Ridiculously Big, Thick Peanut Butter Chocolate Chunk Cookies

- These are the biggest, fattest peanut butter chocolate chunk cookies you'll ever make! My recipe is simple and loaded with chunks of semisweet chocolate in every bite.

Ingredients
1 cup unsalted butter, softened (226g)
1 cup creamy peanut butter (260g)
1 cup light brown sugar, firmly packed (200g)
½ cup granulated sugar (100g)
1 egg + 1 large egg yolk
1 teaspoon vanilla extract
3 cups all-purpose flour (375g)
1 Tablespoon cornstarch
½ teaspoon baking soda
¾ teaspoon salt
8 oz chocolate bars, coarsely chopped (226g)
Sea salt for sprinkling on top, optional

Instructions
00:00 Introduction
00:28 Combine butter, peanut butter, and sugars in a large mixing bowl and use an electric mixer to beat until light and fluffy.
01:36 Add egg, egg yolk, and vanilla extract and stir until combined.
02:17 In a separate, medium-sized bowl, whisk together flour, cornstarch, baking soda, and salt.
02:49 With mixer on low-speed, gradually stir dry ingredients into wet until completely combined (be sure to scrape the sides and bottom of the bowl and no dry spots should be remaining).
03:28 Add chopped chocolate and use a spatula to stir into the cookie dough until well-incorporated.
05:10 Cover bowl with plastic wrap and refrigerate for 30 minutes. While dough chills, preheat oven to 350F (175C) and line baking sheets with parchment paper.
05:20 Once dough is chilled, remove from refrigerator and scoop into large 2 ½ 0 Tablespoon-sized balls and roll between your palms to make a smooth ball.
06:03 Place on parchment-lined baking sheets, spacing cookies at least 2” apart.
06:15 Transfer to 350F (175C) oven and bake for 13-15 minutes (edges may be just beginning to turn light golden brown). Allow cookies to cool completely on baking sheet before removing and enjoying.
Notes
Peanut Butter
You could use crunchy or creamy peanut butter. I recommend using classic peanut butter and not the “natural” sort that separates, as the cookies won’t turn out as shown with natural peanut butter.
Chocolate
I like to use semisweet chocolate bars but you can use milk chocolate or your favorite type of chocolate instead.
Storing
Cookie dough may be prepared in advance and refrigerated (tightly covered) for up to 5 days. Baked cookies will keep in an airtight container at room temperature for up to one week.

I love the effects of coarse chopping the chocolate bars, because the tiny chocolate-slivers even make the cookie dough more flavorful. This is what I do when making brown-butter, chocolate chip cookies too. Cant wait to make this recipe! Thanks for sharing it...♥️🍪

I made these! They came out beautiful looking and tasted delicious 😋. Actually, before chilling the dough, I realized I had forgotten the sugars, and I put them in at last. I had wondered if the cookies would have failed at this point and no they came out awesome! I made these cookies today. They are delicious! The only thing I did different was I used chunky peanut butter is instead of creamy. I like having the pieces of peanuts in there.

Can I make these cookies without chocolate chips? Just a regular peanut butter cookie?
A lot of the flavor comes from the chocolate but you could omit the chocolate.
Any tips on not gettin the bottoms dark ? My bottoms always darken faster then the top but i dont wanna take them out to early an be gooey
Hmmm is your oven temperature accurate? It sounds like it may be running a bit hotter than it says it is. :)
Actually yours some how were perfect in color ;-) may I ask what vanilla u use ? I was buying the big bottle of Mccormick at sams but they haven't had it in a while only the Mexican vanilla

I'm not sure how it will work. It includes a lot more ingredients and sugar than peanut butter does. It typically does not make a good 1 for 1 substitute. :(
Can I add peanut butter chips instead of chocolate pieces? If so, how much should I add? 1 cup?
You could use peanut butter chips if you'd like. I do have 2 cups of chips in this recipe so you could do a blend or you could replace the 2 cups of chocolate chips with the peanut butter. I think I would lean towards a blend here, but that's personal preference. :)
Oven on fan or not?
I always bake on conventional setting, unless otherwise noted. :)

Aww that means they were over-baked 😔 Definitely try again, just cook a bit less time. It's fine if they look a little under-baked when they come out of the oven, they'll finish baking on the baking sheet.

Smoosh your eggs on the flat counter, not the edge of the bowl. I seen it on RUclips. Trust me.
The dough I made is so dry, no way the recipe is right. 3 cups of flour? really? This dough is crumbly doesnt even stick together, thanks, I just wasted like 15 dollars in ingredients.
Hmm the amounts are correct. Did you substitute the peanut butter with natural? Also, it’s important to make sure that you measure the flour properly, if you are not using a scale (which I recommend) make sure you stir the flour and fluff it, and then spoon it lightly into the measuring cup before leveling it off. Also, make sure you don’t add the flour too quickly. I hope that helps and I hope you give it another shot.
I guarantee this person didn’t follow the directions well. I’ve made chocolate chip cookies with this amount of flour before all the time & they turn out great all the time.
Literally, how many times do you actually have to do these recipes until you "get it right?"......!
Well it depends on the recipe. Sometimes it’s pretty quick, other times it takes quite a while
