Koussa bi Tahini / Baked Courgettes in Tahini Sauce - easy vegan/ plant-based recipe

    Serves 4
    This dish is Mummy Najat’s signature dish. Whenever our late father had an abundance of home grown Lebanese white courgettes, Mummy Najat would have to come up with new ways on how to cook them & she couldn’t do stuffed veggies with meat & rice all the time! So she come up with this vegan oven baked courgette in tahini sauce.
    The courgettes can be airfried & you could use other similar vegetables. We love serving this alongside Kafta lamb burgers & boiled new potatoes on a summer’s day. Hope you like it too!
    You Need:
    6 small pieces of white/ green courgettes (approx 500g), washed
    4 garlic cloves, sliced
    1 tsp “K𝕠𝕦𝕤𝕤𝕒 𝕓𝕚 𝕋𝕒𝕙𝕚𝕟𝕚“ - 𝕓𝕒𝕜𝕖𝕕 “K𝕠𝕦𝕤𝕤𝕒 𝕓𝕚 𝕋𝕒𝕙𝕚𝕟𝕚“ - 𝕓𝕒𝕜𝕖𝕕 𝕔𝕠𝕦𝕣𝕘𝕖𝕥𝕥𝕖𝕤 𝕨𝕚𝕥𝕙 𝕥𝕒𝕙𝕚𝕟𝕚 𝕤𝕒𝕦𝕔𝕖

    You Need:
    6 small pieces of white/ green courgettes (approx 500g), washed
    4 garlic cloves, sliced
    1 tsp seasalt
    1 cup or 250g tahini paste
    50-100 ml water
    Juice of 2 fat lemons (optional to zest)
    30g or small bunch flat leaf parsley, finely chopped
    50g pine nuts
    🔥Pre-heat oven at gas 9/230C or the highest setting
    🥒 Courgettes need to be sliced lengthways in half or if large, in thick round circles. They need to be of similar size to cook evenly. Place on baking tray with greaseproof paper & bake in oven for 20-30 mins on top shelf. They need to be cooked through & just browned to liking.
    🥣 Meanwhile, in a bowl add garlic slices with salt & using a pestle or end of rolling pin, smash garlic with salt until it is a paste (or use pestle & mortar & transfer to bowl).
    🍘 Next add tahini & mix using spoon with garlic paste. Then add 50ml water & mix again with spoon.
    🍋 Add lemon juice & mix again, it will turn into a thick white paste or light beige. Add enough water to reduce the thickness of tahini sauce, it should resemble a thick gravy or double cream consistency. Next add chopped parsley & mix well - set aside.
    🥘 in heatproof dish, layer the baked courgettes on top of eachother in base of oven dish. Next pour over tahini sauce ensuring all courgettes are covered. Decorate with pine nuts scattered all over.
    🔥lower heat in oven to gas 6/200C & place dish in oven, top shelf for 20-30 mins until it’s browned to your liking. Once baked, carefully take out as tahini sauce is very hot. Allow to cool for 10 mins & serve with salad sides.
