How to Make Baklava From Scratch! Easy Turkish Walnut Baklava With Secrets You Can't Find!

    How To Make Star Baklava Shape • How To Make Star Bakla...
    Ingredients For "Cevizli Ev Baklavası" Homestyle walnut baklava:
    1 egg
    1/2 cup vegetable oil
    1/2 cup water
    1/2 cup milk
    1 tsp baking powder
    about 3 +1/2 cups flour
    pinch of salt
    (I used 1 tbsp vinegar for extra crunchiness but it was better without it, the type of vinegar can differ. I would suggest try without vinegar then if you like ones more with and see the difference)
    250gr. butter (we will melt and take out the foamy part after it)
    To roll out the phyllo sheets: 200gr. or more wheat starch (if you can't find use corn starch)
    about 300 to 400 gr. coarsely chopped walnuts
    For the sherbet (syrup)
    5 cups sugar
    3+1/2 cups water
    1 small lemon wedge
    1 tsp lemon juice
    (You can use less syrup first and add more after tasting if needed. The recipe amount is a bit more than enough)
    TIPS FOR THE PERFECT BAKLAVA
    Tip #1: For baklava, the flour type with a protein content of at least 13% is preferred.
    Tip #2: Use only good quality wheat starch (or corn if you can’t find it)
    between the layers
    Tip #3: Separating the layers will create air between the layers to
    make it more crunchy.
    Tip #4: Gently wrinkling the dough batch helps to separate the layers
    Tip #5: Sprinkling very less amount of vegetable oil or butter
    between the layers will increase the rise of the layers
    Tip #6: To prevent the phyllo layers from drying out, don’t work in the air circulated kitchen. Keep the windows closed, don’t use a fan, etc.
    Tip #7: Collect the white foams from the melted butter and don’t use,
    they burn in the oven and create brown spots (or use unsalted “ghee”)
    Tip #8: Use a sharp knife and cut it with one move if possible so the
    layers won’t stick to each other.
    Tip #9: Pour hot butter over the baklava to help open
    the layers.
    Tip #10: Pouring the butter before cutting the second part helps
    to cut easily without disturbing the phyllo sheets
    Tip #11: Boil the sherbet for about 10-15 minutes until it thickens.
    Check the last drops; they should be heavy, oozing.
    Tip #12: Lower the temperature from 170C to 160C after 30 minutes. Continue to cook about 1 hour to 1 hour 20 minutes until golden color on top and bottom

    I've made this at least three times following your recipe, and each time it is just fabulously delicious 😍😍😍 - and so much fun to make! - I however end up looking like a ⛄️ after rolling out the dough and sprinkling all that starch 😋 - I was biting my nails watching you fearlessly do that in your beautiful black dress! 😅👍

    I love baklava. I am pretty experienced with opening my own home made fyllo for Greek pies (spinach/feta pie, cheese pie , leak/feta pie, etc), but never tried to open one as thin as the one needed for baklava. I will give it a shot during the festive Christmas and new years period. Cannot think of something sweeter and more welcome than a warm house filled with Turkish baklava and Greek melomakarona!

    I didn’t know that pouring hot syrup over hot baklava keeps baklava crispy longer. That’s probably the secret of bakery stores.

    I am making this again and have probably watched your video 100 times by now😂.
    If you are in the UK buy ‘Corn Flour’ from the usual supermarkets.
    Also baking powder I have noticed is much stronger here than in many other countries so beware of that, I learnt the hard way.

    As a beginning baker, the idea of working with so much pastry in such thin sheets is super intimidating to me, but I really appreciate the tricks you demonstrated working with it. I'm still intimidated about working with pastry, but you make it look a lot less scary.

    I made this recipe for my friend from Turkey. We live in upstate ny. Where we live the baklava isn’t very good or from different cultures so it doesn’t taste like what he’s used to.     I love Baklava. On a cruise to Istanbul in the 80s I bought a whole tray of it to bring back to Canada. You guys use real butter. So delicious. Now can’t have any grains or sugar laden foods. Insulin resistance has set in.

    I have tried this recipe of yours yesterday. I had a problem with the flattened sheets, they were tearing apart, after stacking them over each other even after putting cornflour between them. So I had to make a dough ball again. And then again when I rolled out the sheets. I put vegetable oil and cornflour in between them. That's how I got the thin sheets and I was able to separate it. I used finely chopped pistachios instead of walnuts. Luckily your baking time worked great for me. It took me the same 1 hour and 20 minutes to cook the Baklavas in the oven. Other recipes on RUclips use to say only 40 minutes baking time. The taste of these Baklavas were okay. Not like the ones I use to get in Saudi Arabia. The ones you get in Saudi Arabia are delicious. Those are the best ones.

    Hello! I made the recipe today and I loved it, just perfect! The dough is wonderful (I didn't add the vinegar, as you said) and it was very easy to roll it out thinly without breaking ❤ The only thing that didn't work out very well was my oven, because the bottom part was at a good point but the top was very clear and a little crunchy. I think I might put the oven rack higher next time. I'm going to make it several times, I'm Brazilian and I love this dessert, but it's hard to find it here. Thanks for sharing, great recipe ❤

    Wow you are so patient and proficient, making the Phyllo dough from scratch. I am a good cook and love to do things from scratch, but I do not have your patience nor the energy to be so good as you ! AS we now get ready made Phyllo dough , I am going to use it but one thing is for sure- If ever I need to use this dough I am going to come back to your way of doing it.THANKS SO much for showing us all your method.
