I lost my grandma’s recipe a couple years ago and have been searching for something similar. I’m almost certain hers called for 2 cups of flour - 1 cup of oil - 1 (or 1.5?) cups sugar…and 1 or 2 eggs? Maybe 3? …but I just cannot remember. Definitely 2 cups of zucchini and I think I’d sometimes add extra. Anyway - I decided to try this recipe because it called for 3 cups of zucchini which I thought would balance out having more flour than I recall. It was very good. Light and fluffy. I followed this exactly and it was excellent. Not quite what I remember but so so close and just as good. If anyone is wondering - I do think if you had extra zucchini it could easily take another cup without making it too moist. Hoping you have a chocolate version as I lost that one too:-(
Have not made zucchini bread in years, looking forward to trying this one. Went together nicely and I'm sure it's delicious. Have been making your Focaccia bread, so addicted! I usually make a zucchini & Italian sausage quiche with gruyere. Sauté the shredded zucchini ( great for the extra ) & sausage separately. Drain sausage and layer in bottom of partially baked crust, add cheese and then egg mixture and bake. I usually add some nutmeg. So many things to make with this veggie. Thanks for your tasty and entertaining channel!
I have this in the oven now. I added a few spoons of ground chia/flax/cocoa blend, and I used half each olive oil and avocado oil (what I had on hand). I also threw in a handful of oatmeal. The batter is very tasty, thanks! We usually spread cream cheese on ours, but I might have to make some honey butter too.

I make zucchini bread all summer and we enjoy it as well as gift it to neighbors and friends. It freezes well, too, and is nice to have on a cold winter morning with tea or coffee!
I love making chocolate zucchini rolls!! It's like a pumpkin roll, only made with the zucchini. It's soooo good!! I make a couple of them, give some to family but I always store one in the freezer!! Just a little change from the zucchini bread. Loved your video!!!

Zucchini mini pizzas! For my HUGE zucs I just cut them into discs and use those as the "crust" of a mini pizza! Grated zucchini is great in omelettes, sauteed and on top of toast or in a cream cheese/cucumber/zucchini sandwich :)

Wow I made this recipe this morning and it turned out great. We both loved it, it will be our desert tonight after our dinner. So very moist... I only have a small greater but a new box grate is on the way from Amazon. Loved this recipe!
Your bread looks so moist and delicious! I have an abundance so I found myself using zucchini and yellow squash with chicken, onions, garlic and cherry tomatoes in pasta fora dinner meal.
Excellent recipe. I had to add a little bit of milk to my batter, as was very thick according to your measurements. Once I added the milk and zucchini it loosened up the batter. Smelled so good when it was baking. I made one loaf with white chocolate chips and the other with chopped toasted walnuts. This was pretty easy to make. Thanks.
Just found your channel. Looking for a recipe as we recent moved and heavens only knows where my old recipe from Gram’s recipe box is right now. Needed a recipe that bakes well in the center, yet is moist. The video showed both results. Had to make this and WOW! It is really good! Just what I needed for my family! I added walnuts to one loaf and just the plain recipe for the first loaf. BOTH were major hits. Yummy! Hi Natasha, I tried your Zucchini bread recipe for the first time and the result was so amazing. I wish I could insert the photo of what I made in this comment section. But maybe you need to add the additional info that you should squeeze the shredded zucchini a little bit so it’s not too watery. And btw, I made the gluten-free one, using flour from Krusteaz brand which is tricky sometimes, because using regular flour is easier for making bread. But I went good by using your recipe. Thank you so much!
The poor Zucchini…its a vegetable that grows so well and produces a lot fruit, but it’s so bland that nobody just eats it. So It gets hidden in a million recipes.

Used your recipe to make this into a zucchini spice bundt cake. It was hard to stir after you add the flour. But once I added the zucchini was easier to mix. It is very good. I left it in the oven 5 minutes too long but still states great. I also heated the pecans in the oven. My husband was drooling and couldn’t wait to eat. Thank you for this recipe.

AHHH...yet another clever and yummy way to get the kiddos to eat veggies!! ❤I love to flour & pan fry sliced zucchini, load it onto sourdough with sliced tomatoes, cucumber & onion-lastly, ketchup & mayo are the perfect complement to this simple, but delicious sandwich!! Love sauteed zucchini with onion, garlic, broth, some tomato paste, seasoning, and optional some small tomatoes. Eat as is or put on top of pasta. Delicious 😋
I made 1/2 muffins and 1/2 bread. For muffin I baked for 30 mins and it turned out great. I used 3/4 cup of monk fruit and it is sweet enough for me. Thank you for an amazing recipe.
Wow, I just tried half the recipe because I didn't have loaf pans and nothing big enough for the full recipe & I have to say it's very tasty & scrumptious 😋 The only switch I did was the cinnamon with cardamom. It’s delicious I made mine in my pampered chef brownie pans instead of loafs. It’s much less cooking time.

Sometimes I add it to the kids oatmeal in the AM. If they get suspicious of anything green, you can peel or use a yellow I suppose.
