The pickled shrimp and zucchini weren’t familiar to me though…I’ll have to try them! I just bought red onions at the store to pickle those to keep in the fridge. So glad you included them! My husband recently had some GI issues and his doctor advised kombucha, pickled veg and sauerkraut. Can’t wait to get my pickles on this summer! Thanks!

Please follow her instructions about when to keep in the refrigerator. Don't put your hands inside the jar ever, use clean, dry, spoon/fork to remove the pickle. I sometimes remove small quantities into another jar and use that instead of taking the big jar out every day. If you follow all this the pickles should last a good 3 -4 months
@@akankshapatwari4167 what are you talking about? 3-4 months? I don't know the time frame. These are not properly canned/vacuum packed. The vinegar and lemon helps extend the shelf life. Most refrigerator pickles without vinegar state 1-2 weeks. Many counties in Indiana and Ohio have a county extension office that will occasionally have pickling classes. They don't talk about refrigerator pickling as they are not very time reliable. There is a reason that she doesn't mention a storage life for these. I plan on making some of these. I only plan on keeping them for a couple weeks. Anything longer than that I will use an actual canning recipe.

I thought for sure you were going to infuse vodka for your bloody Mary's. I take a large mason jar and add sliced "serrano chili's, garlic, onions, and bell peppers, peppercorns". And then pour in the vodka. That makes the most flavorful vodka for Bloody Mary's.
According to my grandma last as long as you want them the last in the fridge but if you open them one day and they smell funny or growing strange stuff, throw them out.

Sticking a hot jar of pickling liquid in your fridge straight away will heat up your fridge which might result in other stuff spoiling. It's safer to let it cool down first.
Loved all the recipes. One question. Did you follow the zucchini recipe as listed in the more section - canning them or make them as refrigerator zucchini? How long in the frig before eating?
And last but not least if your refrigerator just went out along with your AC is there any way to pickle this stuff and not have to keep it in the refrigerator before you open the jars up and how long can it last for

I did then as refrigerator zucchini. Overnight and you’re good to go!
