Yes, I believe almost three ladies rice paper is fine for crispy spring rolls. My tip is after folding, you can freeze the rolls for 15-30 mins to make it firmer before frying. When frying, don’t touch it until it’s ready, and leave room between rolls for easier flip :) good luck!!!

@Monkeybar54621: 4-5 minutes i 300˚F oil is PLENTY of time and heat to cook raw pork and beef in this recipe. Otherwise you will over-cook it by pre-cooking.
@@violetviolet888 Ground pork should be cooked 8 to 10 minutes on its own, but if it is buried with other stuff, 5 minutes will not kill the bacteria. Others eat raw beef, my BFF feeds her dog raw beef.

The determining factor of safety is temperature and time together which is why you can cook something low and slow at a lower temperature for a long period of time and it's till safe. For best texture, it's to account for for carry over cooking which means pulling meat from the heat *before* it reaches target temp. Ground pork requires 160˚F. I'd pull it off at 155˚F because the temp will continue to rise. This can easily be achieved in 6 minutes for me.
I know it can be tricky to find the right rice paper! If you’re having trouble, look for "pastry wrapper", usually found in frozen section of Asian grocery stores. Regular spring roll rice paper can be a bit delicate for deep frying, so I totally get your frustration. Just keep in mind to seal it carefully, and the frying heat is not too high.

It does actually; depending on the amount of the filling. Or, if making thick ones, you can precook the filling a bit, and then roll them for frying, or air fry. I do this sometimes if I want fat eggrolls. The person double fried- this is sufficient with the amount rolled.

After freezing, don’t thaw it. Whenever you need, deep fry, air fry or bake in oven for about 5-6 mins at 400F or until you see it’s crispy again :)

You can find these anywhere at an Asian Grocery Store it's called " Rice Paper"
Also try to keep the filling moist but not wet. As water get to the oil can create lot of small explosive and take longer time to cook.
