Love her cooking. What she’s saying is after it’s placed in the jar, leave it out for 24hrs so the sourness and flavor can penetrate. Then you can eat it. After that you can stick it in the fridge. I’m sure all food can go bad, but this dish here can be kept and eaten for quite a long time.
