When I was pregnant with my 3rd child (over 15 yrs ago) I craved Zucchini ... & put it in almost EVERYTHING! & didn't tell my family... the chocolate cake I made was soooo good... I've since lost that recipe & I've been in looking for it again! So I'll definitely need to try this . Thanks Sam
Working as a baker in school food service back when WE actually cooked all the food the majority from old-fashioned scratch, we hid fruits & veggies in all kinds of foods. Canned purple plums in our chocolate cake. Fig nuggets in sugar cookies which came out almost like toffee chips, and sweet potatoes in our "pilgrim" rolls which was everyone's absolute favorite. It was a creative way to use up commodity products and the kids never knew.
I’ve boldly used cucumber (due to the unexpected substantial amount growing in our summer garden) to make cinnamon muffins and it worked and was surprisingly delish. I’ve played with crookneck squash and that worked well for chocolate muffins too. Thanks for another wonderful recipe!!!
WOW! This cake was so moist with a deep chocolate flavor. Outstanding! I’ve had zucchini bread before but not zucchini cake. I wish someone had told me about this a long time ago.
This was the best chocolate cake I ever made, moist and so flavourful, thank you!! And your instructions are very helpful throughout, even for a beginner like me! I however used a lot less sugar, 1.3 cup total for the batter, increased 320 g zucchini + 2 large dates to increase volume and moisture, and took only 3\4 cup sugar for the frosting. And the cake turned out more than plenty sweet for me. Thanks again, and all the best!
I’ve used a similar recipe for years, it makes a super good chocolate cake, you can grate zucchini and freeze in 1 1/2 cup portions, or whatever the recipe needs, then you can make it up throughout the year!! Fun!! Zucchini bread with chocolate chips is amazing also!!
Thank you for explaining the blotting of the zucchini to remove moisture. So many recipes don't discuss and I think that is why I have not had success on other recipes.
This was a MAJOR hit at our house. Even my autistic brother, who doesn’t eat ANY fruits or veggies, loved it. Thank you for the recipe! I’ll definitely make it again, along with (trying) several of your other recipes.
Thank you very much! I make Zucchini cakes all the time. Love them! I usually strain the Zucchini over night. I use also your recipe of the Carrot cake with Zucchini instead of Carrots. Yummy!
Now I know how to get my husband to eat his vegetables lol...😊😊😊I'm not a baker at all, I'm the savory chef but I need to become more rounded and now you have inspired me 😊😊😊😊😊 thank you for sharing ❤️ 😊 ❤Annie
good idea using both blades... I just shredded mine yesterday, but did not use the second blade, will have to go back and do that to hide the zucchini since most people won't try a food if it has something "different" in it. I found using a salad spinner is easy to remove the extra fluids. I will be making this in a couple of days. Also using instant coffee is a great idea. I found you today looking for ideas using cookie sheet for baking for a crowd. Will cook the Zucchini cake using the cookie sheet. Hopefully it turns out well. Thank you for the great videos and recipes. Easy to follow!!!!
Zucchini bread/cake is not a thing here in Hong Kong. I once made it and had my family guess what vegetable was in it. I had a lot of fun hearing their answers, which included broccoli.🤣🤣🤣 To me the point in adding courgette is to add moisture and, maybe, to trick veggie haters into eating veggies. That's why I don't think it should come through.
My neighbor gives me zucchini from her garden every year, so I'm definitely going to try this! I don't think you should be able to taste the zucchini. The frosting looks delicious!
Zucchini in the cake , I could do that, and thinking choc chips as well in case of kids wondering what those bits are. I have made a cake with beets in it, and you could tell it was different, but the chocolate loving kids didn't spot it. But still would not add the coffee. love the simplicity of the icing.
I agree with you completely the zucchini is just there as a filler if i want to taste zucchini i will makr something savoury like roasted or ratatouille : )
@@SugarSpunRun I did use mascarpone in place of cream cheese for the frosting since it’s what I had in hand and didn’t want to wait until next weeks grocery run to make it.
NO NO NO!!! Baked goods made with zucchini, or any other vegetable hidden inside, should not taste like zucchini! It should taste like whatever the main flavor is, whether it's chocolate, spice or whatever. I've made zucchini bread and received rave reviews for it, but nobody knew there was zucchini in it. We need to sometimes sneak those veggies into the foods we make so people who claim not to like veggies will eat it and enjoy it.

That's so awesome! Sneak those good foods in wherever you can. :)
That's sounds freaking amazing I need to incorporate this into foods for my son who is picky and hates veggies
Brilliant! 😊
@@SugarSpunRunthanks for the recipe!! I've been giving everyone zucchini and it keeps growing!

It's a keeper for sure. Your family is so blessed.
Thank you so much! :)
I made this cake today and it didn’t disappoint. So moist and so chocolaty. My family loved it. Thanks again for a fantastic recipe.

I am making this recipe for the fouth time! I used the hand mixer to combine the wet ingredients. It was moist and soft.
I’m so glad you’ve enjoyed it so much! 😊
I think that it is a really smart recipe for a chocolate cake because you only need two eggs 😊

You did a fantastic job photographing that piece of cake for the thumbnail. Photographing food well isn’t as easy as some people think it is.

The BEST Sam always thank you so much stay bless with your family
Thank you so much! :)
This looks heavenly!
Thank you! :)
Hi Sam. I made this cake and it was so densed. I tried my best not to overmix and not sure what went wrong.
I'm so sorry this happened! If it's not over-mixing, it could be too much flour or potentially over-baked. :(

I'm not sure I've ever had a cake with beets, but chocolate is a great way to cover up a lot of ingredients. :)

No paper towels needed for me..I blend my zucchini for my muffins and brownies
Looks delicious!!! Thanks for sharing. Enjoy your channel.
There’s nothing wrong if the taste of chocolate takes over! 😂
Thank you so much! Enjoy! :)
Good cake
Thank you 😋
I believe it I've created my own chocolate Zucchini cake, muffins, and bread too.
It's soooo good! :)
Sam, while I understand the function of the zucchini in the chocolate cake, I think I will pass on this one..Luke shares similar sentiments!!!!
🤣🤣
Sam you should make a chocolate carrot cake
Ooohhh great idea!
It looks delicious 😋 from Barbara 😊
Thank you! :)
Can you omit the zucchini if you didn’t grow it in your garden this year? Asking for a friend 😅

Hey there Sam I love chocolate cake I want to ask why is there zucchini added to it? I love your recipes and videos so much
There's a few reasons. I actually discuss them in the video. :)
@@SugarSpunRun oh okay I see
can you use almond flour rather than all purpose flour ?
Unfortunately I don’t think that would work here. Perhaps a gluten free mix may work.
Zucchini cake, NO. Zucchini bread, YES! Cake shouldn't taste like zucchini in my opinion.
Could i add avacado instead of zucchini/ would it still taste good without zucchini
Unfortunately I don't think it will work here. :(
I swear we are wearing the same shirt today while we make zucchini cake.
🤣🤣 that’s awesome! 😊

Not too much, it could make the cake spongey

The cr... ch.... ruins this recipe for me. 😟
What does that mean?
@@SugarSpunRun I'm guessing they don't like cream cheese. ?
