    During the summer you can shred home grown or farmer's market zucchini and freeze it in amounts you'd use for recipes. Zucchini freezes well.

    I am from India and was pleasantly surprised to see you recommend coconut oil.I have ten coconut palms in my compound and use coconut oil as well as scraped coconut everyday for my cooking.

    Good ingredients I love using maple syrup in my home made granola. I love using almond flour in my baking for a high protein bread. I use carob chips instead of chocolate chips and lots of nuts .We I like to use different kinds of flours , almond flour, rice flour, oat flour, coconut flour , old grain flours to add different flavors nutrition and textures. It is will good!!!!

    I made this today. They were good my kids liked them. The kids would like them a little sweeter. I used honey instead of maple syrup. I was out of it, so I don't know if that made a difference. I'll going to try to add a little bit of brown sugar and maybe some chia seeds to hold the muffins better. Overall I like the recipe the way it is for myself. The kids eat them. The muffins just need a little bit more sugar for the kids. Thank you for sharing

    A hit in my house and a great way to use up my nuts and zucchini and carrots. I made almond meal using my blender for this recipe! Thank you! Will try again. I added applesauce and hemp hearts. :)

    These look so good! I'm making a shopping list of ingredients I need to purchase. I'm going to make these when I get off work tomorrow. Thank you for this recipe.😊
    UPDATE: I made these tonight. I think when making a recipe for the first time, you follow it as is. Then, if making it again, you add your own spin to it. Having said that, I've never used almond flour before. I would use it again. These were good, just not sweet enough for me. Next time I would add a lil sugar. I had dark chocolate chips on hand so that's what I used. Mine didn't rise up as much, some of the coconut oil was a lil solidified, forget to melt it, however, they had a lil crispy muffin top to them which I liked 👍🏽 I like the texture that the zucchini & carrots give it. These were super moist too. The raisins, along with the chocolate chips, add a lil sweetness to the muffins, I needed that!! I didn't add nuts 🤷🏽‍♀️ Overall they were tasty. Next time, I'm just going to use sugar & make sure the oil is all the way melted . As I'm posting this update, I've already eaten two. Can't wait until tomorrow morning when they're cold 😊😊

    Awesome healthy muffins😊...I added two ripe mashed bananas to the mixture.,eliminated the chocolate chips..... pop one in the microwave and spread almond butter on it.....after my run...🏃‍♀️...

    At 1st I was like too clean a kitchen. I don't know if I trust her she might be too strict and not take chances
    Then I fell in love with the recipe and the way you incorporated things and then you put chocolate chips and I was like
    OMGosh is she crazy that sounds delicious and raisins. I am doing my 1st ever Zucchini and Carrot Bread

    Very tasty and enjoyable! I love the coconut oil in place of vegetable oil or butter, but the next time I make these I will reduce it by half. 6 TB's is way too much and not necessary. I had grease all over my hand taking them out of the tin, otherwise loved the carrot and raisins too!

    Thank you! I will try these and use soaked red lentils for the almond flour and applesauce for the oil--although I may try it as I did not know that it helps boost metabolism! Great information! I will use sugar free syrup also or add some stevia and water perhaps.

      @@user-ti3vp9mt3z Absolutely. I've read C.O. will raise your cholesterol. And that can't be a good thing. I will use it very sparingly, if that. Also, NEVER!! melt down the oil via the microwave. Instead, boil some water, scoop out the desired amount into a preferably small bowl. And sit the small bowl into the boiling water. No less than 3 to 5 minutes, you have your liquid C.O. It's a whole lot safer too:-)

    I will be trying the recipe, minus the microwave. That device went out the door over a year ago. Microwaves alter the molecules in food.

    Hello your recipe sounded delicious. So i dared myself to bake them for my friends. They came out delicious but a bit dry i dont know why. Is it because i use olive oil instead of coconut oil and the rest was exactly the same. What did i do wrong?

    Should use organic oats too. Oats are also sprayed with round up ( glyphosate) cancer causing-same as wheat.

    Do you know the difference between dry ounces and fluid ounces?

      You have to weigh something to find the dry ounces. The fluid ounces are measured in a cup.

    Can coconut flour replace the almond meal in the case of an almond allergy? Or some other healthier flour/meal option?

      Im sure it would work. Or maybe you could grind up some other nuts. You might just need to adjust the amounts a bit.

      Coconut flour is very tricky to work with. It a soaks up liquids.

    Where did you get the muffin pan. I want one that I can use metal on and it doesn’t scrape off the top coating. They get scraped up so easily 🙄

      Hello, The recipe ingredients and method is detailed and listed below the show.
      Yes, there are 3 beaten eggs and 6 tablespoons of melted coconut oil. You could substitute with melted butter. Hope this helps!

      if you don't eat them all within 2-3 days I would freeze them! Usually you can pop them in your microwave from frozen for about a minute or so (NO FOIL WRAPPER of course). With all muffins that I freeze I micro them until thawed, slice them in half and toast them in a pan until they are a bit crusty... delicious.

      I keep mine in the freezer and heat them in the microwave for about 20 seconds. Also good to pull out the night before and let thaw for a morning snack. Thanks for watching!

    Salt measurement, she says 1/2 teaspoon.
    The written recipe says 1 teaspoon.

      YES! you can use it, as well. I did. And it's just as good, if not better than the coconut flour. In essence, anything is better than the normal white flour.

      I haven’t tried it in a loaf pan. They’re a dense muffin so it might not cook evenly through in a large pan.
