  • Mediterranean Chickpea Salad is light and refreshing and uses a quick vinegar dressing. Whip this up in under 15 minutes and enjoy this healthy lunch or side all week long!

    ✅Ingredients
    Salad:
    • 30 ounces canned chickpeas, drained and rinsed
    • 1 pint red grape or cherry tomatoes, halved or quartered
    • 1 English cucumber, diced
    • 1 green bell pepper, diced
    • 1 small red onion, thinly sliced
    • ½ cup sliced kalamata olives
    • ½ cup crumbled feta cheese
    • 2 tablespoons freshly chopped basil
    • 2 tablespoons freshly chopped mint
    Dressing:
    • 2 tablespoons honey
    • 3 tablespoons extra virgin olive oil
    • 2 tablespoons lemon juice
    • 2 tablespoons white wine vinegar
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
    ✅Instructions
    1️⃣ In a large mixing bowl, toss together chickpeas, tomato, cucumber, bell pepper, red onion, olives, feta, basil, and mint.
    2️⃣ For the dressing, pour honey into a microwave-safe mixing bowl. Microwave 10-15 seconds to liquify honey. Whisk in olive oil, lemon juice, vinegar, salt, and pepper.
    3️⃣ Pour dressing over chickpea salad. Toss to combine. Refrigerate until ready to serve.

    This is soooooooooooooo good! I even used this as a wrap filling along with some hummus as a topping, some red pepper flakes, and total deliciousness!

    I always make this when I'm cooking for a party. One tip: instead of honey I add whatever seasonal fruit is available, as the veggies sweat, the juice from the fruit usually add the sweet element to balance out the flavors. I never understood the concept of fruit in a salad until I tasted it myself. The sweetness of the fruit just adds more flavor and crunch. So pears, watermelon, apples, go great with these salads.

      Oh! A few years ago, I actually discovered the 'secret ingredient' in delicious dressing is fruit! Chopped grapes, pineapple, raspberries and blueberries give really great flavour. Every time I made my fruit dressing, people commented on it and was asked what made the dressing taste so good. Add the crushed fruit to dressing, let it sit for a couple of hours to infuse the flavour and then pour it over the salad.

      I also added fruit Pam thank you👍🏻.. and to make it as a just one dish for dinner .. added cashews nuts , artichoke heart jar, and On the side… cottage cheese!..I used also balsamic vinagre .. it was a good salad!.. thanks again Pamela😊👏🏻🌸🙏🏻

      @@adrianharris9654 Definitely try pineapple! :) But if possible, use fresh pineapple and not pineapple juice because it really makes a difference. I've tried both and the freshly crushed pineapple tasted so much better than canned or juice.

    Saw this a couple of days ago and got all the ingredients! My daughter made this today, we thought it was wonderful and so fresh! Our dog went nuts trying to get to the bowl, she thought it was for her (she's a good girl and eats her veggies, though not the tomato or onions). What a flavor party for the nose, taste buds and mouth!!! WOW!!

    Thanks, I am adding this to my next week's menu. I have everything except for the fresh herbs, so I will use dried (won't be as good, but it will work). I will enjoy this recipe because I like everything in this salad, and it is quick and easy! 🤗

    I make a similar recipe and swap chick peas for a can of cannelini beans, omit the fresh herbs. For the dressing I add minced garlic using a Microplane and the garlic makes the dressing delicious! 🥗

    I’m indian we use alot of spice to dress like more pepper chat masala, but i hated it that way it almost gives spice up taste to the salad and today i tried this for the first time .. trust me i fell in love with this recipe and the taste it brings is sooo yummmm 🤤 i’m definitely gonna try out more from your channel.     I'm on the second day straight of eating this salad. I'll probably eat it tomorrow as well. It's simple, inexpensive and nutritious. The vinagrette is GOD LIKE. I hate cucumbers, but they fit so well with everything else. Congratuations. Subscribed.

    This was an amazing salad! I was missing the herbs but included avocado and used malt vinegar instead and I couldn't stop eating it! What's more my wife and daughter loved it and I thought I made enough to last a second side or main salad but how wrong I was! Win definitely be making this again in a few days!!

    Great salad! I use orzo pasta instead of chickpeas, and I add celery chopped very fine instead of green peppers. I plan to make it once a week this summer. You can swap around with your herbs as well. I wonder how it would be with dill.

    I've made the Goya Mediterranean Salad for years. Basically the same, with a few variations. I've never put honey in the
    dressing. That sounds good.

    I made this tonight and it was delish! I ran out of bleu cheese but it was still good! The mint and parsley 🌿 combo added a nice flavour! Next time I will definitely get some bleu cheese.

    I'm making a variation of this for a neighborhood pot luck tonight. I have fresh dill and parsley on hand, a stalk or two of celery I need to use up, so will add that- with the leaves minced. I would add the feta just before serving if there will be leftovers. I believe the feta would "melt" into the dressing and lose its crumbly texture.

    I have been making this at least once a week. I use vegan feta by Follow Your Heart and omit red onions and bell pepper. I add one or two more T. of honey. Delicious!

      I believe it’s an Oxo lemon squeezer. I saw it on Amazon.

    You're lucky in the US. In Greece you can't find canned chick peas. They come loose in bags and you cook from scratch.

      They probably get cooked better made at home. Often canned chickpeas are undercooked, not tender.

      I prefer to cook from scratch ... it's healthier ... I jes cooked some n divided them into containers for freezing

    This is the best. I add avocado, some cilantro and I started using apple cider vinegar for an extra probiotic boost and omg. Amazing. And so healthy! I also sauté my tomatoes and chickpeas :)
