    TAHINI
    Ingredients:
    150 gr (5,3 oz, 1 cup) raw sesame seeds
    3 tablespoons hazelnut oil
    Directions:
    • Warm 150 gr raw sesame seeds in a large steel pan. Just warming every sesame seed will be enough for making tahini. Don’t roast them until all of it turns to brown. Using a steel pan is important as it has no coating, not releasing harmful gases at high temperatures. You can use a cast iron pan as well for browning.
    • Add the sesame seeds in food processor while they are still hot.
    • Pulse for about a minute and add 3 tablespoons of hazelnut oil. You can use grape seed oil or sunflower oil as well but prefer a seed oil then olive oil for this recipe.
    • After working food processor for another 3 minutes your tahini will be ready to enjoy. First the texture is going to be sand-like. Don’t give up on that stage and continue. After enough patience your tahini is going to be creamy and dreamy.
    TAHINI & MOLASSES
    Ingredients:
    1 tablespoon tahini
    1 tablespoon molasses
    Directions:
    • Mix 1 tablespoon of tahini and grape molasses in a bowl.
    TAHINI & COCOA SPREAD
    Ingredients:
    1 tablespoon tahini
    2 tablespoons honey
    1 heaping teaspoon cacao
    Directions:
    • Mix 1 tablespoon tahini, 2 tablespoons honey and 1 heaping teaspoon cacao. Your healthy cacao is ready. You can adjust the amounts to your taste.
    HİBEŞ
    Ingredients:
    1 cup of tahini
    2 lemons’ juice
    ½ cup of water
    2 cloves of garlic
    1 teaspoon ground cumin
    1 teaspoon paprika
    Directions:
    • Squeeze 2 lemons and mix it with 1 cup of tahini. Add 1 teaspoon cumin and 1 teaspoon paprika.
    • Puree 2 cloves of garlic and add to mixture. Hibeş is a great sauce for kebap or you can eat as a dip or mezze.
    • For toppins you can sprinkle some paprika, cumin and fresh parsley leaves.
    TAHINI SALAD DRESSING
    Ingredients:
    2 tablespoons tahini
    1 lemon juice
    5 tablespoons olive oil
    2 tablespoons yogurt
    Salt
    Pepper
    Directions:
    • Mix 2 tablespoons tahini, 1 lemon juice, 5 tablespoons olive oil, 2 tablespoons yogurt in a jar or glass.
    • Add salt and pepper to your taste, your tahini dressing is ready to enjoy.
    GREEN TAHINI
    Ingredients:
    1 batch of coriander
    100 ml water( 3,4 fl oz, 2/5 cup)
    2 cloves of garlic
    70 gr tahini (4-5 tablespoons)
    ½- 1 teaspoon salt
    ½ lemon juice
    Directions:
    • Add 1 batch of coriander, 100 ml of water and 2 cloves of garlic into food processor.
    • Pulse until it becomes a puree, add 70 gr tahini, add salt to your taste and squeeze half lemon juice.
    • Pulse again until mixture is blended well. Your green tahini will be great with köfte, or as a dip for chips. The other upside of this recipe is tahini is a great substitute for cheese if you are not eating diary or if you are a vegan.

      @@tobleroneyumm actually çip köfte is with meat in original but if u don't add meat it's totally vegan too 🙂 if u r Vegan u have too watch Refika's Turkish channel too, there r many many "Zeytinyağlı" food recipes (olived Oil Food) it's really hard to tell the difference but if u watch refika u will understand ☺️ food cook with olive oil r never have meet inside

    Love from India Refika. In southern India, roasted sesame seed powder ( same taste profile as tahini) is used widely in dips or what we call chutneys. For example raw mango(naturally tart), sesame seed powder, green chillies ground and tempered with mustard curry leaves. Replace raw mango with any sauteed vegetable and add lemon or tamarind for tartness. We use this as a rice accompaniment

    I'm a South African living in Cape Town, my grandparents came here as immigrants from Lebanon 🇱🇧 in the 1920's. We still cook a lot of dishes that my grandmother brought over when she came to this country & it's been passed down to us. So many of the dishes u have shown on your channel is so similar if not the same. It seem we share very similar cooking styles & ingredients it all has the Mediterranean & Middle-Eastern influences.
    I'm now learning much more from your fun and easy to follow recipes, thanks so much. 🙏

      Niki, I have the same experience. My grandparents were Sephardic Jews living in Turkey. When they moved to NY in 1012, they brought with them a cuisine that was partly Jewish and partly Turkish. I bet you and I make similar dishes!

    For those making and tasting tahini for the first time. I Just made mine following this recipe yesterday. I thought i did something wrong when the tahini remained a bit bitter even when it’s cooled. Turns out it is normal. The store bought version tasted similar. So believe in yourself and the recipe. You’re doing fine.

      Tahini isn’t available in any of the grocery stores near me, i would have to go to the grocery stores in malls to get it. I was lazy and odered it online but when i tasted a bit of it, I didn’t like it at all, it has a wierd bitterness, i didnt know how it suppose to taste like and the taste took me by surprise.i was rEaLlY cOnfUsEd.. seeing ur comment helped thank u 😊

      @@ayeshamariyam6568 when you toast the seeds too much and the tahini is a darker brown it will be very bitter. You will notice this even by just tasting half a teaspoon of the toasted seeds. You need to only very very lightly toast them - in fact to me it seems Refika here went too far, at least for my taste - the colour difference with the white untoasted seeds has to be very slight.

    I have been intrigued by Turkey for some time. I have a friend whom I met when I was in my 20s who is Turkish, and she introduced me to homemade Turkish food which my husband and I both love. Also, a few years ago we spent 5 days in Turkey on a layover flight (Istanbul and Cappadocia). I am so thankful to have you in my life.     TAHINI - EXCELLENT SOURCE OF THE CALCIUM.
    IT SHOULD BE USED WITH THE LEMON, or any kind of the VITAMIN"C" - FOR THE FULL CALCIUM ABSORBENCY.
    (Osteoporosis doesn't have a chance with the TAHINI consumption!)

      The first time I watched this was 2 weeks ago. I have already used up 2kg of sesame seeds. I have just been to the store for another 2kgs. Your tahini is being shared by my family by the jar-full. I am using it to make a lot of your hummus too, as well as in falafel (I use Kenji Lopez's recipe). I am trying to follow a more plant-based diet and your channel has taught me so much about your really awesome cuisine. Along with the sesame seeds, I have bought 1kg of hazel nuts and a jar of molasses. My kitchen is going to delightfully sticky in a couple of hours time!

After spending over two years hooked on Turkish dizis I have tried making simits, kunefe, baklava and many more. My only wish now is to explore Turkey especially Istanbul , Cappadocia, Antalya and try the amazing kahvalti .Teşekkür ederim.

    We use unroasted sesame oil for cooking in some parts of India for our everyday cooking, so I tried tahini with it. It intensifies the taste of the sesame seed in the tahini. Just loved it. Also love your channel. You come across as a woman in love with food (like me!) and you communicate that with so much understanding and respect for your cuisine. Enjoy that.

    I'm from Macedonia and our grandma's always use tahini for millions of things.
    We always have one jar with tahini+honey mixture in our kitchen.
    When I make hummus if I don't have tahini I put 150 gr of sesame seeds (2 to 3 minutes on the stove) and than directly in the blender! Just mix it like that. The taste is the same and even you've got little bit less of that tahini bitter aftertaste.
    Just a suggestion!

    A lot of valuable information here. I love making my own tahini because I can customize it to my taste. It is also fresher and less expensive than the commercial which is not even popular where I live. The degree of roasting, the amount of salt (not mentioned in this video), and so forth. I have learned to use sesame oil as the oil component when making it. I have both toasted and untoasted sesame oil and prefer using the toasted variety as I love the pronounced sesame flavor. The best things about making your own - anything - is that you can make it exactly to your taste and nutritional requirements. After making the tahini, my food processer is pretty messy and it's hard to get the last bits out. What I like to do then is add some (cut up) dried fruit and give it a spin. It cleans up the processer to some degree and the result is a delightful simple candy (in my opinion).

    00:21 I was married to an Israeli and as such I needed to make hummus. I asked the help in Safeway (a major grocery store chain in the U.S.A.) in northern Colorado, U.S.A., for tahini. I was told - I have no idea what that even is - of course, they sold tahini and I found it near other nut kinds of butter.

      The way I do it is not to roast sesame seeds as heat oxidise oil.I do not use any seeds oils as they are all toxic processed empty calories without nutrients.YOu can process ,stop ,move the crushed seeds try again and again until sesame seeds oil is made or add organic cold pressed olive oil.All seeds oil toxic because they contain Linoleinic acid (Omega 6).It is well done in Labanon Syria and Iraq.

    We make tahini and molasses to our kids, telling them its chocolate and meanwhile works great.

    Loooving it!!:) Working on a good LowCarb Cookie Recipe, lately.. and it involves Tahini!! 3 tbsp Keto Steviol sugar, 1.5 tbsp Cocoa pwd, 1\2 tbsp Coconut flakes, 2 tbsp Cocoa nibs, Tbsp Poppyseed, dashes of salt & bk powder, [I admit I threw in a tbsp of bitter Chocolate chips, teehee], 2\3 c Almond flour ; mix the dry, then add 1 egg yolk, 3 level or 2 heaping tbsp TAHiNi, tbsp of water so it mixes nicely .. these turned out to be my nicest cookies so far [tho needed Cinnamon imo]. Baked 19 min at 150 Celsius.

    As a vegetarian who is on the way of being a vegan, tahini saves my life. I love it with falafel , and I love halva with tahini so much

    That green tahini looks delicious. There is a Indian chutney I made on a regular basis now, a bunch cilantro/coriander, garlic (4 cloves), 1-2 Serrano chili's or Japaleno depending on your taste or mood, a nub of grated ginger, pinch of salt, juice of lime and puree it. Often I end up with left over and just end freezing it till the next meal calls for it. I think now I am going to adding some tahini to and turn it into a salad dress or mix it in plain rice ooooh so many meal ideas. BTW I made your Pide recipe and my husband loves it! The bread came out absolutely delicious. I plan on making it again later this week.

    can you make a video on how to make molasses or pekmez ... I tried it ones at a Turkish restaurant as part of Turkish breakfast .and I've been looking for it everywhere since but can't find it.

      FYI homemade pekmez is highly cancerous when compared to market bought due to the long cooking time over a fire producing cancerous tar from the sugar inside the pekmez. store bought ones are factory made with no risk of cancerous material. pekmez is one of those rare foods that is healthier when store bought.

      I feel the same way. How could these celebrities chefs cook on Teflon? Well, many of them sell their own line of pots and pans which are all made of Teflon which truly show what they care about. The Teflon company polluted all the waters on our planet. I myself during the covid shutdown found out about the dangers of Teflon by watching the Documentary "The Devil We Know" and the movie "Dark Waters", both on Netflix. All these years that they were being sued they were still selling their products all over the world. I now use cast iron and stainless steel and glass. I prefer cast iron because it is non-toxic and after you learn how to use it you will love it.

    amazing video, thank you ! In Iran we eat Tahini with Grapes Syrup instead of Molasses. My mom is originally from a small City there called Mahallat and i remember some streets were smelling like tahini all the way because of small shops which used to make it themselves, love this point about food that makes people come closer and see their similarities instead of differences.
