1 tip: before grinding the zucchini its enough to cut only one end of it. Grab the uncut end of it and start grinding the cut end. Once you finish you will have the uncut end in your hand and this way you will not lose the last slice ☺️😘
Seriously, grate that zucchini any way you like, It’s so simple! Seems like everyone’s got to get their own 2c in! If you’re not needing a drive thru window to get your dinner on the table, then good for you ! I think you’d be able to figure out how to grate a zucchini…from one end to the other. Thank you for the recipe, I promise I’ll be mindful of what I’m doing while grating my zucchini to make this recipe. God, I hope I’m worthy!!
Simpler method. Grate onion carrot and zucchini. Put in muffin tins. Mix 2 eggs salt and pepper. Pour over zucchini in each muffin cup. Bake in oven. Yummo
Not as dense as this recipe, but I got bored watching it and cut out after the baking powder -- about halfway through. Some RUclips chefs seem to think they have to exoticise everything. As far as I am concerned, if the recipe is over 5 minutes, it had better have a good reason. This one did not.

These are really delicious, I did keto-ize the recipe and substituted cauliflower for potato and almond flour for the flour. They have a really creamy taste, I love them!
We love the flavor of onions with zucchini. Have you tried this with 1/4 cup of finely diced onion? If anyone has, I'd love to hear an opinion! Lovely recipe, beautifully filmed!
these look delicious but how does the potato cook in the batter? I would line the tins with the potato and butter mixture first making a crunchy crust for the zucchini filling
This looks very tasty and pretty healthy. I'm diabetic, so I would use a waxy potato and reduce the amount to a minimum and leave the skin on. To increase efficiency in the prep, grate everything into one bowl, add course salt, let that stand for a few minutes, dump it all on a tea towel, pull up the corners and keep twisting the towel until you think you have all the water wrung out of it. This will remove more water than a strainer and, to me, is easier. Have you ever used silicon muffin tins? They dont require any greasing to keep things from sticking, and they clean up way easier

Followed your recipe as best as I could. Once the zucchini and potato were shredded, I placed in a cheese cloth bag and twisted. It’s more effective at removing moisture. Didn’t have bell pepper, so I used shredded carrots. And finally, didn’t have Greek yogurt, so I used sour cream. I don’t know if it was as good as yours, but we all liked them 😋
I made it for dinner guest last night and it was a total hit. Thank you so much for sharing this wonderful recipe it was delicious. The next one I will make is the broccoli and cauliflower casserole and I will let you know how that goes. I truly enjoy your channel.

Looks nice. In the UK zucchini is called a courgette! Personally this for me would NEVER taste like meat or better than as its a.... Vegetable!! Wouldn't call it a substantial dinner. May be with some chicken /fish. Makes a change from the normal though. Well done for trying 😊

Just googled semolina… In the US, semolina is sometimes called farina, and a popular brand of farina is Cream Of Wheat😯, and I do have that in my cupboard🤗
Semolina flour is a high-gluten wheat flour used mostly in making pasta and couscous. If you’re going to substitute, use a high-protein flour (like bread flour or whole wheat flour) or even cornmeal. All-purpose flour and cake flour are lower in protein, so not good substitutes. In some cases you can also use corn meal, which is close to the coarser texture of semolina, but not high in gluten. Best bet is to use a high protein substitute like bread flour or whole wheat. Farina is extracted from soft wheat. Semolina is made from hard wheat. And they have different properties so are not really interchangeable because the end results are quite different in texture.
Would be helpful to know an approximate WEIGHT of the zucchini, since they can vary in size A LOT! Also, are the pickles for the sauce sweet or sour pickles?
From California, thank you. But will make it low- carb healthy ketogenic style. Using all ingredients minus potatoes, semolina and flour. Will substitute with lupin/almond flour butternut squash or yellow squash and coconut cream ❤ 🥰👍✅
Is that last "cucumber" more of a " pickle"? That's what it looked like to me, could u make meals that were more budget friendly and for a single person? So far the ones I have tried were amazing!!

Outstanding recipe. My wife made a slight variation to this giving it Indian twist and flavour. Me too, being a busy bee in the kitchen, can't wait to prepare this soon. I have seen and prepared several types of savoury egg muffins, but nothing beats this.
@@susanlisson7066ndian doesn't always mean more chilli. It means a curious balance of additional spices, such as cinnamon powder , turmeric, garlic powder, ginger and she also used a bit of roasted semolina which makes the final product more firm.

All I can say is…..YES….i am going to make this recipe tomorrow. I always add in all kinds of herbs/powdered veggies, etc. Everyone out there….’you just go….creative’ …..in your kitchen. Do it. I made this last night - delicious! It made 9 muffins, took about 35 minutes to brown on top. Great recipe!

This would be a yummy breakfast treat! I’m not a huge fan of cooked peppers so I may try some de-seeded tomatoes instead!

Outstanding recipe. My wife made a slight variation to this giving it Indian twist and flavour. Me too, being a busy bee in the kitchen, can't wait to prepare this soon. I have seen and prepared several types of savoury egg muffins, but nothing beats this.
Would the Indian twist be adding a bit of chilli powder? I was thinking of doing that too. lol
@@susanlisson7066ndian doesn't always mean more chilli. It means a curious balance of additional spices, such as cinnamon powder , turmeric, garlic powder, ginger and she also used a bit of roasted semolina which makes the final product more firm.
@@shashikanthnarasimhiah7374 Yes, true. I also always add additional spices to plainer recipes. It’s the Indian in me, usually also a bit of chilli powder though. 😁I like the addition of the roasted semolina. Will have to try it. Thanks for your reply. 😊
