Why you include the shot where they make a dish with an egg shell fragment in it! Looks good but that kinda ruined it for me. The guy cracking the eggs didn't seem like he really had the technique down. Guess even the best restaurants make mistakes...
I don't even complain at the price of ramen knowing how labor intensive the preparation is. That broth looks insane and noodle-making machine is mesmerizing.
A proper tonktotsu broth alone takes 12 hours of cooking. Its a type of food that is categorically impossible without labor intensiveness. But few ramen shops put the same level of care and passion into all their ingredients. You can tell the chefs personality from their bowl of ramen, if they are lazy, the ramen will be too
Imagine being a pig that got slaughter at night, so other can cook and eat your flesh in the morning. I saw a video where someone created a 5 minutes delicious Pho by using beef broth, noodle and a few other ingredients. 😅
@@crazyspace6792 i think it is because of the sheer quantity of bowls they sell. They batch it out so large that the long cook time isn't just for a few portions but can feed the whole village 😂 so the labor intensiveness doesn't detract from the profits.

I could dive face first into a bowl of Tonkotsu and slurp to my heart's content. It looks so good, every part. The broth looks righteous! I sure wish I could cook eggs just like that. Your restaurant kitchen is Top Notch. It's well organized & clean. Everyone is focused and executes well. The guy cooking the noodles, wow. If I ever can get to Korea, I will come to your place.

Went to Japan a few years ago...planned on seeing all the sights...spent the first day in the Ginza in Tokyo, never left. Two weeks of the most incredible food I have ever eaten, either from street vendors or tiny restaurants. Planning a return trip next Spring.

I was surprised at the simplicity of the donkotsu ramen compared to the complexity of the mazesoba. I like that the chef took his knowledge of Japanese ramen and made changes to appeal to the Korean palate and still presented superb and authentic Japanese style ramen dishes to his customers.
Also used French cooking. The way they cooked the pork (char siu), is called sous vide. Basically boiling it in its own juices, inside a plastic bag. I bet it melts in your mouth when you take a bite, but it would be missing that smokey charred flavor you get from normal char siu.

Whilst I do enjoy a good - real - ramen, and that does look insanely delicious, I prefer Chinese hand pulled noodles. Had some for lunch yesterday. Watching the noodle master make them on the spot is like magic. He grabs a lump of dough and a minute later he has all these noodles. I have to learn how to do that.

Яйца выкладывают на горячее они завариваются, если бы были не только желтки, но и белок, он бы свернулся. Что касается куриных лапок, их никто есть и не собирается, как и остальные кости их долго вываривают для получения очень насыщенного бульона.
@@egor12344 куриные лапы с точки зрения азиатов лучшая часть курицы и самая дорогая, т.к. в них коллаген в самой легкоусваемоей форме. Для суставов и кожи полезнее любой пилюли. Про остальное сказали.

In Japan, ramen shops and ramen making are considered a culinary art and Japanese people line up for hours to try a bowl made by a master ramen chef. Some ramen restaurants are so popular, there are line-ups hours before the shop is even open
LOL Are you serious? You don't know much about ramen and you romanticise it. Long before it became a food trend in the west, ramen shops were usually small, cramped and even dirty (by Japanese standards). Salarymen and single men usually went there for a *cheap*, fast meal. Also people heading home after drinking and clubbing. So it's like pizza, kabobs, hamburgers, etc. in the west. In fact, women didn't like to go there as it was considered cheap, oily fast food. Patrons at ramen restaurants ate quickly and then walked out the door. They didn't linger over the ramen bowls pondering the quality of ingredients, taking photos, etc. Yes, there were also some restaurants that made particularly good ramen by local standards and attracted long queues of people but they were often small, cramped, plain one-man operations. This shows the extremely high food standards in Japan- even cheap , humble fast food requires insane amounts of preparation and attention to detail. But now thanks to social media everyone is a "foodie" and they spend too much time in ramen restaurants ooh-ing and aah-ing and posting to their Insta, disrespecting the locals who wait patiently outside, taking up space with their entire families... How do I know? Because I used to live there. But I'm happy that a Korean place won this award! :))

This is amazing! These guys put in such effort to not only make the food look and taste good, but that NOTHING goes to waste! Practically every bit of the animals are used for broth, meat and even presentation! That's high class work! ^^
I worked in many kitchens under many talented Chefs as a young man. I developed a life long passion for food and my experiences, created me. Insane appreciation for the bounty of our beautiful planet and the incredible souls who inhabit it. This, was just incredible. The team, the insane amount of work, love for the art, amazing intricate inventive recipes. Just absolutely floored. In awe and humbled. Thank you, so very very much.
What a insane level of service! Dedicated staff and working gracefully and perfectly! Best part is cleaning the bowl after mixing noodles with syrup and ingredients! Imagine how much people visiting their store as they are popular with their food & still they are taking full time for preparation and doing perfectly well without rush! They are definitely believing in quality time with customers instead of quantity time with money!
Now you have made me hungry, lol. I miss quality ramen such as this, sadly there are no such places that create dishes as fine as this in Newfoundland where we retired too.

it's not a tonkotsu ramen, it's a iekei ramen 家系ラーメン, the speciality from Yokohama, and this one looks really amazing (we also call it shouyu tonkotsu sometime)

I was born & raised in NY but my heritage is half-Japanese & half-English. My Japanese mother had a lot of Japanese food influences in our home & given that NY is a melting pot, I got a lot of exposure to different cuisines fortunately. Now I love the cross cultural influences among the Asian countries like Japan, Korea & China. There is uniqueness to each cuisine but there is a lot of cross pollination too, if you will. This is a prime example too. This ramen looks amazing. Authentic ramen with fresh noodles, tasty broth & fresh meats & veggies is total comfort food & hearty. If you’ve only had the cheap dorm food type of ramen you’re missing out. This is the real deal with obviously an embarrassment of care that went into the ingredients, preparation & cooking. You can see how passionate they are & that is amazing. I recently ate breakfast but my mouth is watering after watching this. I could pound down at least 3 bowls of that ramen right now. Authentic Ramen is just one of those amazing dishes that is satisfying & makes you happy. Well done.🙂👍
Now this is really incredible food. What artistry! Color, taste, texture, healthy food, artistically composed and served. Every one of those plates was manually created by the chef. This handmade value in cooking is what we are missing in America. I was enchanted by the process, the care, and the visual production too of camera work. So grateful there was NO MUSIC in this video, thank god! It was a joy to watch, every minute of it. Truly good food and very good camera/ sound work. I am so hungry now! I could eat every one of those ramen noodle bowls!
The only thing I don't agree with you, is that you called it healthy food, those bowls, to me, look like bowls made of cancer and stroke, it looks delicous, but now that I know how they are made, I will naver eat them.

LOL Are you serious? You don't know much about ramen and you romanticise it. Long before it became a food trend in the west, ramen shops were usually small, cramped and even dirty (by Japanese standards). Salarymen and single men usually went there for a *cheap*, fast meal. Also people heading home after drinking and clubbing. So it's like pizza, kabobs, hamburgers, etc. in the west. In fact, women didn't like to go there as it was considered cheap, oily fast food. Patrons at ramen restaurants ate quickly and then walked out the door. They didn't linger over the ramen bowls pondering the quality of ingredients, taking photos, etc. Yes, there were also some restaurants that made particularly good ramen by local standards and attracted long queues of people but they were often small, cramped, plain one-man operations. This shows the extremely high food standards in Japan- even cheap , humble fast food requires insane amounts of preparation and attention to detail. But now thanks to social media everyone is a "foodie" and they spend too much time in ramen restaurants ooh-ing and aah-ing and posting to their Insta, disrespecting the locals who wait patiently outside, taking up space with their entire families... How do I know? Because I used to live there.

it's not a tonkotsu ramen, it's a iekei ramen 家系ラーメン, the speciality from Yokohama, and this one looks really amazing (we also call it shouyu tonkotsu sometime)

Hi I'm from India
I was born & raised in NY but my heritage is half-Japanese & half-English. My Japanese mother had a lot of Japanese food influences in our home & given that NY is a melting pot, I got a lot of exposure to different cuisines fortunately. Now I love the cross cultural influences among the Asian countries like Japan, Korea & China. There is uniqueness to each cuisine but there is a lot of cross pollination too, if you will. This is a prime example too. This ramen looks amazing.
Authentic ramen with fresh noodles, tasty broth & fresh meats & veggies is total comfort food & hearty. If you’ve only had the cheap dorm food type of ramen you’re missing out. This is the real deal with obviously an embarrassment of care that went into the ingredients, preparation & cooking. You can see how passionate they are & that is amazing. I recently ate breakfast but my mouth is watering after watching this. I could pound down at least 3 bowls of that ramen right now. Authentic Ramen is just one of those amazing dishes that is satisfying & makes you happy. Well done.🙂👍

Now this is really incredible food. What artistry! Color, taste, texture, healthy food, artistically composed and served. Every one of those plates was manually created by the chef. This handmade value in cooking is what we are missing in America. I was enchanted by the process, the care, and the visual production too of camera work. So grateful there was NO MUSIC in this video, thank god! It was a joy to watch, every minute of it. Truly good food and very good camera/ sound work. I am so hungry now! I could eat every one of those ramen noodle bowls!
The only thing I don't agree with you, is that you called it healthy food, those bowls, to me, look like bowls made of cancer and stroke, it looks delicous, but now that I know how they are made, I will naver eat them.
