I did have that tense moment you mentioned when the mixture seemed way too thick to ever drip or scoop into the muffin pan, but after working in the zucchini, it transformed into the delicious, workable batter that produced 12 amazing gems of goodness! I'm looking forward to trying many more of your recipes, presented in a carefree and whimsical fashion- very entertaining and informative. Thanks again and keep the recipes coming. BTW, I had no muffin papers but the spray worked like a charm.

I made the muffins with gluten free flour and 1/4 cup of cocoa, (no nuts) and dairy free chocolate chunks. They turned out lightly sweet, moist and delicious! Next time I think I'd like to try it with a bit of orange zest, cuz I'm boujee like that. 😂 Or marmalade & df butter, that would do!
I like these kinds of muffins, as well as carrot, oat, and berry muffins. A girl once told me that I like old people's muffins. XD I was so proud of myself. :D

I’ve changed things up a bit by doing one cup of zucchini, one cup of carrots, half a cup of chocolate chips and half a cup of walnuts. It came out perfect!!!!!
Love it! Would like to add that elevation affects the baking time as well. I live at a higher elevation and I bake things longer than when I visit my dad, who lives at a lower elevation, and bake things for him.

Y'ALL- just made this right now and it is SO good!!! Did 1 cup of walnuts and 1/2 cup of chocolate chips....satisfied my sweet tooth craving. Side note, I didn't even have a cheese grater to shred my zucchini (I know, what kind of twenty something adult am I?), so I just cut my zucchini up in thin even strips. Still turned out great! Also....it's vegetables...so technically it's healthy, right? :)
