Homemade Phyllo / Yufka Dough From Scratch & Easiest Method To Cook On Stovetop

- Learn how to make phyllo dough / Yufka we call in Turkish from scratch! You can use these sheets in many recipes from Turkish cuisine like borek or use as a wrap, or tortilla.
Ingredients For Homemade Phyllo Yufka Sheets:
👉🏻1 cup lukewarm water (or use 1/3 cup milk + 2/3 cup water) I used cheese water in order to not waste. It is totally optional. I am experimenting to make cheese 😍
👉🏻1 tsp dry yeast (optional) - to make it softer
👉🏻1 tsp vegetable oil (so it is more flexy)
👉🏻1 tsp salt
👉🏻about 3 cups all-purpose flour

There was a filling I learnt from a Turkish recipe site YEARS ago which was prawns, red pepper paste, carrot, green pepper and kashar. This would be perfect for those karidesli dürüm!

Merhaba. Great dish!! Turkish cuisine is the best. I have traveled all over the world and eaten hundreds of different dishes, but Turkey is always on my mind. Growing up, my best friends were Turkish and their mother really liked me. She treated me like a son and always kept my belly full with Turkish food. Best time of my life!!!! I miss my Turkish "Ane" very much.

We were young boys growing up in Germany together. My best friends (Sinan and Saban), stayed in Germany but are from Izmir (the Father) and Adana (the Mother) and I went with them to Turkey during the summer school break to visit their families. Best time of my life. I loved Turkey so much, I converted to Islam at age 13. Once I became a man I moved to the USA because of better job opportunities. We always keep in touch and I visit them in Germany. I am now 50 years old and unfortunately my Turkish "Anne" passed away 9 years ago, I was very sad and went to Izmir for the funeral. Please keep making your wonderful videos, they always keep my childhood memories alive. Mashallah

Loved ur yufka btw, can b used as tortillas, filled with omelette n cheese . Or with caramelized onions n suate mashroom... Or simple salad wrap.
If we cut yufka into quarters n Deep fry till golden brown ,they can b used as Plain Nachos!!

Great recipe, great procedure. I open phyllo quite often, but I have never precooked them because I have electric stove and they burn. I don't know if I could use the oven to precook them. Greetings from Greece.

Wonderful Yufka. I would use a mixture of Onions, Egg Plant cubed, Green Peppers, cooked in a skillet w Olive Oil for a wonderful vegetarian filling for you delicious Yufkas. Also could add some sort of melting cheese (Mozzerlla etc.) or Feta cheese for those who eat cheeses. THANK YOU!

You can roll them after cooked and stuck to the bag. Or just fold and losely ad couple of them together. I don't think they would stick

Again a nice basic recipe. Again a nice basic recipe. Will I try it out, but rather in summer. So far I have used finished yufka dough and frozen. But I wasn't happy with it, because the dough sheets break apart quite a bit after thawing. Is there any trick to make sure that doesn't happen?
Hi yes, it can happen if it dries out especially. It is mostly because of the yufka type. If you don't handle much while frozen it might break less. Or u can still use it that way just use big parts for the bottom and top
