I’ve been baking a lot of them sliced with olive oil and a little salt then drizzling a few teaspoons of honey on when done. They are a wonderful side dish. Those little helping hands are precious! Lovely! How do you can your potatoes? Do you follow a specific recipe?
Yup: just peel, chop, fill with hot water to 1" headspace, add 1 tsp. salt to quarts (optional) and process in pressure canner for 40 min.
I tried heating them up and serving as a side, but we found that we didn't really like the texture on its own. They're perfect for soups 😄
