I guess if you want and can't use too much chilli or want to give this a different twist you could use achiote paste or oil to create that beautiful red color rice. This looks yummy and I am quite inspired to make it.

I was thinking of maybe using 3 tablespoons of avocado oil, and mixing in Korean chili flakes or red chili flakes for the rice starter. I like some heat, but have found that the chili oil is too intense for me.
Saw this recipe today. Made it for dinner. Was missing a couple items so had to make a few substitutions. OMG was fabulous! So much flavor and beautiful textures. I’m a vegetarian but my hubby is not. Served his along side roasted duck - he’s still raving about it. Keeper recipe for sure. Thank you!
I made this last night but had to use a dark rich honey instead of maple syrup and I used cider vinegar instead of black vinegar.. it was really really good. I shall be off to my local oriental shop today to stock up on some of the ingredients. ❤
I’ve gotten to the point where I can only watch these videos only while I am eating dinner myself- this way I don’t get hungry or jealous and at least I can eat a meal while I get inspired lol.

Made this dish tonight and it was incredible! So delicious and satisfying. Used cremini mushrooms as that was all I could find locally and had a side of grilled zucchini. Thank you Yeung , your recipes are always inspiring 🙏🏽
I have so many rice recipes and so many chickpea and dal recipes already in regular use at home. I also have so many rice and dal recipes stored away for later use in my beloved recipe app, so I did not think I needed another one - wrong! This is a great collection of flavors, textures and just so happens to be plant based and easy. Thanks Wil! At the moment I cannot have much capsaicin in my diet due to a GI disease, so I use extra paprika and a careful use of dried Kashmiri red peppers, Aleppo pepper, and a bit of milder gochugaru. You can also bump up the flavor with scallion and/or garlic oil. It’s not perfect, but it works. I don’t want others who may be in my same situation to miss out on this delicious recipe because they cannot tolerate the chili oil.
I feel your pain! I love chili oil so much but I need to be careful because I have Crohn’s so too much spicy can send me into a flare up but it tastes so gooood😓🥵
Wil, I stumbled onto your channel looking for Asian recipes, coming back from a trip to Japan, and I very quickly equipped myself with gochugaru, dark soy sauce etc and found out nice asian supermarkets nearby. It grew on me, making your chili oil, different noodles, and now this recipe. Simply delicious.

Last night I made this recipe above and undetstood the umami blend of flavours but I missed something. Mouth feel. It was too dry for me. Everyone's sense of savour is different. I guess mine includes a smoother experience.

*You use a lot of ingredients that I haven't had / cooked with. I've typically used Tamari (organic soy sauce) and Worcestershire sauce in soups; I guess this could work for some of your sauces too. Worcestershire has a bit of suite, as I recall. Your recipes just look so delicious all the time.*
