  • LEARN HOW TO MAKE A QUICK SUMMER FRESH ROLLS RECIPE TODAY!
    LAY HO MA! Ever want to take your salads with you on the go without the need of a fork? Well join me in this episode and learn how to make an easy and quick fresh salad fresh roll recipe today! Let's begin
    SALAD INGREDIENTS:
    90g watercress
    25g basil
    25g mint
    1/4 cucumber
    1/2 carrot
    1/2 red bell pepper
    1/2 red onion
    30g purple cabbage
    1 long green chili pepper
    200g cherry tomatoes
    1/2 cup canned chickpeas
    25g alfalfa sprouts
    1/4 cup hemp hearts
    1 avocado
    6-8 rice paper sheets
    DIPPING SAUCE INGREDIENTS:
    1/2 cup tahini
    1 tbsp dijon mustard
    1/4 cup lemon juice
    1 1/2 tbsp soy sauce
    1 tbsp maple syrup
    1 tbsp gochujang ( • Gochujang Vegan Ramen ... )
    Directions:
    1. Roughly chop the watercress and place in a large mixing bowl along with the basil and mint
    2. Slice the cucumber and carrot into thin matchsticks. Thinly slice the red bell pepper, red onion, and purple cabbage. Add the veggies to the mixing bowl
    3. Remove the seeds from the long green chili pepper and thinly slice. Then, slice in half the cherry tomatoes. Add these to the mixing bowl
    4. Add the canned chickpeas, alfalfa sprouts and hemp hearts to the mixing bowl. Cube the avocado and add to the mixing bowl
    5. Whisk together the dipping sauce ingredients
    6. Pour some water onto a plate and soak a rice paper for about 10 seconds
    7. To assemble the roll, place the wet rice paper onto a slightly wet cutting board. Then, place a small handful of salad onto the middle of the wrap. Fold over one side of the rice paper tucking the salad in, then fold in the sides and finish the roll
    8. Set the finished rolls aside separate from one another. Serve along with some dipping sauce

    Well like all your recipes that I’ve seen so far these look delicious, I think I would like my mint and basil sliced smaller more in line with the other vegetables but that’s a personal preference as is the fact that no chilies get anywhere near my food. I haven’t figured out what hemp hearts are yet but they sound tasty, I also bit the bullet and bought the Cooking with Confidence cookbook 🥰 Geez the exchange rate is a killer I’ve never paid $70 for a book in my life I’m hoping that a signed copy great recipes and some stunning food photography makes it all worth while.

    As soon as I saw this, I had to make some! I had everything except water cress and sprouts. You were right about the basil and mint! Tahini doesn’t agree with me, so I followed your recipe using peanut butter. It’s a surprise explosion in your mouth because each time you take a bite, a different ingredient comes through before the rest, like the spicy pepper in my first bite! So delicious! Thank you!

    I’m wondering what brand of rice wraps you buy here in Canada. I’ve tried a couple of brands but they aren’t a satisfactory thickness (one too thick & the other too thin). Also do you use rice wraps for other recipes? It seems a possible choice for vegan, gluten free cooking….

    I like to use the giant sized rice wrappers, and I stuff my entire salad into them. Easiest way to take salad on the go!

      @@higgertor192 I can’t remember what he did in the video, but I worked in a vegan café and dipping it in cold water is sufficient. It will soften as you fill it, and it will be easier to wrap because this rice will stick to itself.

    Summer is a great time to not cook. Fresh rolls are my “go to” meal quite often when we get the hot and humid days. I have made a variety of different dipping sauces and will often present 2-3 different ones if serving others. An awesome WFPB Meal and I love your twist on the sauce, plus the amazing load of veggies, grains and aromatics in the salad portion. Thanks for sharing and once again, your recipe is on point and does not disappoint.

    I would said soaked the rice paper for about 3 seconds in warm water to avoid sogginess. I’ll make it today ; Looks so delicious. Thank you ❤️😊

      Yup. I agree. I dip it in fully take out and it’s ready to wrap by the time it’s stuffed. I watch them make it restaurants and there’s no “soaking” time

    Loved it. Explosion of taste in your mouth.
    I am from Kolkata, India. We get a variety of rolls here. The skin is a flaky paratha (a kind of Indian flat bread). The filling can vary from vegetables, cottage cheese, mushroom, egg, chicken, mutton and fish, with slivers of cucumber, onion, carrot, capsicum, green chillies, with a generous amount of lime juice and a dash of chaat masala (a spice mix) . Each one with a distinct taste and flavour of its own. Addictively yummy.

    I made these yesterday and they were fantastic! I did use shredded green papaya instead of watercress and I did not have hemp hearts so I omitted and added a few more veggies. Served with your fantastic sauce and made a additional peanut sauce so people had two choices. Mahalo for your fantastic recipes. Sharon

    I just made this dish, it was beyond amazing with hugh huge flavor in the Spring rolls and the tahini sauce had flavors I wasn't even ready for and how they all all blended together was magnificent!

    While we all admire your impeccable knife skills, not all of us possess them, or such a professional knife. Using the large holes of a box grater, or mandolin, for things like carrots, cabbage, and if it sharp enough, bell peppers speeds up the process. If implement isn't sharp, it will end in tears and a pile of watery mush. Of course same goes for shredder on food processor. I have degenerative arthritic tendinitis in hands and wrists, so having a few tools which reduce my cutting is a must. Also, for ordinary folks, the investment in a mandolin and good box grater is far less expensive than any above average knife. Also, the tender stems of those herbs can go in the blender with a dash of mild vinegar for another delicious sauce.

    As always looks stellar, and the sauce especially! I have found a method for moistening rice paper that works great or me: I moisten a clean kitchen towel very well. Then place one rice paper on one side and fold the other end over. Pat slightly for several seconds until the rice paper is nicely softened. Fold back the top towel end off and add the fillings and roll while still on the towel. Move to a plate and repeat, occasionally dampening the towel a bit as needed. This prevents me from ripping the wet wrappers, which is my ongoing problem.

    Heads up, if you don't have a proper plate for soaking the rice sheet you can easily just wipe it with a moist paper towel on both sides or hold it under the running tap before adding the fillings 👍

    I really enjoy your channel and recipes! I have noticed the change to a music background. This makes it hard to hear your wonderful instructions and tips!
    I find the soft music very distracting. I have to go back several times to try to make out your voice instructions when the music is playing along with your voice. I found the old videos with just voice instructions very meditative and it was so clear what was happening.
    Please consider omitting the music in the places where you are explaining or talking us through the recipe. It makes it hard to even hear "medium heat" and other basic tips. Maybe just use the music when you are not talking?

      Rice wrappers get tougher when stored in the fridge. I do this quite often: Make several for a meal and make up another set for lunch the next day. The important thing is to wrap them separately so the rice wrappers do not stick together. I use parchment squares in a covered dish and this works fine without using plastic wrap

    Anyone know a good alternative to water cress? We never see it in the stores here, and it won't grow in gardens in this zone. I have everything else in the recipe growing in my garden, which will make this not only a super tasting salad, but also an inexpensive one too! Seriously, there's nothing like veggies that came in from the garden just 5 minutes before. My chickpeas are not in yet, and won't be until late September, but I still have some from last year, so really everything will be from my garden except whatever I sub for water cress. I know what lunch today is going to be!!!

      I’ve grown watercress in pots indoors. Maybe that could work for you

      I would just use fresh spinach, they're more easy to get and really nutritious as well.

      @@adinaderoy-stouffer5724 Wow! Great idea! I grow a lot of herbs in hanging baskets in my house and they make the house not only prettier, but also fresher smelling. Do you grow from seed, or if you are buying started plants, where do you get them from?

      @@Chompchompyerded I pick up those potted herbs from the grocery section ( leggy and forced) plant them in containers or baskets cut them down a bit fir immediate use and off they go with sunlight and occasional watering. Mine have been growing strong three years almost x

    I was just thinking of making the Whole Foods version of this which I've been making for 25 years or so. Their sauce calls for chunky peanut butter instead of tahini and in addition to the other sauce ingredients, similar to what you used, it has fresh ginger, toasted sesame oil and spicy mustard instead of Dijon; dried chili flakes instead of chili oil,rice vinegar instead of lemon juice. I usually make it with almond butter.
    I've found just submerging the rice paper once and immediately taking it out of the water, laying it on a plate gives the rice paper time to take in the water so you can easily work with it and begin adding the filling and rolling it. It doesn't need to be as wet as your demonstration shows.
    Also for even more flavor, besides the mint and the basil, adding cilantro is an excellent addition and it tastes great with fresh green onions.

    Question & Comment: Thank you for this beautiful recipe! I can’t wait to try it. How far in advance can these rolls and sauce be made before eating? (How long can they be stored?). I’m curious if these would be good to meal prep healthy snacks/sides for the week.

      You should eat them immediately since the rice paper will dry out and get chewy. If you can't eat it immediately, then wrap them individually in cling wrap to keep the moisture in...this might allow you to eat it the next day or so.
