Ingredients
½ cup (115 g) vegetable oil
2 large eggs
1 cup (200 g) sugar
2 tsp (2 g) finely grated orange zest
1 tsp (5 mL) vanilla extract
1 ½ cup (225 g) all-purpose flour
1 tsp (3 g) baking powder
¼ tsp (1 g) baking soda
¼ tsp (1 g) salt
1 ½ cup (225 g) loosely packed, coarsely grated zucchini
½ cup (88 g) milk or dark chocolate chips (optional)
Directions
1. Preheat the oven to 350 F. Grease a 9-x-5-inch and line the pan with parchment paper so that it comes up the sides.
2. Whisk the oil, eggs, sugar, zest and vanilla together in a large bowl.
3. In a separate bowl, sift the flour, baking powder, baking soda and salt. Stir in the zucchini to coat it with the flour and add this to the wet mixture, stirring until blended. Stir in the chocolate chips (if using) and scrape the batter into the prepared pan.
4. Bake the loaf for 50 to 60 minutes, until a tester inserted in the centre of the cake comes out clean. Cool the cake completely in the pan until turning out to slice.
5. The loaf will keep, well wrapped, for up to 3 days, and can be frozen for up to 3 months.

Hi Anna. Thank you very much for this recipe. I've already made it once and now I've got another loaf baking in the oven. It turned out amazing the first time and am certain it will be the same this time. I used coconut sugar instead of white sugar and chose raisins over the chocolate chips and what a great tasting cake! I highly recommend the coconut sugar and raisins too. All the best to you.
This is exactly me today. I baked this loaf before and was fabulous, I have a loaf in the oven perfuming my home right now. I also used raisins instead of chocolate and also used coconut sugar instead of cane sugar. Another substitute I used today is Einkorn flour instead of regular all purpose, I just added 1/4 extra flour as Einkorn flour is not a 1 to 1 substitute. Let's see how it turns out! 😋

This looks lovely. I'd bake it with tiny bits of glazed fig in a square pan. Pour over fig leaf syrup. And serve little squares, maybe topped with some cream cheese

Everyone looks at me crazy when I tell them I like zucchini cake, or that its even a thing. THEY'RE all the crazy ones cause this crap's good >:D Never eaten it with orange tho, I always eat it with pecans and cinnamon and cream cheese icing. I'm sure it tastes awesome either way.

Yes, vegetable oil is any oil that comes from a plant, canola oil is vegetable oil, also olive oil, coconut oil, maze oil... Etc

DELICIOUS way to use up your surplus of fresh garden zucchini! Because we try to eat as healthy as possible, I changed up a few ingredients. My substitutions are in all caps..
½ cup (115 g) COCONUT oil
(melted)
2 large eggs
1 cup (200 g) BROWN sugar
(Sugar in the Raw is what we use)
2 tsp (2 g) finely grated LEMON zest
(didn't have oranges on hand)
1 tsp (5 mL) vanilla extract
1 ½ cup (225 g) all-purpose flour
1 tsp (3 g) baking powder
¼ tsp (1 g) baking soda
¼ tsp (1 g) salt
1 ½ cup (225 g) loosely packed, coarsely grated zucchini
(we used two and a half cups)
½ cup (88 g) milk or dark chocolate chips (optional) (Less is more with this bread)
Handed out mini loaves to friends and family and they could not believe there was zucchini in the bread. Leaves a beautiful, fluffy center with colorful green flecks inside from the zucchini skins. AMAZING BREAD and will be THE ONLY one I use from now on!
I don’t see you spooning your flour into your measuring cup like most bakers do. Do you weigh out your flour on a scale?
