Preserving the Harvest: Jalapeños, Green Beans, and Garlic Scapes

  • Veggies are steadily pouring in from the garden and it's time for a food preservation morning. Join me for a quick and delicious recipe for pickled jalapeños. I'll also share the steps to freeze green beans: this is my favorite way to preserve green beans (rather than canning). Finally, we'll preserve garlic scapes by making a garlic scape puree to freeze.

    How to freeze fresh green geans:
    Wash and stem beans
    Place in boiling water and boil 2-4 minutes until fork tender (but not mushy)
    Place in an ice bath to stop the cooking process
    Dry the beans
    Pack into freezer bags and freeze
    To make garlic scape puree:
    Process garlic scapes and a drizzle of olive oil in food processor
    Place pureed scapes in a muffin tin or ice cube tray
    Freeze in tray, then put into a freezer bag for long-term storage

    Hey Marta, your projects look like so much fun. I made a very small batch of cowboy candy last year. And I had to do it with store-bought jalapeños because I didn’t have any that I grew myself. However this year I have several plants that have jalapeños although they are really far behind. So this year I wanna make a batch of cowboy candy with my own jalapeños. I can’t stand hot peppers but for some reason this really was good for me. I put a little bit of the cowboy candy on a cracker with some cream cheese and oh my goodness so good! good to see you see you next week!

      Sweet jalapeños on a cracker with cream cheese sounds so good! I might make some just for that. I think anytime you add sugar to hot peppers, it calms down the heat, so maybe that’s why they hit the spot for you. I hope you get a really good jalapeño crop 🤞🤞
