I made it last night. Really tasty! Two things surprised me: 1) That miso cooked with rice is an amazing combination. I only used miso in soups, although I knew I eventually needed to branch out and try it in other things. And 2) the difference in texture and intensity when chickpeas (and the mushrooms!) are roasted before added to a dish. I didn’t have smoked tofu, but I happened to have smoked tempeh in my fridge, so it all turned out great. Thank you for sharing your wonderful ideas!
Finally a plant based recipe with enough protein, that's tastes delicious too. I am revamping my diet, this feels like a winner. Can't wait to try it out...

This looks SO good and perfect for lunchboxes and batch cooking - definitely adding it to my lunchbox recipes. I've been trying to reduce / eliminate the amount of plant-based "meats" I eat as a vegan because of how prcocessed they are, so I worry I'm not getting enough protein, but this recipe is packed with it! Thank you for this recipe! It was super delicious. I made it even healthier by making it with whole grain purple barley which takes a long time to cook. I didn't want to kill the miso so I just started in after it was cooked. Otherwise I followed the recipe as is. Super delicious!.
I made this last night and it was delicious. For some reason, king oyster mushrooms are hard to find where I live, so I used a mixture of oyster and meaty fresh shiitakes. Not exactly the same texture, but it tasted great regardless. I’m a huge fan of chickpeas along with carbs of almost any kind, so this was a simple win for me. Thanks again Wil for yet another delicious and easy plant-based recipe.
This is my second dish after I made the delicious ramen. Holy cow, this one is another top tier dish. The umami is so incredibly great and the king oyster mush, chickpeas and tofu have a very nice crispiness to it. Thank you!! What a channel!

You can make your own "smoked tofu" by adding liquid smoke flavoring to tofu.
