    Today, I will be sharing how to make special rice bread.
    Many people asked for recipes using rice flour.
    So after several attempts, I made today's rice bread.
    Bread with rice flour can have a unique texture and flavor.
    You can feel the chewy texture different from the flour recipe.
    However, there are many people who find it difficult to find the right dough consistency.
    Today's recipe significantly reduces the probability of failure, and you can make rice bread full of flavor and texture.

    Rice bread
    Pan 22x10x height 9.5 (cm)
    Poolish
    Rice flour for bread 100g
    Water 100ml (lukewarm)
    Instant dry yeast 1/4 tsp (1.25g)
    Main dough
    Rice flour for bread 270g
    Salt 3g
    Honey 10g (1 tbsp)
    Water 140ml (10-20ml for extra)
    Poolish whole
    Black sesame seeds 2 Tbsp (fried and lightly ground)
    1. First, prepare the poolish. Mix all the poolish ingredients well, cover the top and leave for about 2 hours at room temperature. (Until the volume doubles / Time may vary depending on the temperature of the working environment)
    2. Prepare the main dough. Put all ingredients except black sesame in a large bowl. (*Adjust the consistency of the dough by extra water) When the dough is lumped together, move it to the workbench and start kneading. Add black sesame seeds in the middle of the kneading process and knead it evenly. (Hand kneading time about for 10-12 minutes)
    3. Cover the top and let it rest at room temperature for 30 minutes.
    4. Divide the dough into 2 pieces. Cover the top and let it rest for 10 minutes.
    5. After 10 minutes, shape the dough to fit the bread pan.
    6. Let it rise until the dough rises to about 1,5-2 times in a warm place. (about 1 hour)
    7. Bake in an oven preheated to 170℃ (338℉) for 20-25 minutes.
    8. Allow it to cool completely before cut it.

    이 레시피 진짜 강추합니다👍👍👍👍 베이커리에서 실제로 파는 쌀빵맛나요 처음에는 발효시간 오버해서 그런지 쿰쿰했는데 두번째시도에 성공했어요 발효시간 꼭 지키셔야 맛있어요 저는 취향때문에 물엿을 좀더 넣었어요

      Sorry, I'm a little confused, the recipe for the main dough weighs 270g, but in the video text it's 100g, which is actually the right size, I really need this recipe, because I have hyperthyroidism, I can't eat anything that contains gluten.

      I made this recipe today but my dough is not elastic like yours. It is rather pasty and not easy to roll. I used brown rice flour. What should I do please?

      The main flour is 270 g. Watch d video repeatedly. You'll understand.

      In the poolish she put dry yeast with only rice flour. Not even psyllium. If you watched the video, you'd've seen it.

      @@isolamar This youtuber's reply to another commenter: *"Hello there! You need to use rice flour for bread that contains gluten. But not a glutinous rice flour for rice cake (aka. mochi)"*. You can look for it yourself.
      I did watch the video too. It's the rice flour mix itself that contains gluten, it has nothing to do with the poolish.

      @@isolamar I did watch it. However, the rice flour she used is called "rice flour for bread", a product I could find no information about on the internet. The dough behaves unlike one made with normal rice flour. Working it looks exactly like working bread flour (high gluten wheat flour). The results also look like a product made with wheat flour. My guess is this flour is a Korean product that is unavailable in the US.

    아토피랑 여러 음식 알러지 때문에 특히 식빵은 포기한지 오래에요. 유제품 + 견과류, 오트밀 알러지가 있어 비건빵도 먹을 수 있는게 드문데

      아토피랑 알러지 있으시면 강력쌀가루 안 드시는 게 좋아요. 밀가루가 안 좋다고 하는 게 글루텐이라는 성분 때문인데 사람들이 쌀가루로 만들었다고 하면 무조건 좋은 줄 알고😢 오히려 강력 쌀가루가 인공(화학)글루텐이 더 들어 있어요... 차라리 밀가루 드시는 게 낫습니다.

    I am a little confused, on video says in both cases for Poolish & Main dough 100 g of flour, but your recipe says the Main dough 270 g of Rice Flour. So what are the proper measurements?

    Nice recipe, i really need this. However, for the main dough, you put 100g or 270g rice flour ? Because you say on the video 100g rice flour while in the description you say 270g. Which one is correct, thank you in advance

      Make sure you're aware that they used a rice flour mix that contains gluten.

      This is not gluten free. It's a rice flour where gluten is added, notice that the dough is kneaded because it's activating the gluten.

      @@milkcow1010 Yes, regular rice flour is gluten free. But the rice flour in this vid is not gluten-free. Gluten is purposely added to the rice flour blend, which is called "rice flour for bread" in countries like Japan and Korea.
      If you want a gluten-free rice bread recipe, look up Chef Jorge's Blender Rice Bread recipe on youtube.
      You should not need to knead a gluten-free bread, because there's no gluten to activate. So you just mix and the batters tend to be wetter unless you use psyllium husk.

      ​@milkcow1010 this youtuber is being very deceitful and tricking with the name without being entirely incorrect. I am making mine now with just regular gluten free rice flour and a few minor adjustments. I will let you know how it turns out.

      Mas certifique-se de usar farinha de arroz para pão (muito importante. É diferente da farinha de arroz normal.) A farinha de arroz para pão contém mais proteínas que tornam o pão super macio e fofo. Qualquer dúvida, fique à vontade para falar. Tenha um bom dia. bjs 😘

      I think no. Glutinous rice flour has completely different cooking properties than regular rice flour. I'm not sure what sort of rice flour can be used for this, since "rice flour for bread" doesn't seem to be available in the US.

    Why does your flour seem to contain gluten as it stretches when you knead or roll it? In the absence of gluten, the dough will not stretch at all.

      Because it contains gluten. They used a mixed rice flour product

    When I see the thumbnailed of this video, I just think wow, maybe this is the good non-gluten bread ingredients. But I'm wrong. The "rice flour" you using isn't actually rice flour. The color of flour is not the color of flour which made from rice. The texture of the dough also shows it isn't made from rice flour. Moreover a dough made from rice flour cannot do a window test, because gluten doesn't exist in it. Rice flour which is using in this video is the mixture of high percentage of flour and a small content of rice flour. The rice flour content in the mixture is in order to create the chewing texture for the bread.

      Hi there! Rice flour that I am using for this recipe doesn't content any other flour which as wheat flour. This rice flour is made specially for making bread. This rice flour itself contains gluten to create the soft texture of bread.

    첨으로 기구들을 장만하고 그대로 따라했는데..
    폴리쉬에서 실패했어요..
    아예 안부풀었어요..
    1/4 작은티스푼이 얼마큼인지..
    그래서 실패했나요?? 원인을 모르겠어요.
