Preserving the Harvest: Jalapeños, Green Beans, and Garlic Scapes
Veggies are steadily pouring in from the garden and it's time for a food preservation morning. Join me for a quick and delicious recipe for pickled jalapeños. I'll also share the steps to freeze green beans: this is my favorite way to preserve green beans (rather than canning). Finally, we'll preserve garlic scapes by making a garlic scape puree to freeze.

    Hey Marta, your projects look like so much fun. I made a very small batch of cowboy candy last year. And I had to do it with store-bought jalapeños because I didn’t have any that I grew myself. However this year I have several plants that have jalapeños although they are really far behind. So this year I wanna make a batch of cowboy candy with my own jalapeños. I can’t stand hot peppers but for some reason this really was good for me. I put a little bit of the cowboy candy on a cracker with some cream cheese and oh my goodness so good! good to see you see you next week!

    I'm thinking that ghee would be a great substitute for the butter in the Fr Onion prep. Also, I wonder if you could use beef tallow?

      Ooh, good call! Ghee would side step the whole issue of canning dairy. I’ve never tried caramelizing onions with beef tallow, but I think it would definitely be a good substitute from a food-safety standpoint.

    Can I ask what kind of tomatoes you used for the spaghetti sauce? Ball book seems to recommend plum tomatoes but there seems to be less of those around than the larger (maybe heirloom) tomatoes.

      They were large slicing tomatoes, but I don’t remember what kind. Some kind of paste tomato is ideal because it’s less watery; we had to cook this down for a while because the tomatoes were pretty watery. It still works-just takes more time. I hope that helps!

    You forgot to debubble your soup jars and measure them to 1” in this video. One jar looks over filled and one jar is about 1/2”lower.

      Thanks. I don't debubble with a texture like this soup--it's really just liquid. You're right that the head space was inconsistent. I've had issues with siphoning in the Nesco, so I've been erring towards allowing a bit more headspace than the recipe calls for.

    I’ve never done pickles but would love to try this. What type of cucumber did you plant. I believe gardeners would want to know so they have 100% success.

      I bought my cucumbers from a nursery that just labeled them “pickling cucumbers.” If a more specific name is helpful, I think they’re a lot like the Boston Picking Cucumber. I hope it works well for you. Happy canning!

    when do you fully tighten the screw on lid?

      The bands only get tightened to fingertip tight when canning. They just keep the lid in place so it can seal while it’s in the boiling water, so you’ll never actually screw them on tightly.

    Bread and butter are my favorite! Mom used to add sliced onions/peppers to hers. We always used apple cider vinegar when pickling. Just a taste preference. I've given up on growing dill. I've tried for 2yrs and the plant has died both times.

      I haven't tried apple cider vinegar; I might give it a try to compare. I'm trying to track down my grandma's bread and butter pickle recipe right now because that's my husband's favorite. Ha, glad I'm not alone in my dill struggles.

      Thank you! We have been eating the beet greens. I’ve been cooking them in a bit of lard (old school, I know, but I happened to have it on hand). I’d like to try them cooked with bacon, too.

    I took a screen shot of the plant and it came out as blue anise sage. A type of salvia/sage. I was also thinking that the pattern you see on the one pumpkin isn’t powdery mildew but normal for that variety. And I’m sooo jealous of your camomile ! I’ve been trying to grow it for years from seed. I gave up and bout a couple plant starts when they went on sale. I’m hoping they take off. One thing I don’t have trouble growing is chocolate mint. It borders my patio. I didn’t plant it there, it traveled from a small herb bed and took over in a rock border. When it flowers, oh! so wonderful! Thank you soooo much for the tour. I can’t believe how good everything is growing. You have the green thumb for sure 😊

      Oh! What I’m looking forward to is growing jalapeños. I made cowboy candy last year from peppers I bought at a farmers market. But I’d like to make them from my own garden this year.

      Thanks for identifying that plant! Also, I think you’re absolutely right about those pumpkin leaves. Ha. I think I’m so paranoid about powdery mildew that I’m seeing it everywhere. I actually bought camomile seeds and then decided to just buy transplants instead. Definitely easier than getting seed started.

      I haven’t made cowboy candy. My husband likes jalapeños in every form, so maybe I’ll give it a try. I definitely want to preserve some jalapeños this year because we’ve been buying them for our taco/nacho nights

    Great reminders or ideas. Nice others share what works for them Last year we dried oregano according to dehydrator’s instructions and we threw it out as it tasted like hay. This year I tried a better variety of oregano as the Greek wasn’t doing it for us. I was doing other things and my husband said he would throw the oregano in the dehydrator for me. 😂 he dried it at whatever temp popped up at start which I believe is 165. 😂It was terrific!! Sooo much flavor and it dried away faster than instructions said. It could have simply been the better variety-but I like to think it was a combo. Tried it with parsley and it was another win 🎉. So there is more than one way to do things. I don’t worry what others do. If we like a different way and it works then that is how we learn.

    Hang in there. I think the top bar hive (because of it's simplicity) is beginning to gain some momentum. It will likely never overtake the Langstroth in popularity but that's ok. I along with many others are content with my top bar for the reasons you have stated and being in the smart minority. :-) Best wishes for your continued success with beekeeping and your RUclips channel.     Locally Raised, helpful hints for your journey; * have john measure the inside of the display window and cut exactly the dimension to glue on to the inside of the cover for the display window. reasoning is anywhere ANYWHERE light comes through the hive the girl's will propolis that area to block the light. this means on your viewing window. which you really do not want. * the girl's prefer a tight community(living area). DO NOT give them too much space to cohabitate. Google this - follower board. have john measure the tight dimensions from the top bar board/the angled sides /then across the bottom. this will prevent the girl's from getting into the BIG empty space(which you can use to easily store your equipment + gear. each time you have to give the girl's more space for growth the follower board can be easily moved and still be functional. I hope this helps you in your new journey in beekeeping that fit's your goals. learn from other beekeepers and apply it to YOUR style. be the Lewis and Clark of top bar hive beekeeping!!!!

    Very interesting instalation. This was my first year . I purchased a package To install. I can see needing extra help if using a Nuc and cutting the frames. Hoping overwintering goes well but prepared for a possible loss the first year. It's all a learning experience 😅

    I'm a lifetime Beekeeper from Argentina. Some time ago I found the TBH and I thought to migrate to that technology (my back claims for that 😁). Until now I couldn't get any experience. Your video gives me new hope to get involved. I'll tell you if I succeed next season (here the season begins in August/September). Today I have only 25 Hives. Don't worry about low production, it all right if you think about low investment with a TBH. Greetings!

      @@Locally_Raised Don't worry for your lost Colony. I'm "some kind of Beekeeping Teacher" as well, and always recommend to get at least 5 Hives (no more than 10 when you are a beginner). That's because it's normal to lose some colonies. And in that way you see many situations and learn faster. I wish the best for you! Please excuse if my English is not good enough. I'm Spanish speaker.

      Their “best by” date (for optimal flavor and nutrition) is 12-18 months, but the food is safe to eat as long as it maintains its seal, which could last for years.

    I like how open that is! One thing I did for windows since I didn't want glass and I couldn't find good shed windows, so I made custom windows out of polycarbonate sheets. It's safer and tough as nails. A tablesaw blade is the perfect thickness for the sheets so you can run a groove down, make a frame and slide the sheet in!

    Those canners look suspiciously like instapots but the price is good...have you had them long? The stovetop canner i was looking at is like 550 bucks which is a bit much but thats 20Q

      Yes, they also function as pressure cookers, so that’s why they look instant pots. I’ve had them for about 2 years. Their capacity is definitely smaller than your typical stove-top canner, but I like that they don’t need to be monitored as closely (in terms of making sure the appropriate temp and pressure are maintained). I think each has its advantages and it all comes down to what you want most out of your canner. Hope that helps!
