I just made your recipe with a few alterations ... I used 1 1/2 cups of oat flour and 1 1/2 cups of almond meal. I added walnuts as the main nut and used a combination of cinnamon, nutmeg and vanilla essence as the spices. Thank you so much for posting, they are one of the best muffins I’ve ever made xxx

Love your videos have been watching for a while. Thought I’d give some of this a try... well it’s 5+ months later I am about 80% vegan and shooting for 100%. I dropped 70lbs and power walk 5 miles a day. I haven’t felt this good in many years. Your videos are amazing keep up the great work, God bless.

Really great tasting muffins! I used coconut milk instead of almond milk to make them nut-free (& pumpkin seeds instead of nuts). I also used 2 organic bananas + 1/4 cup unsweetened applesauce (instead of 3 bananas). I made them with chocolate chips - obviously! Excellent texture & taste - nobody would know they're vegan & gluten-free. Thanks for this recipe, Derek - I enjoy your videos & your energy :)

Just made these! Through in pistachio nuts, walnuts, sun flower seeds, goji berries, raisins, and hemp hearts. Plus I used the flax seed in the recipe like you said. they came out so very, very good! Don't delay! Make these TODAY! Sadly, this recipe has been on my "to make" list for well over a year. The list of recipes I want to try is always too long but Derek's recipes never disappoint and these little muffins were so darned good, I've already eaten 3! I added 1/4 cup mini chocolate chips and 2 Tbs maple syrup. I love that's it's one of those flexible recipes that we can play with the ingredients so I can't wait to test with coconut flakes, blueberries and a variety of nuts, seeds and dry fruit. It's like granola in a muffin. The house smells divine and I'm thrilled to have these absolutely perfect little treats! Thank you!!! 😘
I have made several types of these muffins out of oats by just blending old fashioned GF oats in my blender. If some oat flakes remain it's no problem at all. I have to say, I do not like chocolate chips in any of them nor do I care for seeds but, I have added applesauce, blueberries, dried cranberries, walnuts, flaked almonds, diced apples and of course very ripe bananas. It's one of my go to recipes for breakfast. I always add the lemon juice directly to the liquid ingredients because, that was traditionally how I was taught.
@@brendaf3132 I'm with you! I've made them so many times and now avoid the choc chips just because I'd rather have natural fats of nuts or shredded coconuts. I like making them in mini muffin silicone molds (they pop right out) and I keep them stored in the freezer so they're always on hand.
I taught myself how to make a vegan butter. Take a 1/4 cup of walnuts, add warm water and blend. It makes a smooth paste that acts very much like butter but is vegan and WFPBNO
Replace bananas with a combination of steamed (I have a pressure cooker - 5 min for super-soft pumpkin) sweet potato and pumpkin (butternut squash or other dense varieties are super!), add more dates for sweetness - Hmmm!!! Terrific!!! Thanks for the great video!!!

Yes for vanilla AND definitely unsweetened shredded coconut😍. I have it 5 - 6 days a week 2 daily. I do change some of the ingredients often or add things like ginger powder, other spices or dry fruits, maple syrup or local honey, carrots, apples, the options are endless. It's delicious, healthy and we know what's in it and how and who made!

U inspired me to make improv muffins. Just blended up apples, sweet potatoes, maple syrup water lemon and vanilla extract for wet, and your stuff for the dry. Added nuts and cranberries. Didnt measure anything except the oats and baking soda/powder. Turned out great!
These have been absolutely delicious. This is the second attempt and making them and I used unsweetened cacao instead of chocolate and they still turned out great. The Recipe Rocks! I also used no sodium baking powder and compensated by adding a little vinegar and the lemon juice.

Tried this today as I got fed up eating expensive protein bars. WOW! They turned out brilliant, the only addition I made was added 40g worth of protein whey banana flavour powder. Thank you for the the recipe!!!! Next time I will split out the final mixture into separate bowls and then make different varieties (ie pumpkin seeds etc, another with blueberries, another with cherries and coconut etc etc).

I’m a long time Baker, and here’s a tip for a quick breads like muffins and banana net bread: the less you work the Dell the better. The lemon juice should go in when you put the other liquid in edger dry ingredients on top of that and then mix once. Your muffins look amazing by the way!
You’re killing it in the kitchen! Your videos help a lot of people to see that living a whole food plant based lifestyle can work amazing even as an active person who puts healthy stress workouts on the menu. I’m starting to prep for a half marathon and more and I often reference this channel. Those muffins will do a lot for the long runs without the crazy crashes from eating processed foods/sugars. Thanks again for giving hope to us 40+ active people!
I believe the science behind the bigger rise for chocolate chip muffins are the fats from the chocolate. Think of puff pastry. What makes it puffy is the butter (vegan, of course!) between the layers of dough. :)
Making some food for a 2-day trip and these muffins look perfect for the road. It's not easy staying WFPB while traveling, so these muffins will be a great alternative to the hotel breakfasts.

Great recipe, so going to bake this!! The only con would be that Silk almond milk has unhealthy gums and additives. I'd recommend either homemade or bought mlik with just the water, nuts, and/or salt if possible (Whole Foods carry this). Hope y'all enjoying this! So excited to try!

These are so good. I stumbled across this video in my RUclips feed yesterday evening. These sounded so good that I decided I had to make them. I got everything ready before bed I work really odd hours. So I was up at 2:30 AM and got these started before work. I added pumpkin seeds, sesame seeds, Goji berries, raisins, raw walnuts and raw cashews about 1/8 cup each and only 1/8 cup dark chocolate chips After all they do have antioxidants in them so why not. I unfortunately had no lemon juice so I used lime juice and these turned out really, really good. So I liked your page and am now following you. I am looking forward to doing a binge on all of your videos thank you for sharing 😊
My Coworkers are the same way! They're always counting their carbs! But they do a lot of calisthenics and not the weighted stuff. They said that because of that they don't do a lot of carbs so it hits their fat reserves? I was like Idk about that for sure, but okay.(Maybe with fasting but??? We have amazing people like Simnett who is ripped and so like it makes it hard for me to think counting carbs is ever a good idea)
As funny as I think Vegan Gains can be (even though sometimes he goes way too far and it's just awkward) these channels are the kind that will actually get people really considering plant based eating as well as veganism, I was vegan in the past for just under a year when I was 17 but my parents found it hard to sustain that as they buy the food, now I'm 19 and planning on going vegan or 90% plant based as soon as I move out after college, you don't spread fake bs saying veganism purifies you, it's can be a healthier way to live and is just ethical and most importantly, sustainable for the future, keep doing what you're doing.
Literally just stopped what I was doing to use up my ripe bananas to make this! I made and used an oat and almond flour base, bananas and dates to sweeten, lots of cinnamon, and mixed in roasted pumpkin seeds and pecans. So far the batter is delish :)
I've got these in the oven right now. I bake a gluten-free vegan muffin every Tuesday for our community social gathering. I made jumbo muffins in a silicone muffin pan. Hope they turn out as good as yours!
For some reason the inside didn't get baked for me. Only like 1mm of the crust got baked properly. It was in the oven for 30-40 minutes and it looks more brown than in the video. I think the dough's consistency was thicker, I don't know if that could be the reason.
Ok maybe the problem is that I put 50% more flax, 11% more oats in it. I also put more liquid in it(I used water with mixed with coconut milk). I had to convert "cups" to grams and it didn't work out well enough. I didn't watch the whole video before starting and didn't get to the cronometer part.
Oh my God thank you! I am vegan and recently had to go gluten free for my health so this is a gem of a recipe! I just made these and I am shocked at how easy it was. Minimal ingredients, no butter or oil! I'm shocked at how awesome they turned out!
I can recommend live-traps. It's a little container you put some fruit scrapes in, on top comes a mash. They way it's designed the flies can go in, but not out anymore. You can release the flies 2-3 times a day. After a day or two they are all gone... until you have the next batch from fruit again 😁. I'll see if I can find a link, due to my bad explanation :). Edit: Something like this: www.thoughtco.com/humane-homemade-fruit-fly-trap-127896 I bought it as finished product in Germany, but it's nothing special and has plastic, so building one yourselves sounds good!
Oh and one other tip is to wash your bananas when you get them from the shop. Apparently the eggs are just sitting on the banana. But since I got the trap I stopped doing that, because it didn't help all the time and it's annoying to do.
I’ve found handheld vacuums work super well - in the morning I shake the fruit, suck ‘em out of the air when they fly up and you can let them go outside!
I have a real problem with them, I put some apple cider vinegar in a little bowl with a couple drops of dish soap and leave it out and they're gone by the day's end
I thankfully stumbled across your video when looking for something totally non related. I only had 2 ripe bananas so added 1/3 cup apple sauce to make up for the 3rd one. I added 1tsp vanilla as suggested by another review. I didn’t have ground flax seed and forgot to add hemp seeds but will next time. I added pumpkin seeds, raisins and cranberries along with dark chocolate chips. I used 1tbsp of cinnamon (3 tsp). These didn’t rise as high as yours but definitely delicious. I like to freeze them so I can grab and go. These are going to be a staple in our house from this day forward. Thank you for posting.
I baked some this week (and despite looking like cookies because I don't have a muffin tray) they're delicious, I also discovered that being cookie shaped I could spread peanut butter on the bottom YUM!

Made these as a loaf, baking for 40 mins, and it is just wonderful!!! So simple and delicious. I used only 2 cups of oat flour (my cup has 250 ml). I kept the other measurements though.
I made these and they tasted very good. I did adjust it a bit. I used non-spotted bananas so it wouldn't be as sweet and the sugar isn't too high. I also added some protein powder, and a tad of 0% fat greek yogurt to up the protein. I also added Vanilla and a bit of monk sugar. I tried to go by the consistency of Derek's video to see if I need to add more liquid, so I did by adding more almond milk. The inside was very moist and goey but tasted so good and I toasted them up a bit before eating. I like my baked goods hot and crumbly on the outside. I also added a bit of Lily's Chocolate Chips (sugar free) and some goji berries. The texture of these muffins reminds me of the asian dessert Blueberry Mochi which is made with a sweet rice flour and is goey and chewy in texture. This recipe so good, easy, and I will try it again, but it didn't have that traditional muffin crumbly airy texture I was hoping for. It was still so good and also mine may have turned out different a bit because of my additions. I hope you make them guys!
Due to COVID, my partner and I can't get groceries right now. We have run out of healthy snacks and are tired of trail mix. I made these for us (my partner is gluten-free), and we devoured half of them right out of the pan! So good! Definitely will make these again. So easy and with pantry staples!
Just made these and they're great! I added raspberries, goji berries, pumpkin seeds, walnuts, macadamia pieces, cacao nibs, and a few drops of liquid stevia. They're still not real sweet, but I like 'em like this. Will make again! Pura vida!

I have to say, I do not like chocolate chips in any of them nor do I care for seeds but, I have added applesauce, blueberries, dried cranberries, walnuts, flaked almonds, diced apples and of course very ripe bananas. It's one of my go to recipes for breakfast. I always add the lemon juice directly to the liquid ingredients because, that was traditionally how I was taught.
@@brendaf3132 I'm with you! I've made them so many times and now avoid the choc chips just because I'd rather have natural fats of nuts or shredded coconuts. I like making them in mini muffin silicone molds (they pop right out) and I keep them stored in the freezer so they're always on hand.

I taught myself how to make a vegan butter. Take a 1/4 cup of walnuts, add warm water and blend. It makes a smooth paste that acts very much like butter but is vegan and WFPBNO

Replace bananas with a combination of steamed (I have a pressure cooker - 5 min for super-soft pumpkin) sweet potato and pumpkin (butternut squash or other dense varieties are super!), add more dates for sweetness - Hmmm!!! Terrific!!! Thanks for the great video!!!

Yes for vanilla AND definitely unsweetened shredded coconut😍. I have it 5 - 6 days a week 2 daily. I do change some of the ingredients often or add things like ginger powder, other spices or dry fruits, maple syrup or local honey, carrots, apples, the options are endless. It's delicious, healthy and we know what's in it and how and who made!

U inspired me to make improv muffins. Just blended up apples, sweet potatoes, maple syrup water lemon and vanilla extract for wet, and your stuff for the dry. Added nuts and cranberries. Didnt measure anything except the oats and baking soda/powder. Turned out great!

These have been absolutely delicious. This is the second attempt and making them and I used unsweetened cacao instead of chocolate and they still turned out great. The Recipe Rocks! I also used no sodium baking powder and compensated by adding a little vinegar and the lemon juice.

Tried this today as I got fed up eating expensive protein bars. WOW! They turned out brilliant, the only addition I made was added 40g worth of protein whey banana flavour powder. Thank you for the the recipe!!!! Next time I will split out the final mixture into separate bowls and then make different varieties (ie pumpkin seeds etc, another with blueberries, another with cherries and coconut etc etc).

Derek, do you think you would've had the same success in gaining muscle mass if you DIDN'T start using the Vivo life protein powder in every smoothie bowl? I’m a long time Baker, and here’s a tip for a quick breads like muffins and banana net bread: the less you work the Dell the better. The lemon juice should go in when you put the other liquid in edger dry ingredients on top of that and then mix once. Your muffins look amazing by the way!
What about the baking soda and powder? Can't we just use baking powder and no lemon?

Your videos help a lot of people to see that living a whole food plant based lifestyle can work amazing even as an active person who puts healthy stress workouts on the menu. I’m starting to prep for a half marathon and more and I often reference this channel. Those muffins will do a lot for the long runs without the crazy crashes from eating processed foods/sugars. I believe the science behind the bigger rise for chocolate chip muffins are the fats from the chocolate. Think of puff pastry. What makes it puffy is the butter (vegan, of course!) between the layers of dough. :)
Making some food for a 2-day trip and these muffins look perfect for the road. It's not easy staying WFPB while traveling, so these muffins will be a great alternative to the hotel breakfasts.

Great recipe, so going to bake this!! The only con would be that Silk almond milk has unhealthy gums and additives. I'd recommend either homemade or bought mlik with just the water, nuts, and/or salt if possible (Whole Foods carry this). Hope y'all enjoying this! So excited to try!

These are so good. I stumbled across this video in my RUclips feed yesterday evening. These sounded so good that I decided I had to make them. I got everything ready before bed I work really odd hours. So I was up at 2:30 AM and got these started before work. I added pumpkin seeds, sesame seeds, Goji berries, raisins, raw walnuts and raw cashews about 1/8 cup each and only 1/8 cup dark chocolate chips After all they do have antioxidants in them so why not. I unfortunately had no lemon juice so I used lime juice and these turned out really, really good. So I liked your page and am now following you. I am looking forward to doing a binge on all of your videos thank you for sharing 😊

My Coworkers are the same way! They're always counting their carbs! But they do a lot of calisthenics and not the weighted stuff. They said that because of that they don't do a lot of carbs so it hits their fat reserves? I was like Idk about that for sure, but okay.(Maybe with fasting but??? We have amazing people like Simnett who is ripped and so like it makes it hard for me to think counting carbs is ever a good idea)

As funny as I think Vegan Gains can be (even though sometimes he goes way too far and it's just awkward) these channels are the kind that will actually get people really considering plant based eating as well as veganism, I was vegan in the past for just under a year when I was 17 but my parents found it hard to sustain that as they buy the food, now I'm 19 and planning on going vegan or 90% plant based as soon as I move out after college, you don't spread fake bs saying veganism purifies you, it's can be a healthier way to live and is just ethical and most importantly, sustainable for the future, keep doing what you're doing.

I made and used an oat and almond flour base, bananas and dates to sweeten, lots of cinnamon, and mixed in roasted pumpkin seeds and pecans. So far the batter is delish :)

I've got these in the oven right now. I bake a gluten-free vegan muffin every Tuesday for our community social gathering. I made jumbo muffins in a silicone muffin pan. Hope they turn out as good as yours!
For some reason the inside didn't get baked for me. Only like 1mm of the crust got baked properly. It was in the oven for 30-40 minutes and it looks more brown than in the video. I think the dough's consistency was thicker, I don't know if that could be the reason.
Ok maybe the problem is that I put 50% more flax, 11% more oats in it. I also put more liquid in it(I used water with mixed with coconut milk). I had to convert "cups" to grams and it didn't work out well enough. I didn't watch the whole video before starting and didn't get to the cronometer part.
Oh my God thank you! I am vegan and recently had to go gluten free for my health so this is a gem of a recipe! I just made these and I am shocked at how easy it was. Minimal ingredients, no butter or oil! I'm shocked at how awesome they turned out!

Simnett, do you get fruit flies from your bananas/how do you deal with them? as soon as I see one I panic and throw my bananas in the fridge.
You can do that. They aren't going to hurt you though. Usually with the cold weather they disappear.
I can recommend live-traps. It's a little container you put some fruit scrapes in, on top comes a mash. They way it's designed the flies can go in, but not out anymore. You can release the flies 2-3 times a day. After a day or two they are all gone... until you have the next batch from fruit again 😁. I'll see if I can find a link, due to my bad explanation :).

I bought it as finished product in Germany, but it's nothing special and has plastic, so building one yourselves sounds good!
Oh and one other tip is to wash your bananas when you get them from the shop. Apparently the eggs are just sitting on the banana.
But since I got the trap I stopped doing that, because it didn't help all the time and it's annoying to do.
I’ve found handheld vacuums work super well - in the morning I shake the fruit, suck ‘em out of the air when they fly up and you can let them go outside!
I have a real problem with them, I put some apple cider vinegar in a little bowl with a couple drops of dish soap and leave it out and they're gone by the day's end
I thankfully stumbled across your video when looking for something totally non related. I only had 2 ripe bananas so added 1/3 cup apple sauce to make up for the 3rd one. I added 1tsp vanilla as suggested by another review. I didn’t have ground flax seed and forgot to add hemp seeds but will next time. I added pumpkin seeds, raisins and cranberries along with dark chocolate chips. I used 1tbsp of cinnamon (3 tsp). These didn’t rise as high as yours but definitely delicious. I like to freeze them so I can grab and go. These are going to be a staple in our house from this day forward. Thank you for posting.

I baked some this week (and despite looking like cookies because I don't have a muffin tray) they're delicious, I also discovered that being cookie shaped I could spread peanut butter on the bottom YUM!

Made these as a loaf, baking for 40 mins, and it is just wonderful!!! So simple and delicious. I used only 2 cups of oat flour (my cup has 250 ml). I kept the other measurements though.
I made these and they tasted very good. I did adjust it a bit. I used non-spotted bananas so it wouldn't be as sweet and the sugar isn't too high. I also added some protein powder, and a tad of 0% fat greek yogurt to up the protein. I also added Vanilla and a bit of monk sugar. I tried to go by the consistency of Derek's video to see if I need to add more liquid, so I did by adding more almond milk. The inside was very moist and goey but tasted so good and I toasted them up a bit before eating. I like my baked goods hot and crumbly on the outside. I also added a bit of Lily's Chocolate Chips (sugar free) and some goji berries. The texture of these muffins reminds me of the asian dessert Blueberry Mochi which is made with a sweet rice flour and is goey and chewy in texture. This recipe so good, easy, and I will try it again, but it didn't have that traditional muffin crumbly airy texture I was hoping for. It was still so good and also mine may have turned out different a bit because of my additions. I hope you make them guys!
Due to COVID, my partner and I can't get groceries right now. We have run out of healthy snacks and are tired of trail mix. I made these for us (my partner is gluten-free), and we devoured half of them right out of the pan! So good! Definitely will make these again. So easy and with pantry staples!
Just made these and they're great! I added raspberries, goji berries, pumpkin seeds, walnuts, macadamia pieces, cacao nibs, and a few drops of liquid stevia. They're still not real sweet, but I like 'em like this. Will make again! Pura vida!
