  • This Chamorro recipe for Guam food pickled papaya is easy. Hard, green papayas are best for pickling, and can be found if not in your back yard, then at an Asian store. Sometimes your local grocer carries green papayas as well. Green pickled papaya recipe, Guam style, keeps very well in the fridge for several months. In fact, this Guamanian pickled papaya recipe gets better as the days go by.

    INGREDIENTS FOR PICKLED PAPAYA
    Set 1
    2 medium, green, unripe papaya (weighs 3 pounds for both)
    ¼ cup or 72 grams salt
    Set 2
    2 cups or 474 milliliters of white distilled vinegar
    4 cups or 948 milliliters of cold drinking water
    ¼ cup or 50 grams granulated sugar
    1 ½ teaspoons or 9 grams salt
    Hot pepper
    Tools: large glass bowl, cutting board, knife, plastic wrap, colander, four 1-quart mason jars

      In cultural studies class, we always made this candy with coconut and sugar. I can't find a recipe for it anymore. 😫 do you know it?

    Thanks...I'll definitely be using this recipe once I can get a hold of some green papaya. The ones we have here are always overripe for pickling :(

    I saw some that were purple? I remember eating them in Tinian when I was in primary school, my fingers got so purple, my eyes were water, and mouth on fire..so spicy so gooood. I'll definitely try this recipe.

      They might have used a flavored powder to make it purple.

    Pickled papaya was my favorite thing to eat while living on Guam. Gof mannge (sp?) Can’t wait to make this so I can relive my childhood.

    What kind of hot peppers are you using?

      It’s a pepper paste. I also use Thai hot peppers.

    Would this recipe work with green mangoes??

      Yes, it does, but you don't have to soak the mangoes in salted water. Skin mangoes if you want (I do for stateside mangoes) then cut and use the picking recipe.
