (in the package there are 2 sachets use 1 1/2)
Pickled Papaya:
• Pickled Papaya Salad
Chilli Paste:
• Pickled Chilli Paste
Kreung or Lemongrass paste:
• Kreung- lemongrass paste

It seems like she used only one small packages of the red roast pork spice and one B satay package and the other one look like she used A package as well. I didn't see she used 1.5 package of the roast red spice. Please advise?

Any explanation how to do this from scratch vs. using the premixed packets? I don't trust what they put in them.
